Choosing the Perfect Pasta for Your One Pot Creation

“Which pasta best suits this one pot tomato pasta?” is a question we often hear, and it’s a valid one! However, in the spirit of keeping your grocery shopping to an absolute minimum and embracing culinary flexibility, our answer might surprise you: it genuinely doesn’t matter too much! The beauty of one-pot cooking is its adaptability. While I personally opted for a short pasta for this particular iteration, you could easily achieve fantastic results with a variety of shapes. Imagine the silky strands of linguine intertwining with the rich tomato sauce, or the delightful texture of shells perfectly cradling every drop of flavour. Even orecchiette, with its ear-like shape, would work wonderfully, providing a unique bite. The key is to use what you already have on hand. Don’t feel pressured to buy a specific type if your pantry is already stocked. This not only saves you a trip to the supermarket but also helps reduce food waste.

When selecting your pasta, the most crucial factor to consider is its cooking time. Different pasta shapes and brands will have varying cooking durations, which directly impacts the amount of liquid required in your one-pot dish. A longer cooking time will necessitate a bit more stock or water to ensure the pasta cooks through evenly without drying out. Conversely, a quick-cooking pasta might need slightly less liquid. My top tip is always to check the package instructions for your chosen pasta and be prepared to add a splash more liquid if the pan starts looking too dry before the pasta is al dente. This simple adjustment ensures perfect results every time, no matter your pasta preference.

Time is of the Essence: A 20-Minute Meal You’ll Adore

In today’s fast-paced world, time isn’t just a commodity; it’s a precious resource. This is precisely why the One Pot Tomato Pasta recipe is such a game-changer. It’s not just about whipping up a meal quickly because it’s tricky to make; rather, it’s about gifting you back your valuable time. From start to finish, this entire dish can be on your table and ready to enjoy in just 20 minutes. Think about that: a flavourful, satisfying, and wholesome meal prepared faster than most takeout options. We understand the demands of busy schedules, and our goal is to provide you with delicious, vibrant culinary choices that don’t compromise on taste or quality, even when you’re short on time. This recipe epitomizes efficiency without sacrificing the joy of a homemade dinner, making it a perfect fit for any day of the week.

Unleash Your Creativity: Incredible Add-Ons and Variations

One of the most exciting aspects of this One Pot Tomato Pasta is its incredible versatility. This isn’t just a recipe; it’s a canvas for your culinary imagination, an invitation to customize and adapt based on your preferences, dietary needs, or simply whatever you have lurking in your fridge. Do you have a few ingredients teetering on the edge of their “use by” date, waiting for their moment to shine? This is their chance! Transform potential food waste into delightful flavour enhancements. Consider adding leftover roasted chicken for a protein boost, or perhaps some strips of steak from last night’s dinner. Even humble ham or crispy bacon can add a wonderful smoky depth to the dish. For those looking to incorporate more greens, a handful of fresh spinach stirred in during the last few minutes will wilt beautifully into the sauce, adding both colour and nutrients.

Beyond using up leftovers, this one-pot wonder is also fantastic for subtly introducing extra vegetables, especially for those with fussy eaters. Grate up some carrots or zucchini into the simmering sauce, and they’ll virtually disappear, blending seamlessly into the rich tomato base while boosting the nutritional content. For a spicier kick, a pinch of red pepper flakes can be added with the garlic. If you’re aiming for a richer, more umami flavour, consider adding a tablespoon of tomato paste or a splash of balsamic vinegar. A sprinkle of fresh herbs like oregano or parsley, in addition to basil, can also elevate the aromatic profile. Whether you’re a seasoned chef or a beginner in the kitchen, experimenting with different add-ins makes this recipe uniquely yours, ensuring every serving is a delightful surprise.

A simple, flavourful, and incredibly quick mid-week meal from our one-pot pasta series, this One Pot Tomato Pasta is an absolute winner! Perfect for busy individuals and families.
Prep Time:

5 mins
Cook Time:

12 mins
Servings:

4 people

Ingredients

  • 3 tbsp extra virgin olive oil
  • 6 garlic cloves, peeled
  • 1 lemon zest
  • 1 tbsp lemon juice
  • 500 g cherry tomatoes, approx. 1 pound
  • 2 cups pasta, approx. 250g (short pasta recommended)
  • 2.5 cups chicken stock, approx. 25oz (or vegetable stock for vegetarian option)
  • 50 g parmesan, grated, approx. 1.7oz
  • fresh basil, for garnish
  • salt + pepper, to taste

Instructions

  1. In a large frypan or deep pot, heat the extra virgin olive oil over a medium heat. Add the peeled garlic cloves and cook gently for 1-2 minutes, or until they turn lightly golden and become wonderfully fragrant. Be careful not to burn the garlic. Stir in the lemon zest and cherry tomatoes, continuing to cook for about 5 minutes until the tomatoes have softened and slightly burst open, releasing their juices.
  2. Add the dry pasta, chicken stock (or vegetable stock), and a generous seasoning of salt and pepper to the pan. Increase the heat to high and bring the liquid to a rolling boil. Once boiling, reduce the heat to medium-high, allowing the mixture to maintain a rapid simmer. Cook for approximately 10 minutes, stirring occasionally to prevent sticking and ensure even cooking. The pasta should be cooked through (al dente) and about 80% of the liquid should be absorbed, creating a luscious sauce. Depending on your chosen pasta shape and brand, you might need a little extra cooking time or a splash more stock if the sauce becomes too thick too quickly.
  3. Carefully remove the softened garlic cloves from the pan. Using the back of a knife or a fork, gently crush the garlic. It should be tender enough to mash easily. Return the crushed garlic to the pan, along with the fresh lemon juice, grated Parmesan, and torn fresh basil. Stir everything together until well combined and the Parmesan has melted into the sauce, creating a creamy finish. Serve your One Pot Tomato Pasta immediately, garnished with extra fresh basil if desired. Enjoy this simple yet incredibly flavourful meal!
