Prepare to discover your new favorite way to enjoy potatoes – a masterpiece of roast potato perfection that elevates any meal.

Experience the Magic of Garlic Butter Hasselback Potatoes
There’s an undeniable allure to Hasselback potatoes, and my garlic butter version takes that appeal to a whole new level. These stunning spuds are just as impressive to savor as they are to behold. The secret lies in the meticulous preparation: potatoes are thinly sliced crosswise, but crucially, they remain joined at the bottom, creating a captivating accordion-like effect. This unique structure isn’t just for show; it’s a genius design that maximizes surface area, allowing the golden-brown edges to become incredibly crispy while the interior remains wonderfully fluffy. But what truly sets these apart is the generous brushing with our signature garlic confit butter – a rich, aromatic blend that infuses every crevice, creating a flavor profile reminiscent of gourmet garlic bread.
The beauty of this technique is that the more slices you make into the potato, the more tantalizing crispy edges you’ll achieve – a feature I personally consider the absolute best part! Furthermore, these numerous slits act as perfect channels, allowing that decadent garlic butter to seep deep into the potato’s core. The result is a potato that is not only visually stunning but also bursting with a savory, buttery, and garlicky flavor throughout its tender, melt-in-your-mouth interior. It’s a culinary experience that promises to impress both family and guests alike.
While their sophisticated appearance might suggest a complex undertaking, Hasselback potatoes are surprisingly straightforward to prepare. You won’t need any specialized kitchen gadgets or advanced culinary skills. All that’s required is a sharp knife, a stable cutting surface, and a clever trick involving a pair of chopsticks or wooden spoons to guide your slices. Before they even hit the oven, each potato is lovingly rubbed with extra virgin olive oil and seasoned with coarse kosher salt. This initial step is vital: the oil promotes an exquisitely crispy, golden-brown skin, while the salt penetrates the thinly sliced sections, ensuring deep, pervasive flavor. These versatile potatoes are the quintessential side dish, perfect for elevating your everyday weeknight dinners, yet elegant enough to star at holiday feasts and special entertaining occasions.
If you’re continually seeking out creative and delicious potato side dishes to add to your repertoire, I highly recommend exploring some of my other favorites: my irresistible garlic butter smashed potatoes, the rich and savory duck fat roast potatoes, or the wonderfully creamy olive oil mashed potatoes. Each offers a unique way to celebrate this beloved root vegetable.
Essential Ingredients for Perfect Hasselback Potatoes

Creating truly outstanding Hasselback potatoes requires just a few key components: quality potatoes, rich garlic butter, robust olive oil, and essential seasoning. While fresh parsley and grated Parmesan cheese are optional additions, they contribute a delightful layer of freshness and savory depth that truly elevates the dish.
- Potatoes: The choice of potato is paramount for achieving the desired crispy exterior and fluffy interior. Floury and starchy varieties are undoubtedly the best for this recipe due to their specific starch content. In Australia, I highly recommend Désirée or Sebago potatoes; just be sure to give them a thorough scrub to remove any dirt. For those in the US, Yukon Gold potatoes are an excellent choice for their buttery flavor and tender texture, while Russet potatoes offer a classic fluffy interior. UK cooks should look for Maris Piper or King Edward potatoes, known for their superb roasting qualities. For ease of slicing, I prefer to select potatoes that have a naturally flat bottom, preventing them from wobbling during preparation. However, this isn’t strictly essential, as you can always carefully slice a thin layer off the bottom of rounder potatoes to create a stable, flat base. Ensure all potatoes are clean and ready for slicing before you begin.
- Garlic: As fervent garlic lovers, it’s a rare day indeed when one of my recipes doesn’t feature this aromatic powerhouse! For this particular dish, I’ve opted for garlic confit, which offers a mellow, sweet, and deeply flavorful garlic essence. However, if time is of the essence, you can easily substitute the confit with 6 raw garlic cloves, finely minced. The raw garlic will provide a sharper, more pungent flavor that is equally delicious.
- Butter: I consistently use unsalted butter when preparing the garlic butter sauce. This allows for precise control over the overall saltiness of the dish, ensuring a perfectly balanced flavor profile. The butter’s richness is key to the indulgent taste and helps achieve that golden crispness.
- Olive Oil: My unwavering recommendation is always extra virgin olive oil. Its distinctive, fruity flavor beautifully complements the potatoes and garlic, and its higher smoke point contributes significantly to creating an exceptionally crispy and beautifully golden exterior during baking. Don’t skimp on quality here – it makes a difference!
- Fresh Herbs: While technically an optional ingredient, incorporating fresh herbs introduces a wonderful lightness and vibrant freshness that beautifully contrasts with the rich and dense nature of the potatoes. I’ve used fresh parsley in this recipe, but feel free to experiment with other complementary herbs such as chives, oregano, basil, or thyme. Each offers a unique aromatic nuance.
- Parmesan Cheese: Another optional, yet highly recommended, addition! Potatoes and cheese are, without a doubt, a match made in culinary heaven. Grated Parmesan cheese adds a salty, umami depth and a delightful crispy texture when baked. For variations, you could also consider using shredded mozzarella for a gooey cheese pull, crumbled feta for a tangy twist, or even a dollop of sour cream or crème fraîche for a creamy finish after baking.
- Salt and Pepper: These fundamental seasonings are crucial for bringing out the best in both the garlic butter and the Hasselback potatoes themselves. A good quality kosher or flaky sea salt will provide a pleasant crunch and distribute flavor effectively, while freshly ground black pepper adds a subtle kick. Season generously, as potatoes absorb a surprising amount of salt.
Mastering the Art of Slicing Hasselback Potatoes
The art of creating those signature thin potato slices for Hasselback potatoes might seem like the most daunting step, but I assure you, it’s surprisingly simple and incredibly satisfying once you get the hang of it! The key to success lies in a simple, yet ingenious, kitchen hack: a pair of chopsticks or wooden spoons. These humble tools will act as invaluable guides, preventing your sharp knife from cutting all the way through the potato. Here’s a detailed guide to achieving perfect slices:
- Stabilize Your Potato: Begin by placing your potato on a sturdy chopping board. If you notice it’s uneven or tends to wiggle, carefully slice a very thin layer off the bottom to create a flat, stable surface. This ensures safety and uniform slicing.
- Position Your Guides: Place the potato lengthwise between two wooden spoons or chopsticks. Ensure your chosen guides are no thicker than approximately 1 cm (about 3/8 inch). The thickness of your guides directly determines how deep your knife will cut, and we need it to cut quite deep to create the fan effect, but not so deep that it severs the potato completely.
- Execute Thin, Even Slices: With your potato securely in place, use a very sharp knife to make thin, parallel slices across the width of the potato. Aim for slices that are about 2mm (or 1/8 inch) wide. Precision here is rewarding: the more numerous and thinner your slices are, the greater the surface area for crisping up in the oven. This increased surface area means more deliciously crispy edges and, crucially, more channels for that amazing garlic butter to seep into, resulting in a visually appealing and exquisitely flavored potato.

