Vegan Pumpkin Samosa Soup: The Perfect Autumn Harmony
Are you often caught in the delightful dilemma of choosing between the crispy, spicy allure of an authentic Indian samosa and the soul-soothing embrace of a warm bowl of soup? Good news! You no longer have to compromise. My Vegan Pumpkin Samosa Soup is a culinary creation born from this very craving, masterfully blending the best of both worlds into one unforgettable, comforting dish. It’s my absolute go-to when I want the vibrant flavors of Indian cuisine wrapped in a cozy, satisfying hug.
This recipe was meticulously crafted to ensure that every spoonful transports you directly to the heart of a perfectly spiced samosa filling. We achieve this by featuring an abundance of hearty vegetables like tender carrots, creamy potatoes, and sweet peas, all generously seasoned with a symphony of warming spices. Think fragrant curry powder, the complex warmth of garam masala, a hint of zesty ginger, and a subtle kick from red pepper flakes. These spices are carefully layered to build a depth of flavor that feels both authentic and incredibly comforting.
Beyond the delightful vegetables and spices, the broth itself is a star. It’s rich, flavorful, and incredibly robust, thanks to the strategic inclusion of a touch of tomato paste. This ingredient adds a layer of umami and a beautiful reddish hue to the soup. But the true secret ingredient that gives this soup its remarkable body and depth, making it taste like it has been simmering on the stove all day, is low sodium tamari (or soy sauce). This umami-rich addition elevates the broth from simply good to absolutely extraordinary, creating a complex flavor profile that belies its quick cooking time.
The result is a culinary marvel: a vegan soup that tastes as if it has been lovingly slow-simmered for hours, yet astonishingly comes together in only about 30 minutes of active cooking. This efficiency makes it an ideal choice for busy weeknights when you crave something deeply flavorful and satisfying without the lengthy preparation. It’s a testament to the power of well-chosen ingredients and a thoughtfully balanced spice blend.

Elevating Your Samosa Soup Experience
To truly complete the “samosa” experience and add a crucial textural contrast, I highly recommend serving this delightful soup with a generous squeeze of fresh lime wedges. The bright, zesty lime beautifully complements the savory and warming spices, lifting the flavors and adding a refreshing counterpoint. And, perhaps most importantly, don’t forget some warm, crusty bread for dipping! While we skip the deep-fried pastry of a traditional samosa, warm bread serves as the perfect stand-in, soaking up every drop of that incredible broth and completing the sensory journey.
This Vegan Pumpkin Samosa Soup is more than just a recipe; it’s a celebration of global flavors reimagined for ultimate comfort. It’s a fun and delicious Fall twist on one of my favorite Indian snacks, bringing together hearty ingredients, aromatic spices, and a touch of seasonal pumpkin magic. I genuinely hope this dish brings as much joy and warmth to your table as it does to mine.

- 2 medium yellow potatoes, peeled and diced into 1/2-inch cubes
- 1 cup dried red lentils, rinsed thoroughly
- 1 cup frozen peas
Spices
- 1 tbsp curry powder
- 2 tsp garam masala
- 1/2 tsp ground ginger
- 1/2 tsp red pepper flakes, adjust to desired heat
- 1/2 tbsp kosher salt, I use Morton’s, adjust to taste
Liquids
- 1 tbsp tomato paste
- 1 can pumpkin puree, (15 oz / 425g) not pumpkin pie filling
- 1 can water, (fill pumpkin puree can up with water, approximately 1.75 cups)
- 1.75 cartons low sodium veggie broth, (approx. 7 cups total)
- 1 tbsp low sodium tamari, or soy sauce (use gluten-free if needed)
Instructions
Prep Work
-
Begin by preparing your vegetables. Finely dice the yellow onion, carrots, and yellow potatoes, ensuring the potato cubes are roughly 1/2-inch for even cooking. Then, mince the garlic cloves. Set all the prepped vegetables aside in separate bowls. Also, remember to rinse your dried red lentils under cold water until the water runs clear.
Sauté & Simmer
-
In a large, heavy-bottomed pot or Dutch oven with a fitted lid, add the olive or avocado oil and heat it over medium-high heat. Once the oil is shimmering, add the diced onions and carrots. Sauté these vegetables for approximately 5-6 minutes, stirring occasionally, until they begin to soften and become translucent. Sprinkle with a pinch of salt to help draw out their moisture and flavor.
