The Ultimate Potato Salad Recipe: A Crowd-Pleasing Staple for Every Occasion
There’s an undeniable magic to a perfectly crafted potato salad. It’s a cornerstone of countless gatherings, from sun-drenched picnics and backyard barbecues to festive holiday dinners. While many potato salad recipes exist, I’ve dedicated myself to elevating this humble dish to extraordinary new heights. The result is what I genuinely believe to be the ultimate potato salad – a recipe designed to be simply the best, bursting with flavor and delightful textures.

Crafting the Perfect Potato Salad: A Seasonal Delight
As the weather warms and the days grow longer, especially here in Australia, thoughts naturally turn to refreshing spring and summer cuisine. My hometown of Melbourne truly comes alive with the changing seasons, drawing people outdoors to enjoy one of Melburnites’ favorite pastimes: flocking to the city’s beautiful parks and gardens. With picnics firmly on the agenda, the question arises: what dish guarantees universal smiles and satisfaction? Without a doubt, it’s potato salad. But not just any potato salad. This recipe takes the classic and enhances it with carefully chosen fixings, promising an unforgettable taste experience that will make it your go-to side dish.

Selecting the Best Potatoes for an Irresistible Texture
The foundation of any outstanding potato salad lies in the potatoes themselves. The type of spud you choose significantly impacts the final texture and overall success of your dish. For a classic, creamy potato salad, you’ll want to opt for high-starch potato varieties that cook up tenderly, absorb flavors beautifully, and yet still hold their shape without becoming overly mushy. Here are some of the top contenders that will elevate your potato salad from good to gourmet:
- Yukon Gold Potatoes: These beloved potatoes are a potato salad champion. Their naturally buttery, yellow flesh and thin, smooth skin make them incredibly appealing. More importantly, their moderate to high starch content ensures a wonderfully creamy, tender interior that effortlessly soaks up the dressing’s flavors, resulting in an irresistibly rich and satisfying salad.
- Russet Potatoes: Instantly recognizable by their rough, brown skin, Russet potatoes are another excellent choice for potato salad. Their high starch content means they become fluffy and soft when cooked, contributing a beautiful, crumbly texture that marries perfectly with a creamy dressing. They also maintain their form well, preventing a soupy outcome.
- Idaho Potatoes: Similar to Russets, Idaho potatoes offer a light, fluffy texture and a mild flavor profile. This makes them ideal for absorbing the full spectrum of your potato salad dressing without becoming waterlogged or losing their distinct potato character. They’re reliable and deliver consistent results.
- Baby Dutch or Cocktail Potatoes: For this specific recipe, I recommend seeking out small, young potatoes like baby Dutch or cocktail varieties. Their bite-sized nature means less chopping, and their delicate skins can often be left on, adding a rustic touch and extra nutrients. They cook quickly and offer a delightful tenderness.
It’s crucial to steer clear of waxy potatoes, such as red or new potatoes, for this style of salad. While delicious in other applications, their low starch content means they tend to remain firm and less absorbent, preventing you from achieving that coveted creamy, melt-in-your-mouth texture that defines the best potato salads. Stick with high-starch varieties for truly superior results.

The Art of Boiling and Cooling Potatoes for Optimal Texture
Achieving the perfect texture for your potato salad goes beyond just choosing the right potatoes; it’s equally about how you prepare them. Proper boiling and cooling techniques are paramount to ensuring your potatoes are tender, flavorful, and ready to flawlessly integrate with your dressing. Follow these steps for best results:
- Start with Cold Water: Always begin by placing your potatoes in a large pot of cold water. This allows the potatoes to heat up gradually with the water, ensuring they cook evenly from the outside in. Starting with hot water can cause the exterior to overcook and break down before the interior is tender, leading to an inconsistent texture and potentially overly starchy results.
- Boil Until Tender: Bring the water to a rolling boil, then reduce the heat to a gentle simmer. Continue cooking until the potatoes are easily pierced with a fork or skewer. Be careful not to overcook them, as this can lead to a mushy salad. A firm but tender texture is what you’re aiming for.
- Steam Dry for Flavor Absorption: Once cooked to perfection, drain the potatoes thoroughly in a colander. Crucially, cover the colander with a clean kitchen towel for a few minutes. This allows the residual heat to steam dry the potatoes, helping to evaporate excess moisture. Removing moisture is key; drier potatoes will better absorb the dressing, resulting in a more concentrated flavor and preventing a watery salad.
- Dress While Still Warm: This is a secret weapon for deeply flavorful potato salad. Assemble your potato salad while the potatoes are still warm, but not piping hot. Warm potatoes are more porous and receptive, allowing them to absorb the dressing’s flavors much more effectively than cold potatoes. This enhances flavor penetration, creating a more cohesive and undeniably delicious salad that truly sings with every bite.
By meticulously following these preparation steps, you’ll lay the perfect foundation for a potato salad that is not only perfectly cooked but also primed to soak up all the wonderful, nuanced flavors of your homemade dressing, guaranteeing a delightful culinary experience.