A little reassurance: don’t fret if, by chance, you accidentally cut all the way through one or two slices! Your Hasselback potato will still be absolutely delicious and might simply sport a charmingly rustic look. In the world of home cooking, sometimes “rustic” is even better, adding character to your dish!
Step-by-Step Guide: How to Bake Hasselback Potatoes
Now that you’ve mastered the art of slicing, it’s time to bring our incredible Hasselback potatoes recipe to life. This multi-stage baking process ensures optimal tenderness on the inside and unparalleled crispiness on the outside.
First, prepare your baking environment. Arrange the meticulously sliced potatoes in a baking dish large enough to comfortably accommodate them without overcrowding. This is crucial for uniform cooking and allowing the potatoes to fan out as wide as possible, maximizing their surface area for crisping. Drizzle generously with olive oil and sprinkle a good amount of kosher or flaky sea salt over each potato. The olive oil will work its magic by promoting a beautiful golden hue and an incredibly crispy skin, while the salt penetrates deep into the potato’s flesh, infusing it with wonderful flavor. Gently massage the oil and salt into the potatoes, consciously opening up the delicate slits to encourage the seasoning and oil to seep down into every crevice. Place the dish in a preheated oven and bake for 30 minutes. This marks the completion of the first bake, focusing on initial tenderness.
While your potatoes are undergoing their initial bake, prepare the aromatic garlic butter sauce. In a small pot or a microwave-safe dish, combine the butter and garlic. Heat gently on a low setting until the butter is completely melted and the garlic has infused its rich aroma throughout. If using a microwave, heat for approximately 2 minutes, ensuring you stir at 30-second intervals to prevent scorching and promote even melting.

After the first bake, carefully remove the potatoes from the oven. Now comes the magical part: generously spoon the melted garlic butter sauce over each potato. Take a moment to gently open up the fanned-out slices as much as possible, encouraging the luscious garlic butter to drip down and saturate every layer. Return the potatoes to the oven for an additional 40 minutes. During this crucial second bake, you will baste the potatoes every 10 minutes with the flavorful garlic herb butter that has pooled at the bottom of the baking tray. When basting, apply a bit of gentle pressure with your brush; this not only helps the sauce penetrate deeper but also encourages the potato slices to fan out further, intensifying their flavor and crispiness. This is the second bake, where flavor infusion and texture development truly shine.

