Essential Ingredients for Your Vegan Fried Rice Adventure

While this recipe encourages improvisation, certain base ingredients lay the foundation for a truly exceptional fried rice experience. Think of these as your building blocks:

The Hearty Base

  • Day-Old Cooked Rice: This is arguably the most crucial ingredient for perfect fried rice. Day-old rice is drier, preventing a soggy dish and allowing for individual grains to crisp up beautifully in the pan. While white rice (like jasmine or basmati) is traditional, brown rice or even other grains like fluffy quinoa work wonderfully, offering a delightful texture and added nutritional benefits.
  • Flavorful Root Vegetables (Carrots, Onions, Garlic): These aromatics create the essential flavor base for your fried rice. Sautéing chopped carrots and onions until tender and slightly caramelized builds a sweet and savory foundation. Minced garlic, added towards the end of the sautéing process, infuses the entire dish with its irresistible aroma and taste.
  • Crunchy Elements (Toasted Cashews, Peanuts, or Sesame Seeds): The textural contrast is key in fried rice. Toasted cashews, with their rich, buttery flavor, or crunchy peanuts, provide a fantastic counterpoint to the softer rice and vegetables. For a lighter crunch and nutty aroma, toasted sesame seeds are an excellent choice. This not only adds an appealing texture but also makes the meal more hearty and satisfying.

Your Favorite Add-Ins (Where the “Throw-It-All-In” Magic Happens)

This is where you truly unleash your creativity and empty your fridge!

  • Bell Peppers: Any color of bell pepper—red, yellow, orange, or green—will work beautifully. Their sweet, vibrant flavor and crisp texture add a refreshing pop that brightens the entire dish and takes it to the next level.
  • Convenient Frozen Vegetables (Peas, Corn, Cauliflower): Don’t underestimate the power of frozen veggies! They’re pre-chopped, retain their nutrients, and are incredibly convenient. Peas, corn, and cauliflower florets (or even cauliflower rice for an extra veggie boost) bulk up the dish, ensuring every bite is flavorful and delicious. They also cook quickly, making them ideal for a speedy meal.
  • Whatever Leftover Cooked Veggies You Have: This is the ultimate hack for food waste reduction. Sautéed mushrooms from last night’s dinner, roasted broccoli, grilled asparagus, eggplant, zucchini, yellow squash, or even roasted sweet potatoes can find a delicious new life in this fried rice. The possibilities are truly endless – just throw them in!

The Star of the Show: Maple Sesame Sriracha Sauce

This perfectly balanced sauce is what truly ties all the diverse ingredients together, creating a harmonious and addictive flavor profile:

  • Toasted Sesame Oil: Essential for that authentic, deep, nutty aroma and flavor characteristic of Asian cuisine. Look for the small bottles labeled “toasted” sesame oil, as its unctuous richness is unmatched.
  • Sriracha: This beloved hot sauce adds a fantastic kick and depth. We recommend starting with 1-2 teaspoons for a mild warmth. If you love heat, feel free to add more to taste; if you prefer it less spicy, a smaller amount will still contribute to the overall complexity without overpowering the dish.
  • Low-Sodium Tamari or Low-Sodium Soy Sauce: Provides the crucial umami and salty base. Using a low-sodium version allows you to control the saltiness of the dish more effectively, especially if your other ingredients (like seasoning blends) also contain salt.
  • Maple Syrup: Don’t worry, this doesn’t make the dish overly sweet. Instead, it adds a subtle hint of natural sweetness that beautifully balances the salty, savory, and spicy notes. It also wonderfully complements the natural sugars found in vegetables like onions, carrots, corn, and green peas, enhancing their inherent flavors.

How to Make The Ultimate ‘Throw-It-All-In’ Vegan Fried Rice

This recipe is designed for efficiency and maximum flavor, making it a perfect choice for any night of the week.

