Unveiling the Star Ingredients
So, what exactly contributes to this salad’s irresistible charm? Imagine perfectly roasted broccolini, tender yet slightly charred, harmoniously tossed with vibrant kale that’s been lovingly massaged with fresh lemon. Add to this the lively zing of thinly sliced red onions, the delightful crunch of toasted sliced almonds, and the sweet, chewy burst of dried apricots. It’s a symphony of textures and flavors, all brought together by a homemade salad dressing so captivating, you’ll find yourself reaching for it to elevate everything from everyday salads and roasted potatoes to hash browns, nourishing grain bowls, and even veggie wraps and sandwiches. The possibilities are truly endless!
What is Broccolini? A Closer Look at this Versatile Vegetable

For those new to broccolini, it’s a wonderful vegetable often mistaken for baby broccoli, but it’s actually a natural hybrid. It boasts longer, thinner stalks and smaller florets than its traditional cousin, with a milder, sweeter flavor profile that’s less bitter. This makes it incredibly appealing, especially for those who find regular broccoli too strong. Broccolini also cooks more quickly, achieving that perfect tender-crisp texture with beautiful charred edges in no time, making it ideal for this roasted salad.
Can I use regular Broccoli or Cauliflower instead?
Absolutely! While broccolini shines in this recipe, feel free to substitute with regular broccoli florets or even cauliflower. The beauty of this dish lies in its adaptability. I always encourage using what you have readily available or what your family enjoys most. If you’re introducing this recipe to someone who’s particularly wary of new vegetables, starting with their preferred cruciferous veggie might be a great gateway. However, if you’re exploring new ways to enjoy vegetables or want to experience broccolini at its best, I wholeheartedly recommend giving it a try here. Its unique texture and flavor truly elevate the salad.
The Star of the Show: Our Smokey Maple Mustard Dressing

Every great salad needs an exceptional dressing, and this oil-free vegan salad dressing is truly a masterpiece. It’s a harmonious blend of creamy richness, savory depth, a hint of saltiness, a touch of sweetness, and just the right amount of smokiness. You’ll immediately notice the profound umami kick from quality Dijon mustard, perfectly complemented by a delicate whisper of smokey paprika. The brightness of apple cider vinegar cuts through the richness, providing a refreshing tang, while pure maple syrup balances everything with a natural sweetness. It’s incredibly well-rounded and surprisingly easy to prepare!
The magic happens in your blender. All you need to do is combine the pre-softened raw cashews with Dijon mustard, apple cider vinegar, water, maple syrup, and smoked paprika. Blend until the mixture transforms into a luxuriously smooth and creamy consistency. A quick seasoning with salt and pepper to taste, and your gourmet dressing is ready! This dressing isn’t just for salads; it makes an incredible dip, a fantastic spread for sandwiches, or a savory drizzle over roasted root vegetables. Prepare to be amazed by its versatility and depth of flavor.

As a general guideline, light-bodied white wines with crisp acidity and aromatic profiles tend to complement green vegetables, roasted vegetables, and fresh salads beautifully. For this particular Roasted Broccolini Salad, a Grüner Veltliner or a Sauvignon Blanc would be an exquisite choice. Their bright, often herbaceous notes and refreshing finishes can highlight the lemon and kale while cutting through the richness of the dressing and the roasted broccolini.