Should you desire an even crispier result, especially on those delectable edges, an optional third bake can be performed. Increase your oven temperature to a hotter 220°C (425°F) and return the potatoes for a final 10 minutes. This high-heat blast will create an extra layer of golden crispness. However, be vigilant during this stage, as the potatoes can transition from perfectly crisp to slightly burnt quite quickly! This optional third bake is for achieving maximum golden crunch.

Once baked to your desired level of crispness, remove the potatoes from the oven. If using, generously sprinkle fresh, finely chopped parsley and grated Parmesan cheese over the top for an extra burst of color and flavor. Serve these glorious garlic butter Hasselback potatoes immediately, ensuring every guest experiences their exquisite crispiness at its peak. Enjoy!
Expert Tips for Unbelievably Crispy Hasselback Potatoes

Achieving those highly coveted, perfectly golden, and crispy edges on your Hasselback potatoes is a culinary triumph that’s well within reach. With a few simple, tried-and-true techniques, you can guarantee a texture that’s utterly divine. Here are my top tips to help you master the art of crispy Hasselback potatoes:
- Embrace Thin Slices: This is arguably the most crucial tip. Strive for potato slices that are consistently about 1/8 inch (2mm) thick. The thinner the slices, the more surface area is exposed to the heat, allowing them to crisp up significantly faster and more uniformly. Think of it as creating countless mini potato chips that are still attached!
- Maximize Your Cuts: Don’t be shy with your knife! The more slices you can artfully create across the potato, the better. Each additional slice contributes to an increased number of crispy edges, which are often the most sought-after part of a Hasselback potato. More slices also mean more channels for flavor absorption.
- Select the Right Oil: Brushing your potatoes generously with extra virgin olive oil before baking is key. Olive oil not only imparts a beautiful, subtle flavor but, more importantly, facilitates the development of that desirable golden, crispy exterior. Its properties help to fry the potato edges in the oven.
- Optimize Baking Temperature: Baking at the correct, often high, temperature is fundamental for achieving crispness. The initial bake is for softening, but for the final crisp, a higher heat is essential. This is precisely why the optional third bake, at an elevated temperature, is incredibly effective – it provides that final blast of heat needed to transform tender edges into crunchy perfection.
- Prevent Overcrowding: It’s tempting to squeeze as many potatoes as possible onto a single baking sheet, but resist the urge! Ensure there is ample space around each potato in your baking dish. Overcrowding leads to steaming rather than roasting, hindering the browning and crisping process. Proper air circulation is vital for a truly crispy result.
- Don’t Skip the Basting: Regularly basting the potatoes with the garlic butter and any pan juices during the second bake is more than just adding flavor. The butter contains fat, which helps promote browning and crisping. As the liquid evaporates, the residual butter creates a flavorful crust.
- Dry Them Thoroughly: Before applying oil and seasoning, ensure your potatoes are completely dry. Excess moisture creates steam, which prevents crisping. Pat them thoroughly with a paper towel after washing.
By diligently following these expert tips, you will consistently be rewarded with Hasselback potatoes that boast an irresistibly crispy, golden-brown exterior and a wonderfully fluffy, buttery interior – a truly delightful culinary achievement.
Hasselback Potatoes: Creative Topping Ideas & Variations

One of the most appealing aspects of the Hasselback potatoes recipe is its incredible versatility. The fanned-out structure isn’t just for aesthetics; it’s a perfect canvas for absorbing a myriad of delicious flavors and toppings. Here are some fantastic variations and creative topping ideas to inspire your culinary experiments, allowing you to tailor this dish to any palate or occasion:
- Decadent Cheesy Hasselback Potatoes: Elevate the classic with a cheesy twist. During the final 10-15 minutes of baking, generously sprinkle your choice of grated cheese over the potatoes. Parmesan adds a sharp, nutty crust, while mozzarella or a blend of cheddar and Monterey Jack will melt beautifully, creating a gooey, savory topping that crisps delightfully at the edges. For an extra rich flavor, try Gruyère or sharp white cheddar.
- Aromatic Herby Hasselback Potatoes: Infuse your potatoes with a burst of fresh garden flavors. Beyond parsley, consider mixing finely chopped fresh herbs like fragrant rosemary, earthy thyme, or aromatic sage directly into your garlic butter mixture before basting. The heat of the oven will release their essential oils, permeating every slice with an incredible aroma and taste. A mix of Italian herbs can also be wonderfully evocative.
- Zesty Spicy Hasselback Potatoes: For those who crave a bit of heat, transform your Hasselbacks into a fiery delight. Add a pinch (or more!) of red pepper flakes to the garlic butter mixture. For a bolder kick, finely mince fresh jalapeños or serrano peppers and incorporate them into the butter, allowing their heat to mellow slightly during baking and infuse the potatoes with a vibrant spice. A dash of smoked paprika can also add warmth and depth.
- Sweet Potato Hasselback Potatoes: For a delightful departure from tradition, swap out regular potatoes for sweet potatoes. This variation offers a naturally sweeter flavor profile and a softer, almost caramelized texture that is equally delicious and pairs wonderfully with the garlic butter. Consider adding a touch of cinnamon or nutmeg to the butter for a unique sweet and savory fusion.
- Smoky Bacon and Chive Hasselback Potatoes: Indulge in a rich, savory, and smoky experience. Cook a few strips of bacon until crispy, then crumble them. Mix the crispy bacon bits and freshly chopped chives into your garlic butter mixture. Drizzle this savory blend over the potatoes during the final basting stages, allowing the flavors to meld beautifully. The bacon adds a desirable crunch and depth of flavor that’s hard to resist.
- Mediterranean Inspired: After the final bake, top with crumbled feta cheese, chopped Kalamata olives, sun-dried tomatoes, and a drizzle of balsamic glaze for a tangy, savory, and visually stunning dish.
- Creamy Dill & Garlic: Stir fresh dill into the garlic butter, and once baked, dollop with a spoonful of crème fraîche or Greek yogurt for a cool, tangy contrast.
These diverse variations provide an exceptional starting point for experimenting with different flavor profiles and ingredients. Whether your preference leans towards rich and cheesy, fresh and herbaceous, bold and spicy, or comforting and sweet, there’s a Hasselback potato recipe waiting to be discovered that will perfectly suit every palate and occasion. Let your creativity guide you!

