This isn’t just a sandwich; it’s a gourmet experience, a testament to the fact that vegetarian dishes can be utterly decadent and unforgettable. We dare you to take just one bite and not fall completely in love.

Crafting The Perfect Gourmet Sandwich
What truly defines a “perfect sandwich”? It’s a masterful balance of contrasting elements, a thoughtful layering that delivers a new sensation with every bite. Our Crispy Eggplant and Roasted Capsicum Focaccia Sandwich embodies this philosophy. While it might appear elaborate at first glance, each component is surprisingly straightforward to prepare. The beauty lies in the ability to make these delicious elements in bulk, allowing you to not only assemble multiple sandwiches but also repurpose them into various mouth-watering meals throughout your week. This approach makes gourmet eating accessible and efficient.
This sandwich shines through its brilliant interplay of textures and tastes. The eggplant chips, baked to golden-brown perfection, provide that crucial crispy crunch, a delightful counterpoint to softer fillings. The roasted capsicum (red pepper) spread, silky and bursting with sweet, smoky notes, adds a luxurious creaminess that coats the palate. Meanwhile, the rich, buttery flavor of homemade garlic confit introduces an unexpected depth, elegantly balanced by the vibrant acidity of fresh, juicy tomatoes and the refreshing, peppery kick of rocket (arugula). It’s a harmonious blend designed to tantalize every taste bud, transforming a simple focaccia into an extraordinary culinary masterpiece.

Secrets to Irresistibly Crispy Eggplant Chips
Say goodbye to soggy eggplant! These baked eggplant chips are not merely crispy; they are utterly addictive, transforming a humble vegetable into a star ingredient. The ultimate secret to achieving this golden, crunchy perfection lies in one crucial step: moisture extraction. Moisture, as any chef will tell you, is the arch-nemesis of crispiness. This is precisely why we generously salt our eggplant slices before baking. The salt works its magic through osmosis, drawing out excess water from within the eggplant’s flesh.
After salting, you’ll notice beads of liquid forming on the eggplant slices. Be sure to thoroughly rinse them under cold running water to remove all traces of salt, then pat them as dry as possible using paper towels or a clean kitchen towel. The drier the eggplant, the crisper the final product will be – this step cannot be overstated!
My mother, whose recipe this is, always emphasizes the importance of using high-quality extra virgin olive oil and plenty of it. Eggplant, by nature, is incredibly porous and will act like a sponge when dipped into oil. Think of it like dipping savoiardi biscuits into coffee for tiramisu; the timing is key. You want the eggplant to absorb just the right amount of olive oil – enough to ensure it bakes up golden and flavorful, but not so much that it becomes greasy. A good coating of rich olive oil not only aids in achieving that desirable crispiness but also infuses the eggplant with a wonderful depth of flavor, making each chip a savory delight.

Velvety Roasted Capsicum (Red Peppers) Spread
The vibrant, sweet, and smoky core of this sandwich is our delightful roasted capsicum spread. Whether you call them capsicums (as in Australia and many other parts of the world) or red peppers (as commonly known in America), roasting these beauties is surprisingly simple and yields incredible flavor. Growing up, roasted capsicums were a staple in my mother’s fridge – always on hand, ready to elevate any meal. Their remarkable versatility means they can be transformed into a myriad of dishes, from a robust pasta sauce to a vibrant dip or, in this case, a creamy, irresistible spread.
The magic happens in the oven: an hour of slow roasting at a high temperature tenderizes the capsicum flesh, concentrating its natural sugars and developing a beautifully charred, smoky exterior. This process unlocks a depth of flavor that raw peppers simply can’t offer.
To create this luscious spread, we blend the smoky roasted capsicums with creamy feta cheese, a generous drizzle of good olive oil, a squeeze of fresh lemon juice, and a touch of salt and pepper. The feta adds a tangy, salty counterpoint to the capsicums’ sweetness, while the lemon brightens the entire mixture. The result is a smooth, decadent spread that is perfect for this focaccia sandwich. Don’t worry if you make extra; this spread is an excellent accompaniment to a gourmet cheese board, a fantastic topping for bruschetta, or a flavorful swirl in scrambled eggs. The Silken Sweetness of Garlic Confit
If you’re new to my kitchen, you might be surprised by my affection for garlic confit, and perhaps even more so by the mention of using three whole cloves in a single sandwich! But please, don’t be alarmed. Garlic confit is a culinary revelation, a world away from the pungent sharpness of raw garlic. The process of confiting garlic – slowly simmering cloves in olive oil until incredibly tender – transforms it into something truly magical. The harsh bite mellows into a sweet, earthy flavor, while the texture becomes buttery and velvety, almost melt-in-your-mouth.