Reduce the heat to medium-low, then add the minced garlic to the pot. Cook for just 1 minute until fragrant, being careful not to burn it. Immediately follow with all the dry spices.
-
Add the curry powder, garam masala, ground ginger, red pepper flakes, and the main portion of kosher salt to the pot. Stir continuously for 1-2 minutes, allowing the spices to toast and release their incredible aromas. This step is crucial for developing deep flavor! Next, stir in the tomato paste and cook for one more minute, incorporating it thoroughly with the spices and vegetables.
Tip: If the bottom of the pan gets too dry or the spices start to stick, add a small splash of veggie broth or water to deglaze and prevent burning.
-
Now, add the diced potatoes and rinsed red lentils to the pot. Mix everything well, ensuring all the vegetables and lentils are coated in the aromatic spice mixture. Pour in the pumpkin puree, the can of water (used to rinse out the pumpkin can to get every bit!), the low sodium veggie broth, and the low sodium tamari. Stir thoroughly to combine all the ingredients.
Increase the heat to high and bring the soup to a full boil. Once it’s boiling vigorously, reduce the heat to low, cover the pot with its fitted lid, and let it simmer gently for 30 minutes. This simmering time allows the potatoes to become fork-tender and the lentils to cook through and soften, thickening the soup beautifully.
After 30 minutes, remove the lid and stir in the frozen peas. Taste the soup and adjust the seasoning as needed, adding more salt, pepper, or a pinch more of your favorite spice if desired. Cook for another 3 minutes to warm the peas through until they are vibrant green.
Serve your Vegan Pumpkin Samosa Soup immediately, garnished with fresh lime wedges and accompanied by plenty of warm, crusty bread for dipping. Enjoy this delightful and comforting meal!
Tips for the Perfect Vegan Pumpkin Samosa Soup
- Don’t Rush the Sauté: Allowing the onions and carrots to soften and the spices to toast properly is key to developing a rich flavor base.
- Adjust Spice Levels: The amount of red pepper flakes can be adjusted to your preference for heat. Feel free to add more or less.
- Taste and Adjust: Always taste your soup before serving and adjust salt, pepper, and other seasonings as needed. The tamari already adds salinity, so add salt gradually.
- Chop Evenly: Dicing your vegetables (especially potatoes and carrots) into similar-sized pieces ensures they cook uniformly.
- Fresh Lime is a Must: Don’t skip the fresh lime juice at the end! It truly brightens all the savory flavors.
- Use Plain Pumpkin Puree: Make sure you are using 100% pure pumpkin puree, not pumpkin pie filling, which is pre-spiced and sweetened.
Serving Suggestions & Variations
This soup is wonderfully versatile! Here are a few ideas to enhance your meal:
- Garnishes: Beyond lime wedges, a sprinkle of fresh cilantro, a dollop of vegan plain yogurt or coconut cream, or toasted pumpkin seeds make excellent garnishes.
- Accompaniments: Serve it alongside fluffy basmati rice, quinoa, or even some homemade naan bread for an extra special treat.
- Add More Veggies: Feel free to toss in some spinach or kale during the last few minutes of simmering, or add roasted cauliflower florets for added texture and flavor.
- Spice It Up: For more heat, a pinch of cayenne pepper or a chopped green chili can be added with the garlic.
- Sweet Potatoes: You can substitute yellow potatoes with sweet potatoes for a slightly different flavor profile and added sweetness.
- Make it Creamier: For an even creamier consistency, you can blend a portion of the soup (about 1-2 cups) with an immersion blender or in a regular blender, then return it to the pot before adding the peas.
Storage & Meal Prep
This Vegan Pumpkin Samosa Soup is fantastic for meal prepping! It tastes even better the next day as the flavors meld and deepen.
- Refrigeration: Store leftover soup in an airtight container in the refrigerator for up to 4-5 days.
- Freezing: This soup freezes beautifully. Allow it to cool completely, then transfer it to freezer-safe containers or bags. It can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. You might want to add a splash of water or broth when reheating if it has thickened too much.
