It might be a peasant dish, but this beans and herbs dish is delicious and can also be prepped and saved for a busy weeknight meal.

  • 4 tbsp olive oil, + 1 tbsp extra for sourdough
  • 4 garlic cloves, minced
  • 1 shallot, finely diced
  • 1 large red chilli, finely diced (adjust to taste)
  • 1 tsp sweet paprika
  • 1 lemon, zest and juice
  • 400 g butter beans, canned, rinsed, and drained (approx. 15oz)
  • 2 cups chicken stock
  • 4 green onions, green and white parts chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh dill, chopped
  • Salt and freshly ground black pepper, to taste
  • 4 slices sourdough bread, for serving

Instructions

  1. In a large, heavy-bottomed saucepan or Dutch oven, heat 4 tablespoons of olive oil over medium-high heat. Add the minced garlic, finely diced shallot, and red chili to the pan. Sauté for about 5 minutes, stirring consistently, until the shallot softens and becomes translucent, and the garlic is fragrant. Be careful not to burn the garlic. Stir in the lemon zest and sweet paprika, cooking for another minute until the spices become aromatic. This step builds the foundational flavors of our broth.
