It’s another twist on a classic! This time I’m playing around with the starch component and swapping out the pasta to make vodka beans!
Prep Time: 5 mins
Cook Time: 10 mins
Servings: 4
Ingredients
- 400 – 800 g (14 – 28 oz) butter beans, drained and rinsed
- 3 tbsp olive oil
- 1 brown onion, finely diced
- 2 garlic cloves, sliced
- 1/2 tbsp dried oregano
- 1 tsp chili flakes (adjust to taste)
- 140 g tomato paste
- 100 mL vodka
- 1 cup (200mL) heavy cream
- 50 g (1.7 oz) parmesan, grated (plus extra for serving)
- 50 g (1.7 oz) butter
- Salt and freshly ground black pepper to taste
Instructions
- In a large deep saucepan on a medium heat, heat the olive oil. Add the finely diced brown onion and sliced garlic and fry for 5 minutes or until fragrant and translucent. Stir occasionally to prevent the garlic from burning. Add the dried oregano and chili flakes and continue to fry for an additional 2 minutes, allowing the spices to toast and release their aromas.
- Increase the heat to high. Add the tomato paste to the pan and fry for 2 – 3 minutes, stirring constantly, until it has caramelized, deepened to a rich red color, and is almost sticking to the pan. Next, add the heavy cream and cook for 1 minute on medium heat, or until the cream begins to foam and bubble gently. Finally, reduce the heat to low and stir the cream thoroughly through the sauce with a pinch of salt until all ingredients are well combined and the sauce is smooth and creamy.
