Grilled Peach Salad with Garlic Confit Balsamic Dressing: A Seasonal Masterpiece

While this grilled peach salad is versatile enough to grace any table, its vibrant colors and refreshing taste make it an ideal choice for summer entertaining or even a unique holiday twist. For those in warmer climates, like Australia, where Christmas means scorching heat and poolside feasting, a light and flavorful dish is absolutely essential. This peach salad, with its tantalizing garlic confit balsamic dressing, is incredibly simple to prepare, yet delivers a sophisticated burst of summery flavors. The beauty of this recipe lies in its flexibility; while all components can be assembled on the day of serving, the dressing can be prepared in advance, saving you precious time. For an even quicker preparation, the luxurious garlic confit can be substituted with a finely minced fresh garlic clove, without compromising too much on flavor depth, making this salad an accessible gourmet option for everyone.

The Symphony of Sweet & Savory: A Culinary Journey

Growing up in an Italian household, the harmonious blend of sweet and savory flavors was a staple, an intuitive part of every meal. From balsamic glazes drizzled over strawberries to figs wrapped in prosciutto, this interplay of tastes is deeply rooted in Mediterranean cuisine. However, I’ve discovered that this delightful combination isn’t as universally common as one might think. This particular peach salad stands as a modern homage to a beloved Italian tradition, drawing inspiration from classic peach, prosciutto, and burrata pairings. The natural sweetness of ripe peaches finds its perfect counterpoint in the delicate saltiness of thinly sliced prosciutto and the unparalleled creaminess of fresh burrata. Adding to this exquisite balance are crunchy walnuts and thinly sliced red onion, which introduce a beautiful textural contrast, elevating the salad beyond a simple side dish. If you’re new to the sweet and savory world, consider the widely loved melon and prosciutto combination as a familiar starting point. Trust me on this: once you experience the incredible depth of flavor in this peach salad, it will become an instant favorite.

Essential Ingredients for the Perfect Peach Salad

Given that this salad relies on a minimalist approach to ingredients, prioritizing quality is paramount. Sourcing the freshest, most flavorful produce will truly make this dish sing.

  • Peaches: The Heart of the Salad

The success of this salad largely hinges on the quality of your peaches. Aim to prepare this dish during peak stone fruit season when peaches are at their most juicy, sweet, and aromatic. Grilling the peaches is a crucial step; the heat intensifies their natural sugars, resulting in a sweet, tender, and beautifully caramelized fruit with subtle smoky notes. Look for firm yet slightly yielding peaches, avoiding any with bruises or soft spots. White or yellow-fleshed peaches both work wonderfully, each offering a slightly different flavor profile.

  • Burrata: The Creamy Indulgence

Burrata, an Italian cheese made from mozzarella and cream, is, without a doubt, my favorite cheese. Its exterior is solid mozzarella, while the inside contains a rich, creamy mixture of stracciatella and cream, offering an incredibly luxurious and smooth texture that bursts upon cutting. This creaminess provides a fantastic contrast to the grilled peaches and salty prosciutto. If burrata is difficult to find, excellent alternatives include fresh mozzarella, creamy goat cheese, smooth ricotta, or small bocconcini balls, though none quite replicate burrata’s unique indulgence.

  • Prosciutto: The Salty Counterpart

Prosciutto, a dry-cured Italian ham, introduces a delicate saltiness and a tender, melt-in-your-mouth texture that beautifully balances the sweetness of the peaches and the richness of the burrata. Always opt for freshly shaved prosciutto from a reputable deli; its superior quality and thinness make a significant difference to the overall experience of the salad. The subtle savory notes of the prosciutto weave through the other ingredients, creating a complex and satisfying flavor profile.

Fresh, vibrant green leaves and rocket, essential for a refreshing salad base.

Completing the Ensemble: More Key Ingredients

  • Rocket (Arugula): The Peppery Base

A bed of fresh rocket, also known as arugula, forms the perfect peppery foundation for this salad. Its slightly bitter, spicy notes cut through the richness of the cheese and the sweetness of the peaches, adding a layer of sophisticated flavor. Ensure your rocket is fresh and crisp for the best texture and taste.