The Surprising Star: Hard-Boiled Eggs for Added Richness
I understand that the inclusion of hard-boiled eggs might raise an eyebrow for some, especially potato salad purists who prefer a simpler composition. Some might even be tempted to skip ahead, but I implore you to hear me out – hard-boiled eggs are a game-changer in this recipe! They contribute an incredible depth of flavor and a lovely, creamy texture that beautifully complements the potatoes and other ingredients. Far from being overpowering, the eggs subtly enrich the salad, adding a satisfying dimension that is truly worth the effort.
For this recipe, I specifically advocate for “eight-minute eggs.” This cooking time results in a yolk that is perfectly jammy – soft and custardy, yet firm enough to hold its shape when chopped. This texture is ideal for a salad, providing a luxurious mouthfeel without being too runny or crumbly. I’ve detailed how to achieve these perfect eight-minute eggs in my Caesar salad recipe and again with my egg salad. The slightly gooey yolk blends wonderfully into the dressing, enhancing its creaminess and adding a subtle richness that elevates the entire dish. Don’t knock it until you’ve tried it – these eggs might just become your new favorite potato salad secret ingredient!

Everything Goes Better with Bacon: A Salty, Savory Crunch
It’s a culinary adage that has transcended mere saying to become a universal truth: “everything goes better with bacon.” And truthfully, it really does! The incomparable saltiness, the smoky undertones, and the undeniable savoriness of crispy bacon have a magical way of enhancing almost any dish it graces. This potato salad recipe is absolutely no exception to that rule; in fact, it thrives on it! The addition of streaky, perfectly crispy bacon introduces a crucial textural contrast and a burst of rich, umami flavor that cuts through the creaminess of the potatoes and dressing. Each bite is a delightful interplay of soft potatoes and crunchy, irresistible bacon – too delicious for words!
To achieve the best results, ensure your bacon is cooked to a perfect crisp. Lay the streaky bacon in a cold pan and gradually bring the heat up, allowing the fat to render slowly and evenly. This method ensures maximum crispiness without burning. Once golden brown and crunchy, drain off any excess fat and allow it to cool slightly before crumbling or chopping it into small pieces. These golden shards of flavor will be generously sprinkled over your potato salad just before serving, guaranteeing that savory crunch in every forkful.
Herbs, Herbs, Herbs! Brightening the Flavor Profile
While the rich, creamy elements form the backbone of this exceptional potato salad, it would be incomplete without the vibrant counterpoint of fresh, soft herbs. These aromatic additions not only introduce a beautiful splash of color but, more importantly, infuse the salad with a much-needed brightness and lightness. For this particular recipe, I’ve chosen a dynamic duo of quintessential summery herbs: dill and tarragon.
- Dill: Known for its feathery fronds and distinctly fresh, slightly tangy flavor, dill is a natural partner for potatoes and creamy dressings. It imparts a refreshing, almost anise-like note that prevents the salad from feeling heavy, adding a lively zest that perfectly complements the savory components.
- Tarragon: This sophisticated herb offers a unique, slightly sweet, and peppery flavor with subtle licorice undertones. Tarragon adds an elegant complexity and a hint of French-inspired culinary flair, elevating the potato salad beyond the ordinary. Its delicate aroma pairs wonderfully with the richness of the eggs and bacon.
Finely chopping these herbs releases their essential oils, allowing their fresh flavors to meld seamlessly throughout the salad. The combination of dill and tarragon provides a wonderful herbaceous lift, making this potato salad incredibly refreshing and utterly perfect for any picnic, BBQ, or gathering where a bright, flavorful side is desired. Don’t underestimate the power of fresh herbs to transform your dish!