“Throw it all in” Vegan Fried Rice

By: Nicole Vranjican

A veggie-packed fried rice recipe that you can make with whatever veggies and leftovers you have in the fridge! Toasted cashews and leftover rice are lightly pan-fried with a mix of fresh and frozen veggies like carrots, onions, peas, and corn and then it’s all tossed together with my savory homemade Maple Sesame Sriracha Sauce.

  • Prep Time: 10 mins
  • Cook Time: 10 mins
  • Total Time: 20 mins
  • Servings: 4 Servings

Ingredients

Main Fried Rice Components

  • 1/2 cup raw cashews
  • 1 tbsp coconut oil
  • 2 large carrots, chopped
  • 1/2 large yellow onion, chopped
  • 2 large cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1/2 cup frozen corn
  • 1/2 cup frozen peas
  • 1 cup frozen shelled edamame
  • 1.5 cups cooked rice, leftover works best*
  • 1 cup frozen cauliflower rice

Seasonings & Sauce

  • 1 tbsp Everything But the Bagel seasoning, optional but delicious! (I used a salt-free version, see notes below)
  • 2 tbsp low-sodium tamari or soy sauce
  • 2-3 tsp toasted sesame oil
  • 2-3 tsp Sriracha, plus more to taste
  • 2 tsp maple syrup
  • Kosher salt and black pepper to taste

Instructions

1. Toast the Cashews

  1. In a large frying pan or wok set to medium-high heat, add the raw cashews. Cook for 2-3 minutes, stirring frequently, until they are lightly toasted and achieve a beautiful golden brown color. Be careful not to burn them. Once toasted, remove the cashews from the pan and set them aside.

2. Prepare Your Veggies

  1. While the pan cools slightly, finely chop the carrots, yellow onion, and bell pepper. Mince the garlic cloves and set all prepped vegetables aside.
  2. Place the frozen shelled edamame in a microwave-safe bowl. Cover it completely with boiling water, stir, and let it sit for a few minutes to thaw. Drain well before adding to the fried rice.

3. Cook the Base Vegetables

  1. Using the same frying pan (no need to clean it!), add the coconut oil. Once melted, add the chopped carrots and onions. Cook on medium-high heat for 2-3 minutes, stirring often, until they start to soften.
  2. Next, add the minced garlic and chopped bell pepper to the pan. Season with a pinch of kosher salt and black pepper. Continue to cook for another 2 minutes, allowing the flavors to meld and the vegetables to become tender-crisp.

4. Combine with Rice and Sauce

  1. Season the cooking vegetables with Everything But the Bagel seasoning (if using). Then, add the frozen corn, frozen peas, cooked day-old rice, and frozen cauliflower rice to the pan. If you have any other leftover cooked vegetables, now is the perfect time to toss them in!
  2. Pour in the low-sodium tamari, toasted sesame oil, Sriracha, and maple syrup. Stir everything together thoroughly, ensuring the sauce coats all the ingredients evenly. Continue to cook for another 3-5 minutes, stirring occasionally, allowing the rice to heat through and lightly crisp up.
  3. Taste the fried rice and adjust seasonings as needed. You might want to add more Sriracha for extra heat, more tamari for a deeper umami, or additional salt and pepper.

5. Serve and Enjoy!

  1. Once heated through and perfectly seasoned, divide the vegan fried rice among serving bowls. Top each serving generously with the reserved toasted cashews and the thawed, drained edamame. Serve immediately and savor every delicious bite!

Notes

When using Everything But the Bagel seasoning, be mindful of its salt content. Some brands, like Trader Joe’s, contain flaky salt, which is delicious but can make your dish too salty if you use the full tablespoon. If your seasoning contains salt, start with a generous sprinkle (about 1 teaspoon) and add more to taste later. If using a salt-free version, the full tablespoon should be fine, but always taste and adjust to your preference.

