Take all the delicious flavours of summer and make them into this tomato and burrata salad. This salad is sweet, sticky, rich and will be your new best salad friend!

  • 600 g cherry tomatoes, halved
  • 3 tbsp olive oil, Rich Glen Extra Virgin
  • 1 tbsp sticky balsamic, Rich Glen
  • 1 shallot, finely diced
  • 1/2 tbsp parsley, finely diced
  • 1/2 tsp flakey sea salt
  • 1/4 tsbp black pepper
  • 125 g burrata
  • fresh basil, to serve
  • 6 slices sourdough

Instructions

  • Drizzle each side of your sourdough slice generously with olive oil and place into a cast iron pan over very low heat. Cook slowly for roughly 10 – 15 minutes on each side, until golden brown and perfectly crisp.
  • In a large bowl, combine the extra virgin olive oil, sticky balsamic, finely diced shallot, fresh parsley, flakey sea salt, and black pepper. Whisk these ingredients together until well combined. Add the halved cherry tomatoes to the dressing and gently toss to coat. Allow the tomatoes to marinate for at least 10 minutes to absorb the flavors.
