How To Make Lamb Souvlaki: The Components of a Masterpiece

The most time-consuming aspect of this lamb souvlaki recipe is undoubtedly the preparation of all its individual elements. But once each component is ready, the most challenging part becomes assembling them into one gloriously delicious parcel. Here’s a breakdown of the vital constituents that come together to create this unforgettable lamb souvlaki!

A selection of fresh ingredients for lamb souvlaki

The Star: Succulent Slow Roasted Garlicky Lamb

At the core of this magnificent meal is, of course, the roasted lamb! What would a slow cooked Greek lamb souvlaki be without its centerpiece? To truly excel, I highly recommend following my slow roasted garlicky lamb recipe. This method ensures the lamb is incredibly tender, falling off the bone, and bursting with flavor. Yes, it is very garlicky, but the other ingredients and accompaniments are carefully chosen to complement this richness, creating a beautifully balanced and magical symphony of tastes. The slow roasting process allows the lamb to absorb all the aromatic flavors, resulting in a melt-in-your-mouth experience that is simply unparalleled.

The Freshness Factor: Vibrant Tabbouleh (Herby Salad)

To add an extra dimension of freshness and texture to my souvlaki, I love incorporating a light and zesty Tabbouleh. While there are many variations, some featuring hearty bulgur wheat or even quinoa (perfect if you’re enjoying it as a standalone salad), for its role within the lamb souvlaki, I prefer to keep it simple and grain-free. This approach allows the tabbouleh to contribute its bright, herbaceous notes and refreshing crunch without making the souvlaki overly heavy or filling. And trust me, this is a truly substantial and satisfying meal as it is!

This particular tabbouleh recipe, a cherished gift from my dear friend Maya, has become a staple in my kitchen. Its simplicity belies its incredible impact, offering a clean, bright contrast to the richness of the lamb and other components. Finely chopped parsley, fresh tomatoes, spring onions, and a zingy lemon-olive oil dressing create a salad that is both invigorating and essential for the overall balance of your souvlaki wrap.

The Irresistible Crunch: Crispy Roasted Potatoes

Traditional Greek street-side souvlaki often comes generously stuffed with perfectly salted, hand-cut chips. When making slow roasted lamb souvlaki at home, I like to elevate this element by including my famously crispy roasted potatoes. Why this specific choice? It’s all about the texture, the sublime crunch that these potatoes provide. They don’t just add flavor; they bring a vital textural counterpoint to the tender lamb and soft pita.

These potatoes are not just crispy; they are also infused with aromatic herbs and, of course, plenty of garlic, making them incredibly delicious and a truly herbaceous delight. Their golden-brown exterior and fluffy interior offer a delightful contrast that makes every bite of your souvlaki more exciting. Preparing them involves a special technique of boiling, roughing up their surface, and then roasting them in hot oil to achieve that unparalleled crispness.

The Creamy Counterpoint: Zesty Tzatziki Sauce

While some people opt for hummus in their souvlaki, I firmly believe that nothing quite compares to a robust and refreshing tzatziki. Often enjoyed as a dip with fresh vegetables like carrots or cucumber, tzatziki is a fundamental Greek staple and an absolutely essential component of your slow cooked Greek lamb souvlaki. It provides a creamy, cool, and tangy balance that is crucial for a well-rounded flavor profile.

This classic sauce is a delightful blend of thick Greek yogurt, grated cucumber (squeezed to remove excess moisture for optimal consistency), fragrant dill, fresh lemon juice, and a hint of garlic. The bright tartness of the lemon and yogurt beautifully cuts through the richness and fattiness of the slow-roasted lamb, while also adding much-needed moisture to the entire wrap. Each dollop of tzatziki ensures a burst of refreshing taste, making every bite a perfect harmony of flavors and textures.

The Perfect Vessel: Soft and Pillowy Pita Bread

The final, yet equally crucial, ingredient for crafting the perfect lamb souvlaki is the pita bread itself! My preference leans towards a thicker, more pillowy pita rather than a thinner, larger wrap. The substantial thickness of the pita is absolutely essential for several reasons: it expertly soaks up all the delectable, savory juices released from the slow-roasted lamb, preventing your souvlaki from becoming a messy affair. More importantly, it acts as the ideal, sturdy vessel, perfectly cradling all the wonderful fillings together, ensuring every bite is a complete and satisfying experience. A good pita provides a soft, warm base that beautifully complements the textures and flavors of the lamb, sauces, and salads.

Frequently Asked Questions (FAQs) for My Slow Cooked Greek Lamb Souvlaki

Can I prepare my lamb souvlaki components in advance?

Absolutely! The beauty of this recipe is that many elements can be prepared ahead of time, making it ideal for entertaining. You can roast the lamb a day in advance, allowing the flavors to deepen even further, then simply reheat it gently before serving. The tzatziki and tabbouleh also benefit from a few hours (or even a day) in the refrigerator, giving the flavors time to meld beautifully. This advanced preparation strategy significantly cuts down on active cooking time on the day of your dinner party or lunch, letting you relax and enjoy your guests.

