Ingredients
For the Refried Beans:
- 2 tbsp olive or avocado oil
- ½ cup chopped red onion
- 2 cloves garlic, minced
- 1.5 tsp taco seasoning
- 2 (15oz) cans black beans, rinsed and drained
- ½ cup chunky salsa
- ¼ cup water or veggie broth
- Kosher salt and black pepper, to taste
For the Guacamole:
- 2 cups prepared guacamole (or 3-4 chopped avocados with lime juice, salt, pepper)
For the Corn Layer:
- 2 cups yellow corn (thawed if frozen)
- 1/2 lime, juiced
- 1 handful chopped cilantro
- Kosher salt, to taste
For the Tomatoes:
- 3 medium tomatoes, de-seeded and diced
For the Seasoned Sour Cream:
- 2 cups vegan sour cream (see recommendations above)
- 2 tsp taco seasoning
- ¼ tsp smoked paprika
- Kosher salt and black pepper, to taste
For the Toppings:
- 8 radishes, thinly sliced
- 2 scallions, chopped
To Serve:
- Tortilla chips (for dipping)
Instructions
Step 1: Prep & Prepare Corn/Tomatoes
- Combine the corn, lime juice, and chopped cilantro in a mixing bowl. Add salt and pepper to taste, then set aside.
- De-seed the tomatoes, dice them, and set aside.
Step 2: Make the Refried Beans
- Set a large frying pan over medium-high heat and add 2 tbsp of oil and ¼ cup of red onions.
- Sauté for 3-5 minutes until softened, then add the minced garlic and 1.5 tsp taco seasoning. Cook for one more minute, allowing the spices to become fragrant.
- Add the rinsed black beans, water (or veggie broth), chunky salsa, and ½ tsp of salt.
- Reduce the heat to medium and use a fork or potato masher to mash the beans until they reach your desired smooth or chunky consistency.
- Allow the beans to simmer and thicken for about 5 minutes. Taste and adjust salt and pepper as needed.
- Transfer the refried beans to an 8×11 casserole dish (or similar with high sides) and let them cool completely. This helps prevent layers from mixing.
Step 3: Season the Sour Cream
- In a separate bowl, mix together the vegan sour cream, 2 tsp taco seasoning, and smoked paprika. Stir well to combine.
- Taste and add salt and pepper as needed, then set aside.
Step 4: Assemble the Dip
- Once the refried beans are completely cooled, carefully spread the guacamole in an even layer over the beans. Make sure to spread it all the way to the sides so each vibrant layer is visible.
- Next, add the seasoned corn layer. Use a slotted spoon to drain any excess lime juice from the corn mixture, preventing the dip from becoming watery. Spread the corn evenly.
- Follow with the diced tomato layer.
- Then, gently spread the seasoned vegan sour cream. Use the back of a spoon and glide it gently over the tomatoes, being careful not to lift it as you spread, to achieve a smooth, even layer.
