This Spanish Potato Salad (Patatas Aliñadas) brings together tender potatoes, hard‑boiled eggs, tuna, crisp vegetables, sharp red wine vinegar and, most importantly, plenty of olive oil. Dairy and mayonnaise are omitted, so the salad feels light, bright and satisfying.

Why you’ll love this Spanish Potato Salad (Patatas Aliñadas)

A potato salad dressed generously with olive oil and no mayonnaise is one of my favourite summer sides. It’s fresher and cleaner tasting than a mayo‑based version, but still comforting. The potatoes are cooked until just tender and dressed while warm so they absorb the vinegar and oil. Every Spanish household has its own take on patatas aliñadas; this is the simple, bold‑flavoured version I grew up with. It often improves after a few hours in the fridge, when the flavours meld even more.

This salad is ideal for warm afternoons, barbecues or relaxed dinners. Serve it with grilled seafood, barbecue chicken or crusty bread. As with many Mediterranean dishes, excellent ingredients — especially a good extra virgin olive oil — are all you need.

Ingredients For Spanish Potato Salad

Ingredients shown for spanish potato salad including potatoes, eggs, red onion, parsley, capsicum, red wine vinegar, tuna and olive oil
  • Yukon Gold potatoes: Creamy when boiled but firm enough to hold their shape. Use Dutch creams or baby potatoes if you can’t find Yukon Golds.
  • Extra virgin olive oil: A high‑quality, flavourful oil is essential — it’s the main component of the dressing.
  • Red wine vinegar: Adds brightness and balances the oil. Warm potatoes absorb it especially well.
  • Red onion: Thinly sliced for crunch and bite. Soak in cold water for 10 minutes if you prefer a milder onion flavour.
  • Parsley: Flat‑leaf parsley keeps the salad fresh and vibrant.
  • Tuna (optional): Common in Spanish versions for extra protein and richness; omit for a lighter dish.
  • Eggs: Soft or hard‑boiled eggs add substance and make the salad more filling.

Ingredient Substitutions

This recipe is very adaptable. Swap ingredients to match what you have on hand:

  • Potatoes: Dutch creams, kipflers or baby potatoes work well instead of Yukon Gold.
  • Vinegar: Use sherry vinegar, white wine vinegar or lemon juice in place of red wine vinegar.
  • Herbs: Replace parsley with dill, chives or fresh oregano.
  • Onion: Use shallots, spring onions or thinly sliced white onion for a different flavour.
  • Protein: Omit tuna or substitute flaked salmon, grilled chicken or chickpeas.
  • Extras: Add cherry tomatoes, olives, roasted capsicum or green beans for more texture.
  • Heat: A pinch of chilli flakes or finely chopped fresh chilli gives a gentle kick.

How To Make Spanish Potato Salad

The key to this salad is dressing the potatoes while they are still warm so they absorb the flavours.

Boiled potatoes are in stainless steel bowl and being dressed with olive oil

Step 1: Boil the potatoes until fork‑tender (about 30 minutes depending on size). While still warm, score a shallow “X” in the skin and peel with your fingers. Cut into small cubes. Toss the warm potatoes with red wine vinegar, olive oil and a generous pinch of salt, gently breaking up bits of potato so they absorb the dressing.

Stainless steel bowl now has capsicum, parsley and red onion in it.

Step 2: Add the finely diced capsicum, red onion, chopped parsley, drained tuna (if using) and chopped boiled eggs to the dressed potatoes.

Step 3: Stir gently until everything is evenly combined. Serve immediately, at room temperature or chilled.

Other Ways To Serve This Salad

  • Stuffed into pita: Use it as a hearty filling with extra herbs and greens for a quick lunch.
  • Spooned over flatbread: Serve on warm flatbread for an easy Mediterranean meal.
  • Turn into a leafy salad: Toss with lettuce, arugula or baby spinach to make it lighter.
  • With grilled proteins: Pair with grilled fish, roast chicken or lamb for a simple dinner.

Storage tips

  • Keep in an airtight container in the refrigerator for up to 3 days. The flavours deepen as it sits.
  • If the salad seems dry after chilling, drizzle extra olive oil before serving.
  • Serve chilled or at room temperature — both work well.

How To Prep Ahead

  • Chop vegetables ahead and store in the fridge.
  • Boil the potatoes a day ahead if needed, though warm potatoes absorb the dressing better.
  • Hard‑boil eggs one or two days in advance for convenience.

Spanish Potato Salad – Patatas Aliñadas (Mayo & Dairy Free!)

By Daen Lia
This Spanish Potato Salad (Patatas Aliñadas) is dairy‑ and mayo‑free, making it light, refreshing and full of flavour.
Prep Time: 5
Cook Time: 30
Servings: 4

Ingredients

  • 3 Yukon Gold Potatoes
  • 2 boiled eggs
  • 1 red capsicum, finely diced
  • 1/2 red onion, finely diced
  • 1/4 cup parsley, finely chopped
  • 1 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 15 oz tuna, drained
  • salt

Instructions

  • Boil potatoes & eggs: Place potatoes and eggs in cold water and bring to a boil. Reduce to a rapid simmer. After water boils, cook eggs for 8 minutes, then transfer eggs to an ice bath. Continue cooking potatoes for about 22 more minutes or until tender.
  • Peel & cut potatoes: While warm, score an “X” in each potato’s skin and peel it off. Cube the potatoes so they can absorb the dressing.
  • Peel eggs: Peel and chop the eggs into small pieces.
  • Dress: In a bowl, combine warm potato cubes with red wine vinegar, olive oil and a pinch of salt. Stir and gently break up some pieces so the dressing clings to the potatoes.
  • Finish: Fold in capsicum, red onion, parsley, tuna (if using) and chopped eggs. Mix until combined and serve.

Notes

  • Dress the potatoes while they are still warm so they absorb the oil and vinegar.
  • Roughing up the potatoes slightly while stirring helps the dressing cling and intensifies flavour.
  • Use a good extra virgin olive oil — its flavour comes through in this simple recipe.
  • The salad often tastes better after a few hours in the fridge as the flavours meld.
  • If made ahead, add a little extra olive oil before serving to refresh the texture.
  • Serve chilled, at room temperature or slightly warm according to preference.