Tips for the Best Vegan Fried Rice Every Time

Achieving restaurant-quality fried rice at home is simpler than you think with a few key techniques:

  • Use Day-Old Rice: This is non-negotiable for superior texture. Freshly cooked rice is too moist and will result in a sticky, clumpy, and soggy dish. Cook your rice the day before and let it cool completely, even refrigerating it overnight, to dry it out.
  • High Heat is Your Friend: Fried rice needs to be cooked quickly over high heat to achieve that signature “wok hei” (breath of the wok) and slightly crispy texture. Ensure your pan is hot before adding ingredients.
  • Don’t Overcrowd the Pan: Cook in batches if necessary. Overcrowding lowers the pan’s temperature, steaming the ingredients instead of frying them, leading to a watery and unappetizing result.
  • Chop Evenly: Uniformly chopped vegetables cook at the same rate, ensuring everything is perfectly tender-crisp.
  • Prep Everything Ahead: “Mise en place” (everything in its place) is crucial for stir-fries. Have all your vegetables chopped, sauce mixed, and rice ready before you even turn on the stove. This ensures a smooth and quick cooking process.
  • Adjust Seasoning to Taste: The beauty of homemade food is tailoring it to your palate. Always taste the fried rice before serving and adjust the Sriracha, tamari, salt, or maple syrup as needed.

Elevate Your Meal: Serving Suggestions and Pairings

This “Throw-It-All-In” Vegan Fried Rice is a complete meal on its own, but it also pairs wonderfully with a variety of additions to make it even more satisfying and exciting:

  • Shelled Edamame: Not just a garnish, but a fantastic source of plant-based protein and fiber, adding a delightful green color and fresh, slightly sweet flavor.
  • Crispy Vegan Tofu: Cubed and pan-fried or air-fried until golden and crispy, tofu is a perfect protein boost that soaks up the sauce beautifully.
  • Store-Bought Vegan “Chicken” or Orange “Chick’n”: For an even quicker protein option, many brands offer delicious vegan chicken alternatives that can be tossed in or served on top.
  • Crispy Chickpeas: Roasted or pan-fried chickpeas seasoned with a touch of soy sauce and garlic powder provide a wonderful crunch and extra protein.
  • A Bright Green Salad: A simple side salad with cool, crunchy, raw ingredients like cucumbers, shredded carrots, and a light vinaigrette offers a refreshing contrast to the savory, warm fried rice.
  • Creamy Avocado Slices: The rich, creamy texture and healthy fats of avocado add a luxurious touch and a lovely counterpoint to the vibrant flavors of the dish.
  • Fresh Herbs: Garnish with chopped fresh cilantro, scallions, or chives for an extra burst of freshness and color.

Frequently Asked Questions About Vegan Fried Rice

Q: Can I make this recipe gluten-free?

A: Absolutely! Simply ensure you use certified gluten-free tamari instead of regular soy sauce, and double-check that your Everything But the Bagel seasoning (if using) is also gluten-free. All other ingredients are naturally gluten-free.

Q: What kind of rice is best for fried rice?

A: Day-old medium to long-grain white rice, such as jasmine or basmati, is ideal. Its lower moisture content helps achieve individual, slightly crispy grains. However, day-old brown rice or even quinoa can be used for a healthier twist, though the texture will be slightly different.

Q: Can I make this oil-free?

A: While oil is traditionally used for flavor and to prevent sticking, you can try sautéing the vegetables in a splash of vegetable broth or water. For toasting cashews, dry-roast them in a non-stick pan. Note that the texture and richness may vary slightly without oil.

Q: How long can I store leftover vegan fried rice?

A: Leftover fried rice can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a pan with a little water or oil, or in the microwave, until thoroughly warm.

Q: What if I don’t have Sriracha?

A: If you don’t have Sriracha, you can substitute it with another chili garlic sauce, a pinch of red pepper flakes, or even a small amount of hot sauce like gochujang or sambal oelek. Adjust the quantity based on your preferred spice level.

Q: Can I add fresh ginger?

A: Yes, absolutely! Freshly grated or minced ginger is a fantastic addition to the aromatic base. Add it along with the garlic for an extra layer of warm, pungent flavor.
