Ingredients

For the Cauliflower Soup:

  • 1 large cauliflower, cut into florets (approx. 2 pounds / 1kg)
  • 2 garlic bulbs
  • 2 thyme sprigs
  • 4 tbsp olive oil
  • 1 leek, roughly chopped
  • 4 cups chicken or vegetable stock (32oz)
  • 200 mL heavy cream, optional
  • Salt and pepper to taste

For the Grilled Cheese (serves 2):

  • 4 slices sourdough or white bread
  • 50 g grated mozzarella cheese (approx. 1/3 cup)
  • 50 g grated cheddar cheese (approx. 1/3 cup)
  • 30 g grated parmesan cheese (approx. 1/4 cup)
  • 60 g salted butter (4 tbsp)

Instructions

Cauliflower Soup:

  1. Preheat your oven to 180 degrees C / 350 degrees F.
  2. Using a sharp knife, carefully slice the top off the garlic bulbs, about 2 – 3 cm down from the top, to expose the raw cloves.
  3. Place the garlic bulbs, cauliflower florets, and thyme sprigs into a large baking dish. Drizzle generously with 2 tablespoons of olive oil and season well with salt and pepper. Bake for 45 minutes, or until the cauliflower is tender and slightly caramelized.
  4. Once baked, reserve 4 of the smallest cauliflower florets for garnish. Remove the garlic from the baking dish and let it cool slightly. Squeeze the roasted garlic cloves out of their skins using your fingers and set aside.
  5. In a large pot, heat the remaining 2 tablespoons of olive oil over medium heat. Add the roughly chopped leeks and cook for about 5 minutes, stirring occasionally, until they are slightly wilted and tender.
  6. Add the roasted cauliflower (including any pan juices), the roasted garlic cloves, chicken or vegetable stock, and a generous amount of salt and pepper to the pot. Bring the mixture to a boil, then immediately reduce the heat to low and let it simmer gently with the lid off for 20 minutes.
  7. Once the soup has simmered, remove it from the heat and allow it to cool slightly. Use an immersion blender to blend the soup directly in the pot until it is completely smooth and silky. Alternatively, carefully transfer the soup in batches to a standard blender and blend until smooth.
  8. If you choose to use cream, stir in the 200 mL of heavy cream until well combined. Garnish each serving with a drizzle of olive oil, the reserved cauliflower florets, and a few extra fresh thyme leaves.

Grilled Cheese:

  1. Spread butter evenly on both sides of each slice of bread.
  2. Evenly distribute the grated cheeses across two of the bread slices. Start with the cheddar, then the mozzarella, and finish with the Parmesan. Place the other two slices of bread on top to complete your sandwiches.
  3. Heat a heavy-based skillet or frying pan over low to medium heat. Add a light drizzle of olive oil to the pan. Place the assembled grilled cheese sandwiches into the hot pan.
