This is a shortcut for a delicious and filling dinner!

Ingredients

  • 3 tbsp olive oil, + extra for sourdough
  • 8 garlic cloves, peeled
  • 500 g cherry tomatoes (1 pound)
  • 400 g Borlotti beans (14oz – drained)
  • 40 g goat’s cheese (1.4oz)
  • Salt and pepper, to taste
  • 1 cup chicken stock (230ml)
  • Fresh basil, sliced, to serve
  • Sourdough, to serve

Instructions

  1. In a deep-dish frying pan on a medium heat, add the olive oil and bring to temperature. Add the peeled garlic cloves and cook for 2 minutes or until fragrant. Stir the garlic often to ensure it does not brown or burn, as burned garlic can become bitter. Add the cherry tomatoes to the pan and continue to cook for 15 minutes, or until they have softened, burst open, and created a rich, jammy sauce. Season generously with salt and freshly ground black pepper to enhance the flavors.
  2. Carefully remove the cooked garlic cloves from the sauce. Using the back of a knife or a fork, gently smash them. The garlic should be very soft and easily break apart. If you find the cloves are still firm, finely slice them instead, then return them to the pan with the tomatoes. This step ensures the garlic’s mellow sweetness is fully incorporated into the sauce without any harshness.
  3. Add the drained Borlotti beans and chicken stock to the pan with the tomato sauce. Bring the mixture to a gentle simmer and cook for a further 5 minutes, or until the sauce has thickened to your desired consistency. Start with ¾ cup of chicken stock and add the remaining ¼ cup if the sauce appears too thick.
