It’s a symphony of textures and tastes, a truly wholesome and delightful dish that will leave you feeling nourished and incredibly content. Forget bland plant-based meals; this recipe proves that healthy eating can be both easy and exceptionally delicious.

Why This Nourish Bowl Will Become a Staple in Your Kitchen
Beyond its undeniable deliciousness, this nourish bowl offers a perfect balance of macro and micronutrients, making it an ideal choice for anyone seeking a healthy, plant-based lifestyle. It’s packed with fiber, protein, and essential vitamins, all while being incredibly simple to prepare. Here’s why you’ll fall in love:
- Exceptional Flavor: The combination of sweet roasted potatoes, earthy lentils, and the zingy cashew sauce is simply irresistible.
- Highly Nutritious: A complete meal providing complex carbohydrates, plant-based protein, healthy fats, and a wealth of vitamins and minerals.
- Effortless Preparation: Most of the cooking happens hands-off, allowing you to relax while the magic unfolds.
- Incredibly Versatile: Easily customizable with your favorite greens, vegetables, and toppings.
- Meal Prep Friendly: Components can be cooked in advance, saving precious time during busy weekdays.
The Star Components: Roasted Sweet Potatoes
Let’s talk about those roasted sweet potatoes! Seasoned with aromatic cumin, earthy oregano, and smoky paprika, they transform into tender, golden bites of pure bliss. The sweet and savory flavor profile they bring to the bowl is a game-changer. Preparing them is straightforward: simply dice the potatoes, toss them with olive oil and the spice blend, and bake until they’re caramelized on the outside and wonderfully soft within. Roasting not only enhances their natural sweetness but also creates a delightful textural contrast against the soft rice and lentils.
Simplicity on the Stove: Rice and Lentils
While your sweet potatoes are roasting, the stove takes care of the other main components. Fluffy rice and perfectly cooked lentils come together with minimal effort. We’ll simmer the rice until it’s light and airy, while simultaneously cooking the lentils with a chunk of red onion and a bay leaf to infuse them with layers of savory depth. The beauty of this recipe lies in its hands-off approach. There’s no need for constant stirring or monitoring, freeing you up to prepare other elements or simply unwind for twenty minutes while these foundational ingredients cook to perfection. This ‘set it and forget it’ method makes healthy cooking a breeze, especially after a long day.
The Secret Weapon: Creamy Cashew Butter Sauce
And then there’s the sauce – a true culinary revelation! Referred to as “The One Minute Sauce,” this incredibly creamy cashew butter creation lives up to its name, coming together in less than sixty seconds. It’s rich, tangy, a little bit cheesy thanks to nutritional yeast, and provides the perfect luscious coating for every bite. This isn’t just a sauce for nourish bowls; its versatility means it’s fantastic drizzled over grain bowls, salads, tacos, and even as a spread for sandwiches. It’s dairy-free, oil-free, and utterly addictive!

Assembling Your Perfect Nourish Bowl
Once all your components are ready, the fun begins: assembly! Start by laying a foundation of warm, fluffy rice in your bowl. Next, spoon a generous helping of the seasoned lentils on top. Arrange the vibrant roasted sweet potatoes and a mound of freshly steamed kale (or your chosen green) artfully around the bowl. For an irresistible crunch and added healthy fats, sprinkle on some chopped walnuts. A scattering of fresh cilantro brightens the entire dish with its herbaceous notes. Finally, and most importantly, don’t just drizzle – smother it all with the creamy cashew butter sauce. The generous coating ties all the distinct flavors and textures together into one harmonious, deeply satisfying meal. Serve with a fresh lime wedge for an extra burst of zest!
Ingredient Focus: All About Lentils
Lentils are the unsung heroes of plant-based cuisine, offering an incredible source of protein, fiber, and iron. For this recipe, I prefer using dried, sprouted brown lentils, but nearly any variety will work beautifully. The key is to avoid split lentils, such as the split red lentils commonly used in Indian dal, as they tend to break down and become too soft for the desired texture in these bowls. Instead, opt for firm varieties like whole brown lentils, French green lentils (Puy lentils), or black lentils (Beluga lentils), which hold their shape well after cooking.
While canned lentils are a perfectly acceptable and convenient option, cooking them from dried allows you to infuse them with flavor during the simmering process, adding another layer of depth to your nourish bowl. This method not only enhances taste but is also often more cost-effective. Remember to adjust cooking times and liquid amounts based on the specific type of lentil you choose, as noted on the package instructions.
Greens & Veggies: Customize Your Bowl
While kale adds a fantastic nutritional boost and vibrant color, it’s absolutely no problem if you’re not a fan of kale! This nourish bowl is designed for flexibility. Feel free to swap it out for other leafy greens like spinach, Swiss chard, or even arugula for a peppery kick. You can also introduce other green vegetables such as tender broccoli florets, crisp green beans, or delicate bok choy. Each alternative brings its own unique flavor and texture profile, ensuring your bowl is always exactly to your liking. Don’t hesitate to experiment with what’s in season or what you have on hand – it’s all delicious!
Mastering Meal Prep: Make Ahead for Busy Weeks
One of the most appealing aspects of this nourish bowl is its incredible meal prep potential. The answer to “Can I make this ahead?” is a resounding 100% yes! I frequently prepare large batches of the rice, lentils, roasted sweet potatoes, and the cashew butter sauce at the beginning of the week. This strategy dramatically cuts down on daily cooking time, making healthy eating accessible even on the busiest days. Stored properly in airtight containers in the refrigerator, these components stay fresh for 3-4 days, ready to be assembled into satisfying meals whenever hunger strikes.
To keep things exciting, I often vary the fresh vegetables and even the sauce throughout the week. One day might feature steamed kale, while another might call for roasted Brussels sprouts. For a quick work-from-home lunch, simply tossing together a handful of fresh arugula with the prepped ingredients is a fantastic option. For sauce variations, consider swapping in a dollop of hummus, a savory Bitchin’ Sauce, or a zesty Trader Joe’s Zhoug Sauce to keep your taste buds intrigued. The beauty of this bowl lies in its adaptability, ensuring you never get tired of your healthy meal prep!

