Autumn Harvest Bowl with Vegan Pumpkin Vinaigrette: Your Ultimate Fall Salad Guide
As the leaves begin to turn and a crisp chill fills the air, our thoughts inevitably drift towards the comforting flavors of autumn. This magical time of year brings an abundance of vibrant produce to our local markets and grocery stores – from plump pumpkins and various squash to earthy root vegetables. If you’re anything like me, this seasonal shift ignites a flurry of culinary inspiration, leading to carts overflowing with beautiful, autumnal treasures. Yet, sometimes, those brilliant recipe ideas seem to vanish the moment you step back into your kitchen.

Picture this: you’ve just returned from the store, basket laden with colorful squash, bags of potatoes, and maybe even a can or two of pumpkin puree. You had grand plans for a delicious, wholesome meal. Fast forward to dinnertime, and you’re staring blankly at an uncooked acorn squash, seriously contemplating calling for a pizza delivery. Sound familiar? We’ve all been there!
Embracing the Abundance of Autumn: A Culinary Journey
This delightful predicament — having an abundance of gorgeous fall produce with no concrete plan for it — is precisely how this incredibly flavorful and filling Autumn Harvest Bowl came to be. It’s a testament to the idea that necessity, coupled with an undeniable love for all things fall, truly is the mother of invention. While many might shy away from salads during the cooler months, dismissing them as light and unsatisfying, I believe a salad can be a substantial, comforting, and deeply satisfying meal, especially when crafted with intention and a diverse array of ingredients.
My philosophy for a truly great salad, particularly during “comfort food season,” is simple: it needs to be big, hearty, and packed with contrasting tastes, textures, and even temperatures. Every single bite should offer a symphony of flavors and sensations. This emphasis on contrast is key to transforming a simple bowl of greens into an unforgettable culinary experience that celebrates the season’s bounty.

Beyond the Basic Bowl: Crafting a Satisfying Fall Feast
This isn’t your average, flimsy side salad. This Autumn Harvest Bowl is a complete meal designed to nourish your body and delight your palate. It begins with a vibrant base of peppery arugula, which provides a fresh, slightly bitter counterpoint to the richer components. To this, we add the delightful chewiness of tart dried cranberries and the satisfying crunch of pecans, all harmoniously tossed in our star dressing: a simple yet extraordinarily flavorful Vegan Pumpkin Vinaigrette.
But the journey doesn’t stop there. These perfectly dressed greens are then generously topped with an array of warm, inviting elements: oven-crisped potatoes, tender and beautifully seasoned sweet and spicy squash, and a generous sprinkle of freshly ground black pepper. To elevate it further, a final flourish of vegan parmesan cheese adds a salty, umami depth that truly ties everything together. I promise you, there’s no boring, unsatisfying lettuce here! This is a harmonious blend of sweet, savory, and spicy notes, a hearty bowl of autumnal goodness that will make you wish fall lasted all year long.

The Anatomy of a Perfect Autumn Harvest Bowl
The Robust Base: Arugula & Accents
- Peppery Arugula: Provides a fantastic, slightly spicy foundation that cuts through the richness of the roasted vegetables and dressing. Its delicate leaves create a light contrast to the heartier elements.
- Tart Dried Cranberries: These add a burst of sweet-tart flavor and a chewy texture, mirroring the vibrant colors of autumn. They pair beautifully with the earthiness of the vegetables.
- Crunchy Pecans: Offering a delightful crunch and nutty flavor, pecans contribute healthy fats and an essential textural contrast. Toasted pumpkin seeds are also a fantastic alternative.
The Star Players: Roasted Roots & Squash
The roasted vegetables are what truly make this bowl a hearty, filling meal. Roasting brings out their natural sweetness and creates irresistible caramelized edges.
- Crispy Seasoned Potatoes: Cubed and roasted to golden perfection, these provide a satisfying bite and comforting warmth. Seasoned well, they become incredibly addictive.
- Sweet and Spicy Squash: Delicata squash is a fantastic choice here, with its tender skin (no need to peel!) and delicate sweetness. Roasted with a touch of maple and cayenne, it achieves a perfect balance of sweet heat. You can substitute with other squash varieties like butternut or acorn.
- Roasted Red Onion: Caramelizes beautifully in the oven, adding a sweet and savory depth to the vegetable medley.
- Warm Chickpeas: Added towards the end of roasting, chickpeas soak up the delicious seasonings, providing plant-based protein and an extra textural dimension.
The Dazzling Drizzle: Vegan Pumpkin Vinaigrette
The dressing is truly the magic that ties this entire bowl together. It’s creamy, savory, subtly sweet, and wonderfully autumnal.
- Pumpkin Puree: The star ingredient, offering a velvety texture and mild, earthy sweetness that screams fall.
- Dijon Mustard: Adds a zesty tang and emulsifies the dressing, ensuring a smooth consistency.
- Sriracha Hot Sauce: A touch of heat balances the sweetness and adds a subtle garlicky kick, making the dressing more dynamic.
- Maple Syrup: Enhances the natural sweetness of the pumpkin and complements the roasted vegetables.
- Apple Cider Vinegar & Olive Oil: The classic vinaigrette base, providing acidity and richness.
- Nutmeg: A whisper of this warm spice instantly evokes the cozy feeling of autumn, enhancing the pumpkin flavor without overpowering it.
And finally, a generous shaving of vegan parmesan cheese adds that last layer of salty, tangy perfection, completing this robust and flavorful harvest bowl. Each element is carefully chosen to create a cohesive and incredibly satisfying meal.

