The Ultimate Triple Cream Brie & Hot Honey Toastie: A Gourmet Revelation
This isn’t your average grilled cheese. Our Triple Cream Brie & Hot Honey Toastie is a masterful blend of premium ingredients designed to deliver an explosion of flavor in every bite. At its heart lies d’Affinois bleu, a French triple-cream brie that serves as a sublime introduction to blue cheese. Its exceptionally mild, incredibly rich, and velvety texture makes it the ideal partner for both sweet and savory components. Unlike more assertive blue cheeses, d’Affinois bleu offers a gentle tang that perfectly complements the other indulgent fillings without overpowering them.
This elevated toastie takes a classic comfort food and transforms it into a culinary masterpiece. Beyond the luxurious d’Affinois, it’s generously filled with thinly sliced, salty prosciutto, refreshing and juicy pears, and a generous drizzle of trending hot honey. The sweet and spicy notes of the honey create a beautiful counterpoint to the subtle sharpness of the blue cheese, while the prosciutto adds a depth of umami and a satisfying chewiness. Each ingredient is carefully chosen to create a harmonious balance, making this toastie a truly unforgettable gourmet experience.

Decoding the ‘Toastie’: An Australian Culinary Staple
If you’re not from Australia or parts of the UK, you might be wondering, “What exactly is a toastie?” In essence, a toastie is simply what Australians affectionately call a grilled cheese sandwich. While the concept is the same – bread grilled with a delicious filling – the term “toastie” often evokes a sense of nostalgic comfort and simplicity for those of us down under. Growing up, a classic toastie was typically a humble affair, perhaps filled with just one or two types of cheddar or processed cheese and often served with a side of tomato sauce for dipping.
However, the world of toasties has evolved far beyond these simple beginnings. Our Triple Cream Brie & Hot Honey Toastie is a prime example of this evolution, pushing the boundaries of what a grilled cheese can be. It’s a sophisticated “jazzed-up” version that retains the comforting warmth of a traditional toastie while introducing gourmet ingredients and complex flavor profiles. It’s a step up from the beloved childhood classic, offering an adult take on a cherished comfort food that is both familiar and excitingly new.

The Irresistible Allure of Hot Honey
Hot honey has taken the culinary world by storm recently, and for very good reason! This sweet and spicy condiment is incredibly versatile, adding an exciting dimension to almost any dish. It’s the perfect balance of floral sweetness from the honey combined with a fiery kick from chili, creating a complex flavor profile that is truly addictive. When drizzled over our Triple Cream Brie & Hot Honey Toastie, it performs magic, enhancing the saltiness of the prosciutto and cutting through the luxurious creaminess of the brie. The warmth it adds isn’t just about heat; it’s about depth and intrigue, elevating the entire sandwich.
Beyond toasties, hot honey is a fantastic addition to numerous dishes. Try it on pizza for a delightful sweet-spicy contrast, drizzle it over fried chicken, roasted vegetables, or even in cocktails. It’s remarkably easy to make a batch at home, and its excellent shelf life – up to 6 months when stored in a cool, dark pantry in a sterilized jar – means you can always have this incredible condiment on hand. Once you start incorporating hot honey into your cooking, you’ll wonder how you ever lived without this new pantry staple.

