- 1-2 bunch dutch carrots
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp brown sugar
- 2 tbsp water
- 4 tbsp butter (50g)
- 2 sprigs rosemary
- 4 garlic cloves, minced
- 1 tbsp lemon juice
- 30 g parmesan, grated
- Salt + pepper to taste
Instructions
- Clean the dutch carrots thoroughly under cold running water. Dutch carrots can often be quite gritty, so ensuring they are well-cleaned is crucial. Peel the carrots and carefully remove the stems. Remember to reserve a portion of the vibrant carrot tops to use as a fresh garnish.
- In a deep-dish frying pan, heat the olive oil over a medium flame. Once shimmering, add the cleaned carrots and fry for 1 to 2 minutes, allowing them to begin softening slightly. Next, stir in the maple syrup and brown sugar, cooking for an additional 2 minutes while continuously tossing the carrots to ensure they are evenly coated in the developing sauce. Reduce the heat to low, add the water, cover the pan with a lid, and let the carrots steam for 5 minutes, or until they are fork-tender with just a slight, pleasant resistance.
