Another weeknight pasta recipe for the time-poor but the flavor-lovers! Creamy, cheesy, and a little bit healthy, it’s broccoli pasta!

Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves, finely sliced
  • 1/2 brown onion, finely diced
  • 3 cups chicken or vegetable stock, 24oz
  • 1 cup heavy cream, 8oz
  • 1 broccoli, florets and stems, finely sliced
  • 300 g small pasta, 10oz
  • 60 g mozzarella, 2oz (grated)
  • 60 g parmesan, 2oz (grated)

Instructions

  1. In a large saucepan over medium-high heat, warm the olive oil. Add the garlic and onion and fry for 3 minutes, stirring often, until fragrant and translucent.
  2. Add the stock, cream, chopped broccoli, and pasta to the pot and stir well. Bring the mixture to a boil. Once boiling, reduce the heat to medium. Stirring occasionally, maintain a rapid boil for 8 minutes or until approximately 80% of the liquid has been absorbed by the pasta and the pasta is cooked al dente.