Ingredients
For the Salad:
- 4 bunches broccolini (about 1.5 lbs)
- 4 tbsp olive oil
- 2 bunches kale (preferably Lacinato or curly)
- 1 large lemon (for zest and juice)
- 1 tsp kosher salt (plus more for kale)
- 1/2 tsp black pepper (plus more for garnish)
- 20 dried apricots, chopped
- 1/3 cup diced red onion
- 1/3 cup sliced almonds, lightly toasted
For the Smokey Maple Mustard Dressing:
- 1 cup raw cashews
- 4 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1/2 tsp smoked paprika
- 2/3 cup water (or more for desired consistency)
- 1/2 tsp kosher salt (or to taste)
Instructions
-
Make the Dressing:
Begin by preparing the cashews. For the creamiest dressing, soak the raw cashews in water overnight. If you’re short on time, cover them with boiling hot water and let them sit for 20-30 minutes until significantly softened. Once softened, drain the water thoroughly.
Transfer the drained cashews to a high-speed blender. Add the Dijon mustard, apple cider vinegar, water, maple syrup, and smoked paprika. Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed. Season with salt and pepper to taste, adjusting sweetness or tanginess as desired. Set the dressing aside.
-
Roast the Broccolini:
Preheat your oven to 375°F (190°C). Prepare a large baking sheet, possibly lining it with parchment paper for easier cleanup.
Chop the broccolini into bite-sized pieces, ensuring uniform size for even cooking. Spread the broccolini in a single layer on the prepared baking sheet. Drizzle generously with olive oil and sprinkle with salt and pepper. Roast for 15-20 minutes, or until the broccolini is tender-crisp and beautifully charred around the edges. This charring is key for flavor! Once done, remove from the oven and set aside to cool slightly.
-
Assemble the Salad:
While the broccolini roasts, prepare your other salad components. First, zest the large lemon and set the zest aside; this will be used as a final garnish. Then, de-stem the kale and chop it into small, manageable pieces. I find that cutting the kale into thin ribbons (julienne) makes it more pleasant to eat and easier to massage.
Transfer the chopped kale to a large mixing bowl. Squeeze the juice from the zested lemon directly over the kale, adding a pinch of salt. Using clean hands, massage the kale for about 1 minute. You’ll notice the kale transform, becoming a brighter green and softening slightly—this crucial step breaks down the tough fibers, making it tender and more digestible.
To the massaged kale, add the diced red onions, chopped dried apricots, lightly toasted sliced almonds, and the warm roasted broccolini. Pour about 1/3 of the prepared Smokey Maple Mustard Dressing over the ingredients. Toss everything gently until well combined, ensuring all components are evenly coated.
Divide the salad evenly among four plates or serve in a large communal bowl. Drizzle with the remaining dressing for extra creaminess and flavor. Finish by sprinkling the reserved lemon zest over each serving, and add a final crack of black pepper if desired. Serve immediately and enjoy the delightful medley of flavors and textures!
Enhance Your Meal: Serving Suggestions & Variations
This Roasted Broccolini Salad is incredibly versatile and can be enjoyed in many ways. Serve it as a light and satisfying main course, or as a vibrant side dish to complement a heartier meal. For an extra boost of protein, consider adding roasted chickpeas, pan-seared tofu, or even grilled tempeh. For those who aren’t strictly vegan, grilled chicken or salmon would also pair wonderfully.
Feel free to customize this salad to your taste. Don’t have broccolini? Broccoli or cauliflower florets work perfectly. Not a fan of apricots? Dried cranberries, cherries, or even sun-dried tomatoes can offer a similar chewy sweetness. For extra crunch, experiment with different nuts or seeds like walnuts, pecans, or pumpkin seeds. You can also adjust the spice level of the dressing by adding a pinch of cayenne pepper or red pepper flakes if you like a little heat.
The Health Benefits of this Delicious Dish
Beyond its incredible taste, this salad is a nutritional powerhouse. Broccolini and kale are both rich in vitamins A, C, and K, as well as essential minerals and powerful antioxidants that support overall health and immunity. The lemon provides an extra dose of Vitamin C, while apricots contribute dietary fiber and iron. Cashews in the dressing offer healthy fats and plant-based protein, and almonds add heart-healthy fats, vitamin E, and magnesium. This entire dish is packed with fiber, promoting digestive health, and is naturally gluten-free and dairy-free, making it suitable for a wide range of dietary preferences. Eating well truly has never tasted this good!