This gentle cooking process means you get all the wonderful aroma and richness of garlic without any of the lingering “garlic breath” that often accompanies its raw counterpart. It adds an unparalleled depth and umami to the focaccia sandwich, creating a foundational layer of savory sweetness that enhances every other ingredient. Making a batch of garlic confit is also an incredibly rewarding experience. Not only will you have these precious, sweet cloves to add to dishes, but the infused olive oil that remains is liquid gold, perfect for dressings, sautéing, or dipping with bread. Baking Bliss: Homemade Olive & Rosemary Focaccia
There’s an undeniable magic that comes with baking bread from scratch, and focaccia is perhaps one of the most rewarding and approachable breads to begin your journey with. The aroma filling your kitchen, the tangible satisfaction of seeing dough rise and transform – it’s unlike anything you can purchase from a store or even a specialty bakery. It carries that extra layer of specialness because you literally watched it grow and brought it to life with your own hands.
Focaccia is often hailed as the perfect bread recipe for beginners, and for good reason. It requires no intensive kneading, nor does it demand advanced bread-making skills. The dough comes together easily, relies on time for its development, and results in an incredibly airy, chewy interior with a wonderfully crisp, olive oil-rich crust. Infused with aromatic rosemary and briny olives, this focaccia becomes more than just bread; it’s a flavorful foundation for our gourmet sandwich. Its porous texture is ideal for absorbing the delicious flavors of the fillings, making each bite truly sensational.
While you certainly *can* buy pre-made bread for this sandwich, allow me to share a little secret: once you experience the unparalleled taste and texture of homemade focaccia, you’ll find it incredibly difficult to go back to store-bought. The subtle nuances of flavor, the perfect chew, and the sheer pride of baking it yourself truly elevate the entire sandwich experience. Assembling Your Gourmet Focaccia Masterpiece
With all your homemade components ready – the irresistible crispy eggplant, the creamy roasted capsicum spread, the sweet garlic confit, and your fragrant olive and rosemary focaccia – it’s time for the grand finale: assembly. This is where all the individual flavors and textures come together to create a harmonious and utterly satisfying gourmet sandwich. The order of layering is important, not just for structural integrity, but also for ensuring a balanced flavor profile in every bite.
Begin by slicing your focaccia horizontally. On one half, spread a generous layer of the mellow garlic confit, gently crushing the cloves to release their buttery essence. Follow this with a dollop of the rich, smoky roasted capsicum spread, ensuring it’s evenly distributed. Next, gently place the creamy burrata, allowing its luxurious interior to peek through. Layer with fresh tomato slices, offering a burst of juicy acidity, and a handful of peppery rocket for a refreshing crispness. Finally, tuck in those golden, crispy eggplant slices, providing that much-anticipated crunch. Top with the other half of the focaccia, gently press, and slice in half for a picture-perfect presentation. Each layer contributes to a magnificent whole, creating a sandwich that is as beautiful to look at as it is delightful to eat. This truly is a sandwich that celebrates fresh, vibrant ingredients and thoughtful preparation.

Garlic Confit
- 6 heads garlic
- 3 cups Rich Glen Olive Oil
- 6 sprigs thyme
Sandwich
- 1 large slice of focaccia
- 3 cloves garlic confit
- 1 tbsp red capsicum spread
- 1 burrata
- 3 slices tomato
- 100 g rocket or baby spinach
- 3 slices crispy eggplant
- salt and pepper to taste
Instructions
Olive & Rosemary Focaccia
-
In a medium bowl, mix together the lukewarm water, yeast, and honey with a whisk. Let it sit for 5 minutes or until the yeast has foamed, indicating it is active.
-
In a large bowl, combine the flour and salt, then whisk them together. Add the yeast mixture to the dry ingredients and bring the dough together with your hands or a spatula until a shaggy and sticky dough forms.
-
Coat a large mixing bowl with 4 tablespoons of olive oil. Transfer the dough to this bowl and ensure it’s coated in the olive oil. Cover the bowl with plastic wrap and place it into the fridge. Allow the dough to rise for a minimum of 6 hours, but ideally for 24 hours. The dough should double in size and appear bubbly.
-
Remove the dough from the fridge and gently fold it over itself in quarters. Gather up each edge of the dough with your hands and fold it towards the center while turning the bowl. The dough will deflate slightly as you shape it into a neat ball.
