Essential Ingredients for Your Butternut Squash Masterpiece
Crafting this delicious butternut squash side dish requires only a handful of simple yet high-quality ingredients. Each component plays a crucial role in building the layered flavors and textures that make this recipe so special:
- Butternut Squash: The star of our dish. When selecting, look for a squash with a narrow “neck,” as this part contains more flesh and is generally easier to peel and cut. Butternut squash is an excellent source of Vitamin A, Vitamin C, and fiber, contributing to both the health and vibrant color of this recipe.
- Dried Cherries: These little gems add a burst of bright, tart, and subtly sweet flavor that beautifully cuts through the richness of the squash and cream. They also introduce a lovely chewy texture, creating an exciting contrast.
- Almonds: Toasted almonds provide an irresistible crunch and a nutty depth that complements the other ingredients perfectly. Tosting them beforehand enhances their natural flavor and aroma. You could also experiment with pecans or walnuts for a different twist.
- Fresh Parsley: A generous sprinkle of finely chopped fresh parsley brightens the dish with its herbaceous notes and adds a visually appealing pop of green color, making the presentation truly stand out.
- Olive Oil: Used for roasting the squash to achieve that desirable golden-brown exterior and tender interior, and a touch in the cashew cream for added richness and smoothness.
- Maple Syrup: This natural sweetener is key to enhancing the inherent sweet and savory notes of the butternut squash, encouraging beautiful caramelization during roasting, and infusing the dish with an authentic autumnal flavor.
- Nutmeg, Dried Sage, and Onion Granules: These pantry staples are the secret to taking this recipe to the next level. Nutmeg provides a warm, sweet spice, dried sage offers an earthy, aromatic depth that pairs perfectly with squash, and onion granules (or garlic granules, if preferred) add a foundational savory complexity to the cream sauce.
- Raw Cashews: The foundation of our luxurious dairy-free cream sauce. It’s crucial to use raw cashews, not roasted, as they soften more effectively when soaked, resulting in an exceptionally smooth and silky cream. Soaking is a non-negotiable step for the best texture.
- Unsweetened Almond Milk: This plant-based milk forms the liquid base for our cashew cream sauce. Opting for unsweetened ensures that the sauce remains savory and doesn’t introduce unwanted sweetness, allowing the sage and other seasonings to shine.
Crafting Your Maple Roasted Butternut Squash with Sage Cashew Cream
This recipe is surprisingly straightforward to make, yielding impressive results with minimal fuss. While the full, detailed instructions are available in the recipe card below, here’s a concise overview to give you a clear idea of the process and empower you to create this delicious dish with confidence.
Step One: Prepare the Foundations
Begin by preparing your cashews for the cream sauce. Place the raw cashews in a bowl and pour hot water over them, ensuring they are fully submerged. Let them soak for at least 30 minutes, or ideally overnight if time permits. This crucial step softens the cashews, guaranteeing an ultra-silky and smooth cream sauce. While the cashews soak, pre-heat your oven to 400°F (200°C) and prepare the butternut squash. Carefully peel the squash, then cut it in half lengthwise and scoop out the seeds and fibrous strands. Slice the squash into uniform 3/4-inch half-moon pieces. Transfer the sliced squash to a large mixing bowl, then add the kosher salt, black pepper, nutmeg, a generous drizzle of olive oil, and maple syrup. Toss everything together thoroughly until each piece of squash is evenly coated. Spread the seasoned squash in a single layer onto a baking sheet lined with parchment paper to prevent sticking and promote even roasting.
Step Two: Roast and Blend
Place the baking sheet with the butternut squash into your preheated oven and roast for approximately 45 minutes, or until the squash is fork-tender and beautifully caramelized around the edges. While the squash roasts, you can efficiently prepare the Sage Cashew Cream Sauce. Drain the soaked cashews, discarding the soaking water, and transfer them to a high-speed blender. Add the unsweetened almond milk, a tablespoon of olive oil, dried sage, onion granules (or garlic granules), and a teaspoon of kosher salt. Blend the mixture on high speed until it’s completely smooth and creamy. A helpful tip for the silkiest sauce: blend for slightly longer than you think necessary. This extra blending time helps to thoroughly emulsify the sauce, eliminating any graininess and resulting in a wonderfully smooth, velvety texture.
Step Three: Assemble and Serve
Once the roasted butternut squash is tender and glistening, carefully transfer it from the baking sheet to a large serving plate or platter. Now, it’s time to add the luscious cream sauce. Drizzle about three-quarters of the Sage Cashew Cream Sauce generously over the warm squash. For the finishing touches, evenly sprinkle the finely chopped fresh parsley, crunchy sliced almonds, and tart dried cherries over the dish. The remaining one-quarter of the cashew cream sauce can be served on the side, allowing guests to add more to their liking. Serve immediately and savor the incredible blend of flavors and textures. This dish is truly a delight!
Versatile Serving Suggestions
One of the many charms of this Maple Roasted Butternut Squash with Sage Cashew Cream is its incredible versatility. It tastes fantastic served hot, straight from the oven, allowing the warm flavors to meld beautifully. However, it’s equally delicious when served at room temperature, making it an excellent option for buffets or holiday gatherings where oven space might be limited. You can even enjoy it chilled, transforming it into a refreshing component of a larger salad.
This vibrant side dish pairs wonderfully with a variety of main courses. During the holidays, it’s a natural fit alongside a plant-based roast, a hearty lentil loaf, or a mushroom Wellington. For everyday meals, consider serving it with simple pan-seared tofu, grilled tempeh, or as a vibrant addition to a grain bowl with quinoa or farro. Its rich flavors and textures also make it substantial enough to be enjoyed as a light lunch on its own, perhaps with a simple green salad.

Creative Ways to Enjoy Leftovers
Should you find yourself with any glorious leftovers of this butternut squash dish (though it’s so good, that’s a big “if”!), rest assured they are just as delightful the next day, if not more so. This dish holds up incredibly well and offers numerous possibilities for repurposing.
- Revitalize as a Salad: A fantastic way to use leftovers is to serve them over a bed of fresh mixed greens. The warm or chilled squash, creamy sauce, and crunchy toppings make for a quick, satisfying, and fall-inspired salad. Add some toasted pumpkin seeds or a drizzle of balsamic glaze for an extra touch.
- Quick & Easy Snacking: To be honest, this dish is so irresistible that I’ve often found myself eating the leftovers straight out of the container! It’s truly good cold, making it a perfect grab-and-go snack or a quick component for lunch when you’re short on time.
- Grain Bowl Booster: Incorporate the leftover squash and cream into your morning or lunch grain bowls. It adds a delicious layer of flavor, nutrition, and texture to quinoa, farro, or brown rice.
- Wrap or Sandwich Filler: Lightly mash the leftover squash with a bit more of the cashew cream, and use it as a flavorful spread or filling for wraps and sandwiches, adding a unique autumnal twist.
- Soup Base: While already a side, any remaining squash can be pureed with vegetable broth to create a quick, creamy soup, perhaps with a swirl of the leftover cashew cream on top.
Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. While technically freezable, the texture of the roasted squash and the cream may change slightly upon thawing, so fresh consumption is always recommended for the best experience.
