VEGAN TACO CASSEROLE: A Step-by-Step Layering Guide

Creating this magnificent casserole is all about building layers of flavor and texture. Follow this simple guide to construct your masterpiece:

  • Layer 1: Zesty Salsa. Start with a generous spread of chunky salsa at the bottom of your baking dish. This provides a flavorful base and helps prevent sticking.
  • Layer 2: Creamy Refried Beans. Spoon your smooth, seasoned refried beans over the salsa. This layer adds rich, satisfying creaminess and plant-based protein.
  • Layer 3: Savory Vegan Taco Filling. Next comes the hearty “meat” layer, packed with umami and taco spices.
  • Optional Layer for Extra Heartiness: Want to make it even more filling? Consider adding cooked rice, quinoa, crispy roasted potatoes, or any leftover roasted vegetables. This is a great way to use up ingredients and boost nutrients.
  • Layer 4: Velvety Vegan Nacho Cheese Sauce. Drizzle or spread a generous amount of our homemade, luscious nacho cheese sauce. This adds that iconic cheesy goodness without dairy.
  • Layer 5: More Salsa (Drained). Add another layer of salsa, but this time, use a slotted spoon to drain any excess liquid. This keeps the casserole from becoming watery while adding a fresh burst of flavor.
  • Layer 6: Sweet Corn. Sprinkle a layer of frozen (or fresh) corn kernels. Beyond adding sweetness and color, the corn acts as a crucial barrier, helping to prevent your tortilla chips from getting soggy too quickly.
  • Layer 7: Crunchy Tortilla Chips. Cover the corn layer with a generous blanket of your favorite tortilla chips. This is where the “nacho” element truly shines!
  • Layer 8: Final Cheese Topping. Finish with the remaining Nacho Cheese Sauce drizzled over the chips, followed by a sprinkle of shredded vegan cheese. This ensures a golden, bubbly, and irresistible topping once baked.

Ingredients

Nacho Cheese Sauce (or skip and use 2 cups store-bought)

  • 1.5 cups frozen butternut squash, thawed (adds creaminess and a beautiful golden color)
  • 1/3 cup raw cashews (soaked for 30 minutes if you don’t have a high-speed blender, or use 2 tbsp raw cashew butter for an even quicker option)
  • 1/3 cup nutritional yeast (essential for that cheesy flavor)
  • 1 tbsp juice from a jar of pickled jalapeños (adds a subtle tang and a hint of spice)
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 5 dashes cayenne pepper (adjust to your spice preference)
  • 1 cup almond milk (or other unsweetened plant-based milk)
  • 2 tsp corn starch (for thickening)
  • 1.5 tbsp water (to dissolve corn starch)

Vegan Taco Filling

  • 1.25 cups vegan “beef” crumbles (choose your favorite brand for texture and flavor)
  • 1 pint cremini or white mushrooms, finely diced (adds umami and a satisfying “meaty” texture)
  • 1 tbsp olive oil
  • 1 tbsp taco seasoning (homemade or store-bought)
  • 1 tbsp tomato paste (for depth of flavor)
  • 1/4 cup water

Refried Beans (or skip and use 3 cups of store-bought)

  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 15oz cans pinto beans, rinsed and drained (black beans can also be used)
  • 1/2 tsp dried oregano
  • 3 pinches kosher salt (season to taste)
  • 3 grinds black pepper
  • 1/2 cup water (adjust for desired consistency)

For the Casserole Assembly

  • 1/2 bag tortilla chips, plus more for serving (choose sturdy chips that hold up well)
  • 2 cups chunky salsa (your favorite mild or medium salsa)
  • 1 cup corn, I used frozen (thaw slightly if using frozen)
  • 1 – 1.5 cups shredded vegan cheese (choose a good melting variety)

Optional Toppings (for serving)

  • Chopped tomatoes
  • Shredded lettuce
  • Black olives
  • Pickled jalapeños
  • Sliced avocado or guacamole
  • Vegan sour cream
  • Hot sauce
  • Fresh cilantro

Instructions

Part 1: Make the Nacho Cheese Sauce

  1. In a small bowl, mix the corn starch and 1.5 tbsp water to create a slurry.
  2. Add the thawed butternut squash, raw cashews (or cashew butter), nutritional yeast, jalapeño juice, onion powder, kosher salt, cayenne pepper, and almond milk to a high-speed blender. Blend until exceptionally smooth and creamy, which might take at least 30 seconds to a full minute, scraping down the sides as needed.
  3. Transfer the blended mixture to a medium saucepan. Warm over medium-high heat for about 5 minutes, stirring frequently with a whisk or spoon, until the sauce thickens to your desired consistency. Continuous stirring is key to prevent lumps. Remove from heat and set aside.

Part 2: Prepare the Vegan Taco Filling

  1. Begin by finely dicing the mushrooms. Uniform dicing helps them blend seamlessly with the crumbles and cook evenly. Set them aside.
  2. Heat 1 tbsp of olive oil in a large frying pan over medium-high heat. Add the vegan “beef” crumbles and cook for 2-3 minutes, breaking them apart with a spoon.
  3. Stir in the finely diced mushrooms and continue to cook for another 5-7 minutes, until the mushrooms have softened and released their moisture. Use a wooden spoon to scrape up any crispy, flavorful bits from the bottom of the pan – this adds depth! If the pan becomes too dry, add a splash of water or a little more olive oil.
  4. Add the taco seasoning, tomato paste, and 1/4 cup water to the pan. Cook for 2-3 minutes more, stirring constantly, until the mixture has thickened and most of the liquid has evaporated. The filling should be moist but not watery. Remove from heat and set aside.