The possibilities for customization are endless! For those who love an extra kick, a dash of spicy chili sauce or a sprinkle of red pepper flakes can add a wonderful heat. If you’re a fan of sharp, salty flavors, a generous crumble of creamy, bitey feta cheese would also be an excellent addition. Other popular additions include thinly sliced red onion (beyond what’s in the tabbouleh), fresh cucumber slices, or even a handful of black olives for an authentic Mediterranean touch. • 4 anchovy fillets
  • 1 tbsp baby capers
  • 1 lemon, zest and juice
  • 250 mL white wine
  • salt + pepper

Crispy Roasted Potatoes

  • 4 large russet potatoes, peeled and cut into small cubes
  • 6 cloves garlic
  • 3 sprigs thyme
  • 3 sprigs rosemary
  • 1/2 cup olive oil
  • 1/2 cup grapeseed or vegetable oil
  • salt + pepper

Tzatziki

  • 1 cup plain Greek yoghurt
  • 1 cucumber, grated
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, grated
  • 2 tbsp dill, chopped
  • salt + pepper

Tabbouleh

  • 2 large parsley bunches, leaves removed from stems and finely chopped
  • 1 bunch spring onions, sliced
  • 2 tomatoes, diced
  • 1/2 red onion, finely sliced
  • 1/2 cup olive oil
  • 1 lemon, juiced
  • salt + pepper

Souvlaki Assembly

  • Flat bread

Instructions

Slow Roasted Lamb

  • Preheat the oven to 200 degrees Celsius / 410 degrees Fahrenheit.
  • In a small pot on a low heat, combine 20 garlic cloves, 2 sprigs rosemary, 2 sprigs thyme, and 2 cups olive oil. Bring to a slow simmer and cook for 30 – 45 minutes or until the garlic is soft and slightly golden. Remove half of the olive oil and reserve for another use. In the same pot, on the same heat, add the anchovies, baby capers, and lemon zest. Cook for 5 minutes or until the anchovies have melted into the oil. Drain the oil and set aside. Place the garlic mixture into a mortar and pestle and pound into a paste.
  • Using a sharp knife, score the fat of the lamb into a criss-cross pattern, being careful not to cut through to the meat. Rub the prepared garlic and herb paste all over the lamb, pushing it into the slits. Scatter the remaining herbs and garlic into the bottom of a Dutch oven or roasting tin that will hold the lamb as snugly as possible. Place the lamb on top of the herbs and garlic. Pour over the reserved olive oil, lemon juice, and white wine. Season generously with salt and pepper. Cover the pot very well with aluminum foil or a lid and place it into the oven. Immediately reduce the heat to 140 degrees Celsius or 300 degrees Fahrenheit and cook for 4 hours, or until the lamb is incredibly soft, tender, and effortlessly falling off the bone.
  • Once the lamb is cooked, remove it from the oven and allow it to rest for 15 minutes before gently breaking it apart with forks. Serve the shredded lamb with some fresh pita bread and all the flavorful juices from the pan.

Crispy Roasted Potatoes

  • Preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit.
  • Wash the potatoes thoroughly in cold water, then place them in a bowl and cover completely with cold water. Let the potatoes soak for 10 minutes, giving them a good rinse to remove as much starch as possible. Drain them into a colander and rinse again under cold water.
  • Place the rinsed potatoes in a large saucepan, cover with cold water, and add a very generous amount of fine sea salt. Add the rosemary, thyme, and slightly smashed garlic cloves. Place the pan on high heat and bring the water to a boil. Once boiling, cook the potatoes for 5 – 8 minutes, or until they are fork-tender.
  • Drain the potatoes into a colander, discarding the garlic cloves and herbs. Gently rough up the potatoes by mixing them with a spoon; this increases their surface texture, which is key for crispiness. Cover the colander with a clean tea towel and allow the potatoes to steam dry for 15 minutes.
  • While the potatoes are steaming, add the olive and grapeseed/vegetable oil to a baking dish and place it into the preheated oven for 5 minutes, or until the oil is piping hot. Carefully remove the hot tin from the oven and very gently pour the steamed potatoes into the hot fats. You should hear a delightful sizzling sound. Stir the potatoes through the hot fats to coat them evenly, then bake for 45 minutes, tossing them and basting them with the oil every 15 minutes, until golden brown and gloriously crispy.
  • Remove the crispy potatoes from the tin and serve immediately alongside the slow-roasted lamb.

Tzatziki

  • Grate the cucumber and place it into a clean tea towel. Give it a big squeeze to remove as much excess moisture as possible; this prevents a watery tzatziki.
  • Place all the tzatziki ingredients (yogurt, squeezed cucumber, olive oil, lemon juice, grated garlic, chopped dill, salt, and pepper) into a bowl and mix until thoroughly combined and smooth. Taste and adjust seasoning as needed.

Tabbouleh

  • Place all the tabbouleh ingredients (chopped parsley, sliced spring onions, diced tomatoes, finely sliced red onion, olive oil, lemon juice, salt, and pepper) into a large bowl and mix gently to combine. Season generously with salt and freshly ground pepper. Taste the salad to ensure you have enough seasoning and dressing, adjusting to your liking.
  • Allow the tabbouleh to sit for at least 10 minutes before serving. This resting time allows all the fresh flavors to meld beautifully.

Souvlaki Assembly

  • Drizzle a pan with a little olive oil and heat it over medium heat. Warm each flatbread for 1 – 2 minutes per side, or until it’s slightly golden and toasted, becoming soft and pliable.
  • Assemble your souvlaki by spreading 3 of the cooked garlic cloves (from the lamb roasting tin) onto the warmed flatbread. Follow with a generous layer of creamy tzatziki. Top with a substantial amount of the shredded slow-roasted lamb, then add a vibrant layer of tabbouleh, and finish with a scattering of crispy roasted potatoes. Fold or roll the souvlaki tightly and serve immediately for the ultimate taste experience!