Garlic Butter Hasselback Potatoes
Ingredients
Garlic Butter
- 2 bulbs garlic
- 6 tbsp butter, unsalted
- 1 tbsp olive oil
- salt and pepper
Hasselback Potatoes
- 8 large potatoes, Russet, Yukon Gold, Sebago, Désirée or Marie Piper
- 2 tbsp olive oil
- 6 tbsp garlic butter (prepared above)
- 1 tbsp parsley, finely chopped (optional)
- 1/4 cup parmesan, grated (optional)
- flakey sea salt
Instructions
Garlic Butter Preparation
-
Preheat your oven to 200°C / 400°F.
-
Carefully slice the very top off your garlic bulbs, exposing the cloves. Place the bulbs into a small oven-safe pot with a lid, or wrap them securely in aluminum foil. Season with a pinch of salt and pepper, then drizzle with olive oil. Cover the pot or seal the foil, and roast in the preheated oven for 1 hour until the garlic is soft and caramelized.
-
Once roasted, allow the garlic bulbs to cool slightly until they are comfortable to handle. Gently squeeze the softened garlic cloves out of their skins. Using the back of a knife or a spoon, mash the roasted garlic cloves into a smooth paste.
-
Combine the mashed garlic with the unsalted butter in a small pot or a microwave-safe dish. Heat on a low setting on the stovetop, stirring until the butter is completely melted and thoroughly combined with the garlic. If using a microwave, heat for 2 minutes, stirring every 30 seconds to ensure even melting and infusion. Set aside.
Hasselback Potatoes Preparation & Baking
-
Preheat your oven to 200°C / 400°F. If you roasted garlic, you can continue with the same oven temperature.
-
Thoroughly clean your potatoes. Place one potato on a sturdy wooden chopping board. If it’s unstable, carefully slice a thin piece off the bottom to create a flat base. Position the potato between two chopsticks or two wooden spoons to act as guides. Using a sharp knife, make thin slices (approximately 2mm wide) across the potato, stopping when the knife meets the guides at the bottom. The goal is to make as many slices as possible without cutting through the potato. Repeat this process for all remaining potatoes.
-
Arrange the sliced potatoes in a single layer in a baking tray, ensuring there’s enough space between each potato for them to fan out. Drizzle generously with 2 tablespoons of olive oil and sprinkle a good amount of flaky sea salt. Massage the oil and salt into the potatoes, gently fanning out the slits to ensure the seasoning penetrates deeply. Bake for 30 minutes. This is the first bake, softening the potatoes.
-
Remove the potatoes from the oven. Spoon the prepared garlic butter sauce over each potato, making sure to gently open the slits as much as possible to allow the butter to drip down into every layer. Return the potatoes to the oven for another 40 minutes. During this second bake, baste the potatoes every 10 minutes with the garlic butter that pools at the bottom of the tray. Apply a bit of pressure with your brush to help the sauce penetrate deeper and encourage the slices to fan out. This is the second bake, infusing flavor and developing texture.
-
For extra crispiness on the edges, you can perform an optional third bake. Increase the oven temperature to 220°C / 425°F and bake the potatoes for a final 10 minutes. Keep a close eye on them to prevent burning. This is the third bake, for maximum crispness.
-
Remove the golden, crispy potatoes from the oven. If desired, sprinkle with finely chopped fresh parsley and grated Parmesan cheese. Serve immediately while the edges are at their crispiest. Enjoy your perfect garlic butter Hasselback potatoes!
