Coastal Scallops in Lemon-Herb Broth

As the days in Melbourne grow noticeably shorter and the crisp autumn air transitions into the unmistakable chill of winter, there’s a primal shift in our culinary desires. The vibrant outdoor dining scene makes way for the comforting embrace of home-cooked meals. Melbourne, known for its famously temperamental weather, may not see snow, but its winters are undeniably cold, beckoning us indoors for warmth and nourishment. This seasonal change inspires a longing for dishes that are not only delicious but also deeply aromatic and soul-soothing. Preparing for the months ahead, I found myself drawn to creating a meal that perfectly encapsulates this feeling: a truly delightful bowl of lemony brothy beans with perfectly seared scallops.

This dish is more than just a recipe; it’s an experience, a symphony of flavors and textures designed to bring comfort and joy during the colder seasons. Imagine a generous bowl filled with tender, creamy beans swimming in a fragrant, lemony, and garlic-infused broth, elevated by the sweet, delicate surprise of pan-fried scallops. It’s one of those simple pleasures that remind you of the profound satisfaction found in a thoughtfully prepared meal.

Winter cooking, for me, is an exciting playground of robust flavors and comforting aromas. There’s a certain magic in simmering pots and bubbling broths that fills the home with an inviting warmth. Its rich aroma of garlic and lemon, combined with the hearty goodness of beans, creates a wonderfully satisfying meal that feels both wholesome and indulgent.

I hadn’t made brothy beans in quite some time, but after welcoming my second child, I found myself craving delicious, home-cooked meals that were both healthy and incredibly filling. Elevating the Experience: The Perfect Marriage of Seafood and Beans

True to my nature, I always seek to add a unique twist to classic dishes. While a simple bowl of brothy beans is undoubtedly delicious on its own, I had some incredibly fresh scallops from the market that were just begging to be incorporated. Pan-frying them until they developed a beautiful golden crust and adding them to the brothy beans proved to be a stroke of culinary genius – their addition was an incredibly welcome one!

There’s something truly special about the unexpected pop of a sweet and delicate scallop that elevates this dish from merely tasty to truly memorable. The subtle brininess and tender texture of the scallops provide a wonderful contrast to the creamy beans and rich broth, creating a sophisticated yet approachable meal. If you’re looking to impress or simply treat yourself to something a little extra, these seared morsels are definitely the way to go.

Choosing the Perfect Beans for Lemony Brothy Beans with Scallops

For this particular recipe, I highly recommend using cannellini beans. These magnificent white kidney beans are known for their incredibly creamy texture and slightly nutty flavor, making them ideal for dishes where they need to absorb and contribute to a rich broth. They are so substantial and juicy, they almost have a “meaty” quality, providing a satisfying bite that complements the delicate fresh herbs beautifully.

Cannellini beans hold their shape well while still becoming wonderfully tender, ensuring that your brothy beans don’t turn into a mush. Their mild flavor acts as a perfect canvas for the vibrant lemon, potent garlic, and savory stock, allowing each element to shine. While other white beans like Great Northern or navy beans could be used, cannellini beans truly offer that superior texture and depth that makes this dish sing.

Customizing Your Brothy Bean Bowl: Endless Possibilities

Like all my favorite recipes, this one is designed with flexibility in mind. Cooking should be an adventure, and adapting a dish to suit your preferences or what you have on hand is part of the fun! There are countless ways to modify this lemony brothy beans recipe to make it uniquely yours.

To start, if you’re following a vegetarian or vegan diet, simply omit the scallops. Without them, this becomes a wonderfully flavorful plant-based meal, a type of recipe I’ve been increasingly focusing on creating. You’ll still find immense satisfaction in the rich broth and hearty beans, ensuring no flavor is sacrificed. For an added plant-based protein boost, consider stirring in some cooked lentils, chickpeas, or even pan-fried mushrooms to mimic the texture of seafood.

For those who love a bit more savory depth or a touch of smoky flavor, crispy bacon or pancetta would be an outstanding addition. Cook it until golden and crisp, then crumble it over the top of your brothy beans just before serving. The rendered fat from the bacon can also be used to sauté your leeks, adding another layer of flavor to the broth. Furthermore, don’t hesitate to introduce other vegetables. Fresh spinach or kale can be wilted into the broth during the last few minutes of simmering, adding extra nutrients and a lovely green color. Diced carrots, celery, or zucchini could also be sautéed with the leeks for a more complex vegetable base.

And, of course, no brothy dish is truly complete without the perfect accompaniment: bread! Serve your lemony brothy beans with plenty of crusty artisan bread, a warm baguette, or even one of my homemade focaccias. These are essential for soaking up every last drop of that incredibly flavorful, garlicky, and lemony broth, ensuring that not a single bit of its delicious essence goes to waste. The experience of dipping warm bread into the rich broth is truly one of life’s simplest, yet most satisfying, culinary joys.

Lemony Brothy Beans with Scallops

By Daen Lia
It’s just a big bowl of love. Lemony brothy beans with scallops is a recipe that I think everyone will love.
Prep Time: 10 minutes
Cook Time: 1 hour 20 minutes
Servings: 4

Ingredients

  • 1 garlic bulb
  • 1 cup olive oil, 8oz
  • 500 g scallops
  • 1 leek, white and pale green parts sliced thinly
  • 250 g cherry tomatoes, 8oz
  • 2 cups chicken stock, 16oz
  • 400 g cannellini beans, 14oz, drained
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • parsley, finely chopped
  • salt + pepper

Instructions

  1. Preheat the oven to 120 degrees C / 250 degrees F.
  2. Peel the garlic by breaking the cloves away and placing them into a heatproof bowl. Submerge in boiling hot water for 5 minutes and drain. The skin will become loose and easy to peel away.
  3. Place the garlic cloves into an ovenproof dish and fully submerge in olive oil. It’s important the garlic is fully submerged in the olive oil so it does not burn. Bake for 1 hour or until the garlic has slightly browned in color and is soft to touch. Separate the oil from the garlic cloves by passing the through a fine mesh strainer that is placed over a bowl. This garlic-infused oil is your “garlic confit olive oil.”
  4. Pat the scallops dry with absorbent paper and season lightly with salt. Ensure they are as dry as possible to achieve a good sear.
  5. In a stainless steel or non-stick fry pan, heat 2 tablespoons of the garlic confit olive oil over medium-high heat. Once a slight haze appears from the pan, carefully place the scallops into the pan. Leave them to cook undisturbed for 2-3 minutes on each side, or until they have formed a beautiful golden crust. Set the seared scallops aside. It’s crucial to do this step in batches to avoid overcrowding the pan, which would steam the scallops instead of searing them.
  6. In a clean fry pan (or the same pan if wiped clean) over medium heat, add another 2 tablespoons of the garlic confit olive oil. Add the thinly sliced leeks and the soft garlic confit cloves to the pan. Sauté for about 5 minutes, or until the leeks have softened slightly and become fragrant. Then, add the cherry tomatoes to the pan and cook for another 5 minutes, stirring occasionally, until they burst open and create a delicious, jammy consistency.
  7. Pour in the chicken stock, add the drained cannellini beans, lemon zest, lemon juice, and season generously with salt and pepper. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Allow it to simmer for 10 minutes, stirring occasionally, to allow all the flavors to meld beautifully.
  8. Finally, sprinkle fresh, finely chopped parsley all over the brothy beans and stir it through. To serve, ladle the warm, flavorful brothy beans into bowls and top each serving with the perfectly seared scallops. Garnish with an extra sprinkling of fresh parsley and chili flakes, if desired, for a touch of heat. Serve immediately and enjoy this comforting masterpiece.