Peppery fresh greens topped with crispy seasoned potatoes, sweet and spicy squash, and a drizzle of creamy vegan pumpkin vinaigrette. A truly satisfying fall meal!
Ingredients
For the Veggies:
- 3 medium potatoes
- 2 medium delicata squash, or squash of choice
- 1 medium red onion
- 3-4 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp kosher salt
- 1/4 tsp cayenne
- 2 tsp steak or poultry seasoning
- 1 15oz can of chickpeas, rinsed and drained
For the Salad:
- 6 cups arugula or mixed greens
- 1/2 cup chopped pecans or whole pumpkin seeds
- 1/2 cup dried cranberries
- vegan parmesan cheese, such as VioLife
For the Dressing:
- 1 cup pumpkin puree
- 1 tbsp Dijon mustard
- 1 tsp Sriracha hot sauce
- 2 tbsp maple syrup
- 2 tbsp water
- 1/4 cup apple cider vinegar
- 1/3 cup olive oil, extra virgin
- 3/4 tsp kosher salt
- 1/8 tsp nutmeg
Instructions
Roast the Veggies
-
Start by preheating the oven to 375°F (190°C).
Chop the potatoes and red onion into large bite-sized pieces.
Cut the squash in half, scrape out the seeds using a spoon, and then slice into thick, crescent-shaped pieces (refer to the photos for guidance).
Note: You may peel the potatoes and squash before chopping if preferred, though delicata squash skin is edible and delicious when roasted.
-
Place the sliced squash on a large baking sheet. Drizzle with the maple syrup and 1-2 tablespoons of olive oil. Season with 3/4 teaspoon of salt, nutmeg, and black pepper, then toss gently to ensure an even coating.
On a separate baking sheet, add the chopped potatoes and red onions. Drizzle with 1-2 tablespoons of olive oil and season with the steak or poultry seasoning and 3/4 teaspoon of salt. Toss thoroughly to coat.
Transfer both pans to the preheated oven and bake until the vegetables are fork-tender and lightly caramelized, which will take approximately 20-30 minutes.
During the last 10 minutes of baking, add the rinsed and drained chickpeas to the pan with the potatoes and onions. Mix well to coat them in the seasonings and continue baking until the chickpeas are warmed through and slightly crispy, about 10 minutes.
Make the Dressing
-
While the vegetables are roasting, combine all the dressing ingredients (pumpkin puree, Dijon mustard, Sriracha, maple syrup, water, apple cider vinegar, olive oil, salt, and nutmeg) in a blender.
Blend until completely smooth and creamy, which should take about 30 seconds. Taste the dressing and adjust seasonings as needed, adding more salt, pepper, or another splash of maple syrup if you prefer a sweeter dressing.
Assemble
-
In a large mixing bowl, combine the arugula, pecans, and dried cranberries. Add about 1/4 cup of the prepared dressing and a pinch of salt and pepper. Toss everything together gently until the greens are well coated.
Divide the dressed salad mixture evenly among four plates or shallow bowls. Top each serving generously with the warm roasted vegetables and chickpeas.
Drizzle additional pumpkin vinaigrette over the top of each bowl according to your preference.
Using a vegetable peeler or a grater, shave thin slices of vegan parmesan cheese directly over each plate.
Finish with a few generous grinds of freshly cracked black pepper for an aromatic flourish, and serve immediately. Enjoy your vibrant and satisfying Autumn Harvest Bowl!
Notes for Success & Variations
-
Pumpkin Puree vs. Pie Filling: Always double-check your canned pumpkin! Ensure you purchase plain pumpkin puree, not pumpkin pie filling. They look very similar on the shelf and are often placed side-by-side, but pie filling is pre-spiced and sweetened, which will drastically change the flavor of your vinaigrette.
-
Sriracha Alternatives: If Sriracha isn’t to your taste or isn’t available, you can substitute it with another hot sauce that has a hint of garlicky flavor. Alternatively, omit the hot sauce entirely and add a pinch or two of garlic powder to the dressing for a similar aromatic profile without the heat.
-
Make-Ahead Tips: This recipe is fantastic for meal prepping! I often double the dressing recipe and store it in an airtight container in the fridge for up to a week. This way, I have a delicious, ready-to-use dressing for salads throughout the week. The same principle applies to the roasted vegetables: making a larger batch allows you to enjoy them in this harvest bowl, or incorporate them into other easy meals like wraps, grain bowls, or as a side dish.
-
Cranberry Substitutions: If you don’t have dried cranberries on hand, or simply wish to try something different, consider substituting with raisins, chopped dried apricots, dried cherries, finely diced dates, fresh apple pieces, or vibrant pomegranate seeds. While all these options offer a lovely sweetness, dried cranberries are a personal favorite due to their perfect balance of sweet and tart, which wonderfully complements the savory elements of this salad.
-
Spice It Up: For those who love extra heat, feel free to increase the cayenne pepper in the roasted veggies or the Sriracha in the dressing. A pinch of red pepper flakes sprinkled over the finished bowl also adds a nice kick.
-
Add Protein: To make this bowl even more substantial, consider adding baked tofu, tempeh, or your favorite plant-based protein alongside the roasted vegetables and chickpeas.
-
Herb Freshness: A sprinkle of fresh herbs like chopped parsley or sage over the finished bowl can add another layer of fresh flavor and aroma.
Harvesting Health: The Nutritional Goodness of Fall Produce

Seasonal vegetables like squash and potatoes are rich in vitamins, minerals, and dietary fiber, supporting digestive health and providing sustained energy.
