Ingredients
For the Tomatoes:
- 6 vine tomatoes (or 4 large beefsteak tomatoes)
- 2 tbsp olive oil
- ¼ tsp kosher salt
- ¼ tsp black pepper
For the Stuffing:
- 1 cup chickpeas, drained and rinsed
- 3 tbsp tomato pulp (reserved from the inside of the tomatoes)
- ¼ cup finely diced onion
- ¼ cup vegan pesto
- 1 tbsp lemon juice
For the Topping:
- 2-3 tbsp Italian breadcrumbs (panko recommended)
- ¼ cup vegan Parmesan cheese, grated
Instructions
- Prep Tomatoes: Preheat your oven to 375°F (190°C). Slice off the top of each tomato and use a spoon to scoop out the pulp, reserving both the tops and the pulp for later.
- Season Tomatoes: In a 9×13 baking dish, combine olive oil, salt, and pepper. Place the hollowed tomatoes in the pan and toss to coat both the inside and outside thoroughly. Set aside.
- Make Stuffing: In a mixing bowl, lightly mash the chickpeas with a fork. Add the mashed chickpeas, finely diced onions, vegan pesto, and lemon juice. Stir in 3 tablespoons of the reserved tomato pulp. If the mixture seems too dry, chop a small piece of tomato core and add for extra moisture. Mix well.