The Secret to the Best Potato Salad: An Unforgettable Dressing
It’s an unwritten rule in the world of salads: while the ingredients are important, the dressing is truly the star that brings everything together. You simply cannot achieve a truly great salad without an equally exceptional dressing. For this ultimate potato salad, the dressing is all about delivering a powerful punch of umami and savoriness, combined with a delightful tang that awakens the palate. The secret lies in two key ingredients: Dijon mustard and gherkins – and crucially, not just the gherkins themselves, but their flavorful juice!
- Mayonnaise and Sour Cream Base: Our dressing starts with a balanced blend of creamy mayonnaise and tangy sour cream. This combination is intentional; the sour cream cuts through the richness of the mayonnaise, resulting in a lighter, less greasy dressing. It also adds a wonderful tanginess and a desirable mouthfeel, ensuring the dressing is perfectly creamy without being overly heavy.
- Dijon Mustard: A spoonful of Dijon mustard contributes a sophisticated, zesty, and slightly pungent flavor that provides an essential layer of umami. It binds the flavors together and offers a subtle kick that elevates the entire dressing.
- Gherkin/Pickle Juice and Chopped Gherkins: This is where the magic truly happens! The gherkin juice is a powerhouse of flavor – it’s salty, sour, and packed with a complex tang that is absolutely vital to the dressing’s profile. Do not skip this ingredient! Finely chopped gherkins (or pickles) add a textural crunch and bursts of briny flavor. Even for those who claim to be “pickle haters,” I urge you to reconsider. The strong, tangy flavor of the gherkin juice and the finely chopped pieces blend seamlessly into the sauce, becoming an integral part of its robust and balanced taste, rather than an isolated flavor. It provides that essential bright acidity that makes the salad sing.
Whisked together, these ingredients create a dressing that is rich, tangy, savory, and incredibly flavorful, perfectly coating every piece of potato and ingredient. It’s the dressing that transforms a simple potato salad into an unforgettable culinary experience.

The Importance of Balance: Getting the Flavors Just Right
Crafting a truly memorable potato salad is an exercise in culinary balance. It’s about harmonizing the various components – the earthy potatoes, the rich dressing, and all the delightful add-ins – to create a symphony of flavors and textures that dance on your palate. Achieving this perfect equilibrium ensures that every single bite is as delightful and satisfying as the last. Here are some essential tips to master this delicate art:
- Embrace a Variety of Flavors: A truly exceptional potato salad should be a tapestry of tastes, incorporating salty, sweet, tangy, and savory elements. Ingredients like the briny pickle juice, the pungent Dijon mustard, and even a hint of sweetness from a touch of sugar or sweet relish (if you prefer, though our dressing is already well-balanced) all contribute depth and complexity. These layers prevent the salad from tasting flat or one-dimensional.
- Thoughtful Add-Ins are Key: While I often advocate for simplicity in cooking, there are instances where more is, indeed, more. And potato salad is one of them! While a plain potato salad can be lovely, I wholeheartedly believe in packing mine full of carefully selected add-ins. This includes the jammy hard-boiled eggs, which lend creaminess and richness; the crispy, savory bacon, providing that essential textural crunch and smoky flavor; and, of course, a generous abundance of fresh herbs like dill and tarragon, offering bursts of bright, fresh notes. These additions don’t just fill out the salad; they actively enhance its flavor profile and textural appeal. Consider adding finely diced celery for extra crunch, or a touch of finely minced red bell pepper for a subtle sweetness and color.
- Taste as You Go, Adjust as Needed: This is perhaps the most critical tip for any cook. The only way to ensure your potato salad reaches its full potential is to continuously taste it throughout the preparation process. As you mix the dressing, taste it. After you’ve combined the dressing with the potatoes and add-ins, taste again. Don’t be afraid to adjust the seasonings – a pinch more salt, a grind of fresh pepper, a squeeze of lemon juice, or a little more pickle juice can make all the difference in achieving that perfect, harmonious balance of flavors and textures. Your palate is your best guide!
By diligently paying attention to these details and trusting your taste buds, you will undoubtedly create a potato salad that is not only profoundly delicious but also impeccably balanced in every single, satisfying bite.