-
Coat a deep rectangular baking dish (a pan that is approximately 34cm x 23cm x 5cm works well) with 1 tablespoon of olive oil. Transfer the dough ball to the baking dish. Using your fingers, gently stretch the dough out slightly into a rough rectangular shape. There’s no need to stretch it all the way to the edges of the pan, as the dough will naturally rise and spread during proofing. Cover the pan with a clean tea towel and let the dough rise in a warm area of your house for 3 – 4 hours. Covering it prevents too much air from reaching the dough, which could create a dry, crusty layer on top.
-
Preheat your oven to 200 degrees Celsius (390°F). Once the dough has sufficiently risen, use your fingers to gently indent or dimple the dough all over. Scatter the garlic confit cloves and rosemary leaves evenly over the dough surface. Drizzle the dough with 2 additional tablespoons of olive oil – this is key for achieving that golden, crispy crust during baking. Finish with a generous sprinkling of flakey sea salt. Bake for 20 – 30 minutes, or until the focaccia has developed a beautiful golden crust on top.
-
Allow the bread to cool slightly in the baking tray before carefully removing it. Transfer the focaccia to a wire rack to cool completely.
Crispy Eggplant Chips
-
Preheat the oven to 200 degrees Celsius (390°F).
-
Heavily salt both sides of the eggplant slices. Place them into a colander and let them sit for 30 minutes. The salt will draw out excess liquid from the eggplants. After 30 minutes, give them a gentle squeeze to remove any remaining liquid. Thoroughly rinse the eggplants under cold water to wash away all the salt.
-
Place the rinsed eggplant slices onto trays lined with paper towels or clean tea towels. Press down firmly to dry them as much as possible. Remember, the more liquid you remove, the crispier your eggplants will be.
-
Pour the olive oil into a shallow bowl. Dip each eggplant slice into the olive oil, applying some pressure with your fingers to ensure good absorption. Flip the eggplant over and repeat the process. Continue this step until all the eggplant slices are thoroughly coated with olive oil.
-
Arrange the coated eggplant slices in a single layer on a pre-lined baking tray. Bake for 20 minutes per side, or until they are golden brown and wonderfully crispy. Keep a close eye on them, as each slice may cook at its own speed; some might need to be flipped or removed earlier if they start to brown too much. Once baked, let them cool on a wire rack.
Roasted Capsicum Spread
-
Preheat the oven to 220 degrees Celsius (425°F).
-
Place the whole capsicums onto a baking tray. Roast for 1 hour, flipping the capsicums over once or twice during baking, until their skin begins to char and blacken.
-
Once roasted, transfer the hot capsicums into a large bowl and immediately cover it tightly with plastic wrap or a tea towel. Let them sit for 1 hour to allow them to steam and cool slightly. This steaming process makes the skin incredibly easy to peel. After an hour, remove the capsicums from the bowl, peel off their skins, and remove the seeds and stems.
-
In a food processor or blender, combine the peeled capsicums, feta cheese, olive oil, a squeeze of juice from half a lemon, and salt and pepper to taste. Blend until a smooth and creamy consistency forms.
Garlic Confit
-
Preheat the oven to 120 degrees Celsius (250°F).
-
To easily peel the garlic, break the heads into individual cloves and place them into a heatproof bowl. Submerge the cloves in boiling hot water for 5 minutes, then drain. The skins will loosen, making them much easier to peel away.
-
Place the peeled garlic cloves and thyme sprigs into an ovenproof dish. Pour enough olive oil over them to fully submerge the garlic. It is crucial that the garlic remains completely covered by the oil to prevent it from burning. Bake for 2 hours, or until the garlic cloves have turned a light golden brown and are incredibly tender.
-
Allow the garlic confit to cool completely. Store it in an airtight container or jar, fully submerged in the infused olive oil, in the fridge for up to several weeks.
Sandwich Assembly
-
Take your large slice of focaccia and cut it into thirds lengthwise. Then, slice one of these focaccia pieces in half horizontally to create the top and bottom of your sandwich.
-
To assemble your ultimate focaccia sandwich, begin by spreading a generous layer of the sweet, buttery garlic confit on the bottom focaccia slice. Follow this with a dollop of the rich red capsicum spread. Next, carefully place the creamy burrata, allowing its soft interior to be a focal point. Layer with the fresh slices of tomato and a handful of crisp rocket or baby spinach. Finally, arrange the golden, crispy eggplant slices over the greens. Top with the other half of the focaccia, gently press down, and cut the entire sandwich in half for easy handling and a beautiful presentation.