Part 3: Craft the Refried Beans

  1. Carefully wipe out the same frying pan you used for the taco filling. Add 1 tbsp of fresh olive oil and the minced garlic. Lower the heat to medium and cook for one minute, just until fragrant, being careful not to burn the garlic.
  2. Add the rinsed and drained pinto beans, dried oregano, kosher salt, black pepper, and 1/2 cup water to the pan.
  3. Raise the heat to medium-high and begin mashing the beans with the back of a wooden spoon or a potato masher while stirring. Continue to mash and stir, allowing the mixture to come to a gentle simmer.
  4. Reduce the heat to medium-low and simmer for 3-4 minutes, stirring and mashing occasionally, until the beans are thickened and mostly smooth. If they seem too thick, add another tablespoon or two of water. If too thin, continue to simmer gently. Remove from heat and set aside.

Part 4: Assemble and Bake the Casserole

  1. Preheat your oven to 375°F (190°C).
  2. In a 9×13 inch baking dish, use a slotted spoon to evenly spread 1 cup of chunky salsa across the bottom. The slotted spoon helps to leave excess liquid in the jar, ensuring a firmer casserole.
  3. Dollop the prepared refried beans over the salsa and gently smooth them into an even, thin layer.
  4. Next, spread the vegan taco filling over the bean layer, creating another thin, even layer.
  5. Spoon in the remaining cup of salsa. Then, drizzle about half of the prepared Nacho Cheese Sauce over the salsa. Don’t worry about perfection; a splattered pattern can look quite appealing and ensures good coverage!
  6. Evenly sprinkle a layer of corn over the cheese sauce. This crucial corn layer helps create a barrier, preventing your tortilla chips from becoming soggy during baking.
  7. Cover the corn layer with a generous layer of tortilla chips. You’ll want enough chips to mostly cover the surface. Break larger chips into smaller pieces if needed for better coverage.
  8. Finally, drizzle the remaining Nacho Cheese Sauce over the chips and sprinkle generously with shredded vegan cheese. This will create an irresistible, gooey, and crispy topping.
  9. Bake in the preheated oven for 10-12 minutes, or until the vegan cheese is melted and bubbly, and the tortilla chips are warmed and slightly crisped.
  10. Once out of the oven, allow the casserole to rest for 5 minutes. This brief resting period helps the layers set, making it easier to serve.
  11. Top with your desired optional toppings! My favorites include fresh shredded lettuce, diced red onions, creamy avocado, a dollop of vegan sour cream, and a dash of hot sauce for extra kick.
  12. Serve this incredible casserole with extra tortilla chips on the side for scooping and a bright, tangy green salad to complete the meal. Enjoy every flavorful bite!

Tips for the Perfect Vegan Taco Casserole Every Time

  • Don’t Skimp on Blending: For the silkiest nacho cheese sauce, ensure your blender runs long enough. If you don’t have a high-speed blender, soaking your cashews in hot water for at least 15-20 minutes (or boiling them for 5-10 minutes) will make them easier to blend.
  • Control Moisture: Using a slotted spoon for salsa is a small step that makes a big difference in preventing a watery casserole. The corn layer also helps protect the chips from moisture.
  • Crispy Chips are Key: While the chips on top get a quick bake, if you prefer extra crispy chips throughout, you can lightly bake a small portion of your chips before layering them in, or serve some on the side for scooping.
  • Layering Matters: Spreading each layer evenly ensures that every serving gets a balanced mix of all the delicious components.
  • Adjust Spice Levels: Feel free to customize the heat! Add more cayenne pepper to the cheese sauce, a pinch of chili flakes to the taco filling, or a spicier salsa to amp up the kick.

Customization & Variations

One of the best things about this vegan taco casserole is its adaptability. Here are some ideas to make it your own:

  • Bean Alternatives: Instead of pinto beans, try black beans or a mix of both in your refried bean layer.
  • Veggie Boost: Stir in finely chopped bell peppers, zucchini, or spinach into your taco filling. Roasted sweet potato cubes also make a fantastic addition to the optional hearty layer.
  • Grain Power: If you’re out of vegan “beef” crumbles, cooked lentils or even crumbled firm tofu can be seasoned with taco seasoning for a similar effect.
  • Gluten-Free: This recipe is naturally gluten-free if you use gluten-free vegan “beef” crumbles and certified gluten-free taco seasoning and tortilla chips.
  • Different Cheeses: Experiment with various brands of shredded vegan cheese to find your favorite melting texture and flavor.

Storage and Reheating

This vegan taco casserole is fantastic as leftovers, making it great for meal prep!

  • Storage: Allow any leftover casserole to cool completely. Transfer it to an airtight container and store in the refrigerator for up to 3-4 days.
  • Reheating: For best results, reheat individual portions in the microwave until warmed through. To restore some crispiness to the chips, you can reheat portions in an oven or toaster oven at 350°F (175°C) for 10-15 minutes, or until heated through and crispy.

I truly hope you enjoy creating and savoring this incredible Vegan Taco Casserole.