Essential Ingredients for Your Gourmet Toastie
Crafting this ultimate toastie requires a selection of high-quality ingredients that harmonize to create a truly exceptional flavor profile. Here’s a closer look at what you’ll need:
d’Affinois Bleu Brie: If you’re unfamiliar with d’Affinois, prepare to be introduced to one of France’s most decadent and scrumptiously delicious cheeses. Hailing from the cheese-making experts of France, d’Affinois is renowned for its ultra-creamy, almost melt-in-your-mouth texture. The ‘bleu’ variety is particularly special, offering a gentle, approachable blue cheese flavor that is mild and soft, making it an exquisite choice for this toastie. It provides a luxurious foundation without overwhelming the other delicate flavors.
Dijon Mustard: While it might seem like an unconventional addition to a sweet and savory toastie, trust us on this one! A thin layer of robust Dijon mustard is crucial for balancing the richness of the cheese and the sweetness of the pear and honey. Its subtle tanginess cuts through the indulgent flavors, adding a sophisticated edge and preventing the sandwich from becoming overly sweet. It’s an indispensable component that truly ties all the elements together.
Pears: Sweet, juicy, and crisp pears introduce a delightful textural contrast and a refreshing flavor element to the toastie. Their natural sweetness perfectly complements the savory prosciutto and the creamy brie, while their subtle crunch provides a welcome relief from the richness. We highly recommend using firm, ripe Packham pears for their ideal texture and balanced sweetness when crafting this recipe.
Prosciutto: As a self-proclaimed enthusiast of salty cured meats, prosciutto holds a special place at the top of my list. Its delicate, melt-in-your-mouth texture and intensely savory, salty flavor are paramount to this toastie’s success. Investing in high-quality, thinly shaved prosciutto makes a significant difference, as its rich, nuanced flavor will elevate the entire sandwich. Do not skimp on this ingredient; it’s worth the investment for a truly superior result.
Hot Honey: This trending condiment is about to become your new favorite secret weapon in the kitchen! The perfect blend of sweet honey and spicy chili, hot honey adds an unparalleled depth of flavor. It can be drizzled on almost anything to impart a complex sweet-spicy kick, and in this toastie, it creates an exciting contrast to the creamy cheese and salty ham, taking your sandwich to an entirely new level of culinary delight.
Mayonnaise: Here’s a brilliant tip from my mother-in-law that guarantees the crispiest, most golden toastie imaginable: use mayonnaise on the exterior of your bread instead of butter! While many believe butter is the key to a perfectly browned and crispy crust, mayonnaise is actually the undisputed champion. It contains oil, eggs, and a touch of acid, which all contribute to a superior browning and crisping effect, creating an incredibly satisfying crunch with every bite. Once you try it, you’ll never go back to butter for your grilled sandwiches.

Triple Cream Brie & Hot Honey Toastie
Ingredients
Hot Honey
- 500 ml honey
- 2 tbsp chilli flakes
- 1 tsp tabasco sauce
- 2 tbsp lemon juice
Toastie (makes 1)
- 2 slices white sourdough
- 50 g Fromager d’Affinois Bleu cheese , cut into thick strips
- 1/2 pear, finely sliced
- 50 g prosciutto, shaved
- 1 tbsp hot honey
- 2 tbsp mayonnaise
- 50 g butter
- 1 tbsp olive oil
Instructions
Hot Honey
-
Combine all hot honey ingredients (honey, chili flakes, tabasco sauce, lemon juice) into a small pot. Heat on a medium setting, stirring occasionally, until the honey gently bubbles and achieves a thinner, runny consistency.
-
Since this recipe yields a generous batch of hot honey, carefully transfer it into a clean, sterilized jar. It can be stored in your pantry for several months, ready for use whenever a sweet and spicy craving strikes.
Toastie
-
Take one slice of sourdough bread and spread 1 tablespoon of mayonnaise generously onto one side; this will be the bottom of your toastie. Flip the bread over so the mayonnaise side is facing down. Spread a thin layer of Dijon mustard onto the non-mayonnaise side. Layer with the Fromager d’Affinois Bleu cheese, followed by the finely sliced pear. Neatly arrange the shaved prosciutto on top, then finish with a generous drizzle of the prepared hot honey.
-
Place the second slice of sourdough bread on top of your assembled fillings. Spread the remaining 1 tablespoon of mayonnaise evenly over the top exterior of this slice.
-
In a heavy-bottomed pan, preferably cast iron, melt the butter over a very low heat. Add the olive oil. Once the butter is slightly foaming and the oil is warm, carefully place the assembled toastie into the pan, mayonnaise-side down. Cook on this very low heat for approximately 10 minutes per side, or until both sides are beautifully golden brown and irresistibly crispy, and the cheese is fully melted and gooey. Serve your gourmet toastie immediately to enjoy its peak deliciousness.