  • Crunchy Elements: Texture and Depth

Thinly sliced red onion and toasted walnuts are indispensable for introducing a delightful crunch and an additional layer of flavor. The sharpness of the red onion provides a welcome zest, while the earthy, nutty notes of walnuts complement both the sweet and savory components. Feel free to experiment with other nuts like pecans or almonds, or add crisp vegetables such as thinly sliced radishes or cucumber for different textural dimensions.

  • Garlic Confit & Balsamic Glaze Dressing: The Flavor Star

This dressing is truly the secret weapon of the salad. My admiration for garlic confit is evident; slow-cooked in olive oil until incredibly soft and sweet, it transforms ordinary garlic into a sublime, spreadable delicacy. When blended into a dressing, it imparts an unparalleled depth of flavor. The balsamic glaze adds a tangy sweetness and a beautiful sheen, tying all the ingredients together with its rich, complex profile. This dressing can be made in advance and stored, making meal prep a breeze.

  • High-Quality Olive Oil: The Foundation of Flavor

The importance of using high-quality extra virgin olive oil cannot be overstated, especially when it’s a prominent ingredient in both the dressing and for grilling. A good olive oil provides a fruity, sometimes peppery base that enhances all other flavors without overpowering them. I always recommend opting for premium brands like Rich Glen or Daen’s Kitchen olive oil, which deliver exceptional taste and purity.

Ingredients

Garlic Confit & Balsamic Glaze Dressing

  • 3 tbsp Rich Glen olive oil, extra virgin
  • 1 tbsp Rich Glen sticky balsamic
  • 1/2 shallot, skin removed, finely diced
  • 1 tsp Dijon mustard
  • 10 garlic confit cloves (or 1 clove fresh garlic, minced)

Peach Salad

  • 4 peaches, de-seeded and quartered
  • 1/2 tbsp Rich Glen olive oil, extra virgin (for peaches)
  • 1 burrata ball (approx. 125-150g)
  • 250 g rocket (arugula)
  • 1/2 red onion, finely sliced
  • 50 g walnuts, lightly toasted and chopped
  • 100 g prosciutto, thinly sliced
  • 2 slices sourdough bread
  • 1 tbsp olive oil, extra virgin (for sourdough)

Instructions

Garlic Confit & Balsamic Glaze Dressing Preparation

  1. Combine all dressing ingredients – extra virgin olive oil, sticky balsamic, finely diced shallot, Dijon mustard, and garlic confit cloves – into a food processor. Blend until the mixture is smooth and well combined, creating a creamy, emulsified dressing. Alternatively, if you don’t have a food processor, finely dice the shallot and garlic confit, then place all dressing ingredients into a jar. Secure the lid tightly and shake vigorously until thoroughly mixed and emulsified. This dressing can be made several days in advance and stored in the refrigerator.

Peach Salad Assembly

  1. Prepare the sourdough toast. Drizzle each side of your sourdough slices with a generous amount of olive oil. Place the bread into a cast iron pan or on a griddle set over very low heat. Cook slowly for approximately 10-15 minutes per side, or until golden brown and delightfully crispy. The low heat ensures the bread toasts evenly without burning, developing a deep, nutty flavor. Remove and set aside.
  2. Next, grill the peaches. Lightly drizzle the peach quarters with olive oil. Heat a grill plate or griddle pan over high heat until smoking. Carefully place the peaches onto the hot grill. Cook for about 2 minutes on each side, or until they develop beautiful char marks and begin to soften slightly, intensifying their natural sweetness and creating a delicate caramelization. Remove from heat.
  3. Assemble the salad: In a large serving bowl or platter, gently arrange the fresh rocket as the base. Artfully scatter the grilled peach quarters, finely sliced red onion, prosciutto ribbons, and toasted walnuts over the greens. Carefully tear or slice the burrata into luscious pieces and nestle them amongst the other ingredients. Finally, drizzle generously with up to 4 tablespoons of the prepared garlic confit balsamic dressing, adjusting to your preference. Serve immediately with the crispy toasted sourdough on the side, allowing guests to tear and scoop up the salad’s delectable components. Enjoy this symphony of flavors!
