A meal prep friendly recipe for creamy steel cut oats cooked with cinnamon apples, raisins, and a touch of vanilla. All the nutritious goodness of steel cut oatmeal without all of the time! This recipe is perfect for one or two people, but you’ll find measurements for a larger batch suitable for a family of four in the notes section below.

Ingredients

  • 2 cups water
  • 2 cups soy or almond milk, unsweetened
  • 1 cup steel cut oatmeal
  • ½ tsp sea salt, just shy of 1/2 tsp
  • ½ tsp vanilla extract
  • 1 large Granny Smith apple
  • ½ tsp cinnamon
  • cup raisins

Instructions

Prep

  1. Peel the apple (optional but recommended) and finely dice, then set aside.

Cook

  1. In a large pot, combine 2 cups of water and 2 cups soy or almond milk. Bring to a boil and add 1 cup of steel cut oatmeal, 1/2 tsp of sea salt, and 1/2 tsp of vanilla extract.
  2. Reduce the heat to medium-low and add the diced apple and 1/2 tsp of cinnamon. Add the raisins, stir vigorously, and continue to simmer on medium-low for 25 minutes.
    • Tip: Stir the oats occasionally while cooking to prevent sticking but also to help thicken and make the oats creamier!
    • Note: You may want to add another 1/4 cup of water or soy milk if the oats are getting too thick for your liking.

For serving immediately:

  1. Spoon into a bowl and top with whatever you like! Some of my favorites for this recipe include tahini, a sprinkle of extra cinnamon, and a splash of cold soy milk or a generous dollop of salted creamy peanut butter with some sliced bananas or berries.

Notes & Tips for Success

  • Not a fan of raisins? While I highly recommend giving them a try in this recipe because they become incredibly plump and juicy when cooked (a completely different texture than raw raisins!), you can certainly substitute them. A few chopped Medjool dates or a handful of chewy dried cranberries make excellent alternatives. The natural sweetness they add is delightful.
  • Craving sweeter oatmeal? This recipe is intentionally not overly sweet, allowing you to control the sugar content. If you prefer a sweeter bowl, feel free to add maple syrup, coconut sugar, or brown sugar into the oats while they are cooking, or simply drizzle it on top before serving.
  • Why Granny Smith apples? While you can absolutely use any apple variety you like – and I sometimes even swap in pears for a different flavor profile – Granny Smith apples are my personal favorite for this recipe. Their bright, tart flavor provides a wonderful contrast to the creamy oats and sweet raisins, truly enhancing the apple-cinnamon experience. Don’t hesitate to use more than one apple or pear if you desire a fruitier oatmeal; a mix of both can also be wonderful!
  • Want even more apple flavor? For an extra boost of apple goodness, try substituting 1 cup of unsweetened apple juice for one of the cups of water. Your liquid ratio would then be 1 cup water, 1 cup apple juice, and 2 cups soy milk for 1 cup of steel cut oats. This subtle change intensifies the apple essence beautifully.