- 1/4 large red onion
- 2 dried bay leaves
- 1/4 tsp kosher salt
For the Sweet Potatoes
- 5.5 cups diced sweet potatoes (about 2 medium potatoes)
- 2 tbsp olive oil
- 1.5 tsp paprika
- 1.5 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
For the Greens
- 1 bunch kale
For Serving
- 1/3 cup chopped walnuts
- 1/3 cup chopped cilantro
- 1 batch The One Minute Sauce (recipe below)
- Lime wedges
Instructions
Preparation
- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a non-stick mat for easy cleanup.
- Cook the Rice: Rinse the rice thoroughly. Place it in a medium pot with a tight-fitting lid. Add 1.75 cups of water or vegetable broth (if using broth, omit the salt). Bring to a boil, then reduce the heat to low, cover, and let it steam for 20 minutes, or until all the water is absorbed and the rice is tender and fluffy.
- Cook the Lentils: Rinse the lentils. Transfer them to another pot with a lid. Add 2 cups of water, the quartered red onion, bay leaves, and 1/4 tsp salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until tender. Note: Different lentil types may vary in cooking time; always check package instructions.
- Roast the Sweet Potatoes: While the rice and lentils are cooking, peel and dice the sweet potatoes into 1-inch cubes. Spread them evenly on the prepared baking sheet. Drizzle with olive oil, then sprinkle with paprika, dried oregano, ground cumin, 1/2 tsp salt, and black pepper. Toss to ensure all potatoes are well coated. Bake for 15-20 minutes, or until fork-tender and slightly caramelized.
- Prepare Garnishes & Kale: Chop the walnuts and cilantro; set aside. Remove the tough stems from the kale and roughly chop the leaves. Steam the kale for 3-5 minutes until it turns bright green and softens. Season lightly with salt and set aside. Tip: For extra flavor, you can sauté the kale with a little olive oil and minced garlic.
Assemble and Serve
- Fluff the cooked rice with a fork and divide it among four serving bowls.
- Drain the cooked lentils, discarding the red onion and bay leaves. Spoon a generous amount of lentils over the rice in each bowl.
- Artfully arrange the roasted sweet potatoes and steamed kale on top of the lentils.
- Sprinkle each bowl with chopped walnuts for crunch and fresh cilantro for brightness.
- Generously smother (or drizzle!) with The One Minute Sauce (recipe below).
- Serve immediately with a fresh lime wedge on the side. Enjoy your incredibly delicious and nourishing meal!
The One Minute Sauce
By: Nicole Vranjican
A creamy vegan sauce that tastes delicious on just about everything! It’s a little cheesy, a little zesty, and ever so slightly smoky and best of all, there’s no oil, no dairy, no sugar, no whisking and no blending! Just add a few simple ingredients to a container and mix it up!
Prep: 1 min | Total: 1 min | Servings: 4
Ingredients
- 1/4 cup raw cashew butter or light tahini (ensure no sugar or oil added)
- 1/2 of a large lime (about 1 tbsp of juice)
- 4-5 tbsp warm water
- 2 tsp nutritional yeast
- 1/2 tsp garlic granules or powder
- 1/2 tsp onion granules
- 1/4 tsp smoked paprika
- 1/4 tsp kosher salt (such as Morton’s)
- 5 dashes cayenne pepper
- 1/2 tsp maple syrup (optional, if using tahini; not necessary for cashew butter)
Instructions
Make the Base
- In a small bowl, combine the cashew butter (or tahini), lime juice, and 1 tablespoon of warm water. Stir well. The mixture will initially thicken and may appear lumpy, which is completely normal. Continue stirring until the water is fully absorbed and the lumps begin to smooth out.
- Add another 2 tablespoons of warm water and stir vigorously until the sauce is completely smooth and slightly lighter in color.
- Continue adding warm water, one tablespoon at a time, stirring thoroughly after each addition, until the sauce reaches your desired creamy consistency. Important: Depending on the brand of cashew butter or tahini, you may need more or less water. Adjust gradually until it looks perfect to you. Tip: Warm water blends much more easily than cold water.
Spice It Up!
- Once the base is smooth, add the nutritional yeast, garlic granules, onion granules, smoked paprika, kosher salt, cayenne, and optional maple syrup (if using tahini). Mix until all ingredients are fully incorporated and the sauce is smooth and uniform in color.
- Taste and adjust seasonings as needed. You might want more salt, a pinch more spice, or a bit more lime juice for extra zest.
Serve
- This versatile sauce is perfect drizzled generously over your vegan nourish bowls, tacos, potato wedges, or as a flavorful spread on sandwiches and veggie burgers. It’s excellent spooned over roasted vegetables and avocado, too. Enjoy its creamy, zesty goodness!
Tip: Salt Content
Some brands of tahini come pre-salted. This recipe assumes a moderately salted tahini or unsalted cashew butter. If you’re using an unsalted tahini or cashew butter, you may need to add additional salt to taste to achieve the perfect flavor balance.
Notes: This sauce keeps wonderfully in the fridge for up to two weeks. It will naturally thicken as it cools and rests, so simply stir in an extra splash of warm water when serving to restore its original smooth consistency.
