Amazing Homemade Veggie Burgers

The BEST homemade veggie burgers! This recipe is completely plant-based, meatless, and easy to make. Protein-packed lentils, beets, and walnuts create a hearty meat-like texture and savory seasonings like garlic, smoked paprika, and a sprinkle of cumin take these burgers to the next level of deliciousness!

Ingredients

  • 3 cups raw shredded beets, about 2 large red beets
  • 2 cloves garlic, minced
  • 3/4 tsp sea salt
  • 5 tbsp olive oil, divided
  • 1 tsp smoked paprika, smoked is key for flavor
  • 1 tsp ground cumin
  • 1/2 cup plain bread crumbs
  • 1/2 cup walnut halves, measured whole, then finely chopped
  • 1 cup cooked black or brown lentils, I use canned, rinsed and drained
  • 2 tsp light miso paste, chickpea miso works great
  • 3 tsp vegan Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tbsp corn starch
  • 1/3 cup chopped parsley
  • 2 tbsp chopped scallions
  • 2 tbsp water
  • Salt and fresh black pepper to taste

Instructions

Prep

  1. Finely chop or pulse the walnuts in a food processor until they resemble coarse crumbs, then set aside. If using canned lentils, rinse them thoroughly and drain well. Next, finely chop the garlic, parsley, and scallions, and set these aside as well.
  2. Scrub two large red beets clean. Trim off only the very bottom root end, leaving the stem end intact – this makes it much easier to handle the beet while grating.
  3. Using the side of a box grater with the largest holes, grate the beets. Measure out exactly 3 cups of the shredded beets.

Cook the Beet Base

  1. Transfer the shredded beets to a large frying pan. Add 2 tablespoons of olive oil and 3/4 teaspoon of sea salt.
  2. Sauté the beets over medium-high heat for about 2 minutes. Then, add the chopped garlic, ground cumin, and smoked paprika. Continue to cook for another 4-5 minutes, stirring occasionally, until the beets are slightly softened and most of their moisture has evaporated or been absorbed. It’s important not to overcook them, as they can become too soft and mushy.
  3. Tip: If you notice excess liquid accumulating in the pan, quickly transfer the sautéed beets to a fine-mesh colander and press gently to remove any remaining moisture. This step is crucial for preventing mushy burgers.

Mix and Form Patties

  1. In a large mixing bowl, combine the cooked beets with 1/2 cup of bread crumbs, 1 cup of cooked lentils, the finely chopped walnuts, 2 teaspoons of miso paste, 3 teaspoons of vegan Worcestershire sauce, 1 tablespoon of tomato paste, 1/3 cup of chopped parsley, and 2 tablespoons of chopped scallions.
  2. Add 1 tablespoon of cornstarch and 5-6 generous grinds of fresh black pepper. Mix all ingredients until they are thoroughly combined.
  3. Transfer about one-third of this mixture into a food processor. Add the remaining 1 tablespoon of olive oil and 2 tablespoons of water. Blend until a slightly chunky paste forms. Be careful not to over-blend; you want some texture, not a perfectly smooth hummus-like consistency. Stop blending before it reaches that point.
  4. Add the pureed mixture back into the large mixing bowl with the rest of the burger mixture. Mix well again to ensure everything is evenly distributed. Then, divide the mixture into either 4 large or 6 regular-sized burger patties.
  5. Tip: When forming the patties, press them together firmly enough so they hold their shape securely, but avoid compacting them too tightly. Overly compacted patties can become dense and mushy when cooked.

Cook Them Up! 🍔

  1. Add 2 tablespoons of olive oil to a large frying pan and heat it to medium-high (a 6-7 setting on most stoves). Carefully place the burger patties into the hot pan.
  2. Pan-fry the burgers for 4-5 minutes on each side until a nice, crispy crust forms. Flip them once to cook the other side.
  3. After pan-frying, transfer the burgers to a baking sheet. Bake them in a preheated oven at 400°F (200°C) for 30-35 minutes, or until they are firm to the touch and heated through. This baking step helps them become perfectly firm and prevents crumbling.

Lentils: I typically use canned black or brown lentils for convenience in this recipe. While green lentils were used in some of the photos (because that’s what I had on hand), black or brown varieties are less visible in the final burger mix, which I personally prefer. Flavor-wise, the type of lentil doesn’t significantly alter the taste, but it’s crucial to **avoid using red or split lentils**, as they tend to become too mushy and can cause the burgers to fall apart.

If desired, you can **skip the initial pan-frying step** and bake these burgers directly. To do so, place them on a baking sheet and bake at 400°F (200°C) for about 30 minutes, or until they are firm and have a crispy top. While this method works, I highly recommend pan-frying them first as it creates a superior texture and a more flavorful crust. However, feel free to adapt the cooking method to your preference!

For a gluten-free option, ensure your bread crumbs are certified gluten-free. The rest of the ingredients are naturally gluten-free.

Leftover burgers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 3 months. To reheat, thaw if frozen, then warm in a pan or oven until heated through.