Storage and Safety: Keeping Your Potato Salad Fresh and Delicious
Once you’ve lovingly prepared your delectable potato salad, proper storage is crucial to ensure it remains fresh, safe, and maintains its exquisite taste and texture for as long as possible. Given its creamy dressing, attention to temperature and airtight conditions is particularly important. Here are some essential tips to keep your homemade potato salad at its best:
- Immediate Refrigeration is Key: Potato salad, especially those made with mayonnaise or sour cream, should not be left at room temperature for extended periods. As soon as you’re done serving (or if you’re making it ahead), promptly transfer any leftovers to the refrigerator. Maintain a consistent refrigerator temperature of 40°F (4°C) or below to inhibit bacterial growth.
- Use Airtight Containers: To prevent the salad from drying out, absorbing other odors from the fridge, or spoiling prematurely, always store it in airtight containers. This helps to preserve its moisture content and freshness, keeping those vibrant flavors locked in.
- Serve Chilled for Best Results: While you can dress warm potatoes for maximum flavor absorption, potato salad is traditionally served chilled. Chilling allows the flavors to meld and deepen further, resulting in a more cohesive and refreshing taste experience. Serve it straight from the refrigerator for the best taste and texture.
- Consume Within a Few Days: For optimal flavor and food safety, it’s best to enjoy your homemade potato salad within 3 to 4 days of making it. While freezing potato salad with a mayonnaise-based dressing is generally not recommended as it can alter the texture (mayonnaise tends to separate upon thawing), if you anticipate not finishing it within the recommended timeframe, you might consider making a smaller batch or consuming it promptly.
By diligently following these storage guidelines, you’ll ensure that your incredible potato salad remains as fresh, delicious, and safe to eat as it was on the day you made it. Savor every last bite of your homemade culinary masterpiece!

Ingredients
- 1.5 kg baby Dutch or cocktail potatoes
- 4 eggs, fridge cold
- 250 g streaky bacon
- 1 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/2 lemon (for juice)
- 1/4 cup gherkin or pickle juice
- 40 g gherkins or pickles, finely chopped
- 1/2 red onion, finely diced
- 1/2 cup dill, finely chopped
- 2 tbsp tarragon, finely chopped
- Sea salt, to taste
- Cracked pepper, to taste
Instructions
- Place the potatoes and 2 tbsp of fine sea salt into a pot and cover with cold water. Bring the water to a boil, then cook the potatoes for 15 minutes or until they are tender enough to be poked with a skewer. Drain the potatoes into a colander, then cover with a tea towel to allow the potatoes to slightly steam dry. Set aside while you prepare the rest of the salad.
- Bring another pot of water to a boil. On a medium heat, boil the eggs for 8 minutes. Immediately transfer them to an ice bath for 5 minutes. This stops the cooking process and makes them easier to peel.
- Remove the eggs from the ice bath. Tap the bottom of each egg onto a hard surface to break the shell. Carefully remove a small piece of shell until the membrane is exposed. Insert your finger under the membrane and gently begin to remove the shell. Repeat this with all of the eggs. Cut the peeled eggs into sixths, then set aside.
- Place the streaky bacon into a cold and dry frypan. Set the heat to high and cook the bacon for approximately 4 minutes on each side or until it is perfectly crispy. Allow the bacon to cool slightly, then finely chop it.
- While the potatoes are still warm, quarter them (if using larger baby potatoes) then begin to prepare the potato salad dressing.
- In a large mixing bowl, combine the mayonnaise, Dijon mustard, fresh lemon juice, and gherkin (or pickle) juice. Whisk these ingredients together until smooth and well combined. Add the finely chopped gherkins, finely diced red onion, finely chopped dill, finely chopped tarragon, and a generous amount of sea salt and cracked pepper. Stir these ingredients thoroughly into the dressing. Gently add the warm, quartered potatoes and the cut hard-boiled eggs to the dressing mixture and stir through carefully to coat everything without mashing the potatoes. Finish by sprinkling the crispy bacon all over the top of the salad.
- Serve your ultimate potato salad immediately while warm for a comforting dish, or cover and refrigerate to serve chilled later. Both options are delicious!
