- 500 – 1000 g Clams, 1lb – 2lbs, scrubbed and purged of sand
- 2 tbsp olive oil
- 1 brown onion, diced
- 1 large red chilli, finely diced (adjust to taste)

- 200 g chorizo, 7oz, cooking variety, finely diced
- 3/4 cup dry white wine, 6oz, e.g., Sauvignon Blanc or Pinot Grigio
- 50 g unsalted butter, 4tbsp
- Fresh Parsley, large handful, finely chopped, for garnish
- Crusty Sourdough or Focaccia, sliced, to serve with olive oil for frying
