The Quintessential Comfort: Garlic Butter Jacket Potatoes

At its core, this dish celebrates the humble potato, transforming it into a luxurious meal with simple yet powerful additions: potatoes, garlic, and truly exquisite butter. This isn’t just a recipe; it’s an experience designed to warm your soul on the chilliest evenings. While seemingly straightforward, the magic happens in the details, particularly with the choice of ingredients.

Why Westgold Butter Makes All the Difference

When butter is a star ingredient, its quality is paramount. Westgold Butter, crafted from grass-fed cows, boasts a natural richness and creamy texture that sets it apart. What truly makes it ideal for these jacket potatoes is its wonderfully subtle flavor. This characteristic allows the other robust components, like our homemade garlic confit, to truly shine without being overpowered. Its deep golden hue and luxurious mouthfeel contribute immensely to the overall indulgence of the dish, ensuring every bite is a delightful experience. Using such a high-quality butter elevates these baked potatoes from a simple side to a main course masterpiece, delivering a depth of flavor that mass-produced alternatives simply cannot replicate.

Mastering the Art of the Perfect Jacket Potato: A Time-Honored Tradition

Achieving the perfect jacket potato involves a delicate balance: a wonderfully crispy, golden-brown skin that acts as a true “jacket,” encasing a remarkably fluffy, steaming interior. This takes a little time, but every minute spent in the oven is worth it. While the active preparation is quick, patience during baking is key. Expect about an hour and a half of oven time for the potatoes themselves. If you choose to prepare our recommended garlic confit from scratch, add an extra couple of hours for that mellowing process – a step we promise is well worth the wait for its transformative power.

The goal is to render the potato’s exterior beautifully crisp, almost like a thin crust, while ensuring the inner flesh becomes so tender it practically melts. This malleability is crucial for when we scoop it out, mash it with our flavourful additions, and then return it to its crispy shell. Choosing the right potato variety also plays a significant role. Varieties like Sebago, Russet (also known as Idaho), or King Edward potatoes are ideal due to their high starch content, which helps create that desirable fluffy texture.

The Return of the Flavor Bomb: Garlic Confit

For those familiar with Daen’s Kitchen, you know our affinity for garlic. And in this recipe, we’re diving deep into our roots with the glorious return of garlic confit! If you haven’t experienced garlic confit before, prepare for a revelation. Unlike raw or roasted garlic, confit garlic is slow-cooked in olive oil until it transforms into incredibly soft, sweet, and buttery cloves. This process mellows its pungent edge, creating a profoundly aromatic and luxurious ingredient that elevates these garlic butter jacket potatoes to an entirely new level.

The confit garlic cloves, when mashed into the potato flesh, impart a depth of flavor that is truly unparalleled – sweet, mellow, and intensely garlicky without any harshness. It’s this “flavour bomb” that gives our jacket potatoes such an edge, making them feel incredibly opulent and utterly delicious. It’s the perfect indulgent addition for winter warming, making the extra time spent on its preparation an investment in pure culinary bliss.

Endless Possibilities: Customizing Your Jacket Potato with Toppings

One of the most exciting aspects of jacket potatoes is the sheer versatility of toppings. The options are truly limitless, allowing you to tailor each potato to your precise cravings. For this particular recipe, we’ve opted for a simple yet universally adored classic combination, often considered the “holy grail” of jacket potato add-ons: rich sour cream, generous amounts of melted cheese (a mix of mozzarella for gooeyness and parmesan for sharpness), and a sprinkle of fresh chives for a bright, oniony finish. This trio offers a harmonious blend of creamy, tangy, salty, and fresh flavors that perfectly complement the garlic butter potatoes.

However, this is where your culinary journey truly begins! Feel free to explore and personalize your jacket potatoes. For those who enjoy a heartier meal, consider adding crispy bacon bits, tender pulled pork, or even smoked salmon for a more sophisticated touch. Vegetable enthusiasts might enjoy sweet corn kernels, finely sliced shallots, sautéed mushrooms, or roasted bell peppers. For an extra cheesy kick, try sharp cheddar or crumbled blue cheese. Don’t forget herbs like fresh parsley or dill, which can add another layer of freshness. A light salad with coriander and red onion on the side, or even directly on top, offers a refreshing contrast to the richness of the potato.

The beauty of a jacket potato is its ability to transform from a humble side dish into a complete and satisfying meal, customized precisely to your taste. Don’t be afraid to experiment with your favorite flavors and textures!

Garlic Butter Jacket Potatoes

By Daen Lia
It’s a comfort food for a reason – it really does warm you up from the inside! That’s why I love making my garlic butter jacket potatoes with Westgold Butter for that extra comfort.
Prep Time: 2 hrs 45 mins
Cook Time: 15 mins
Servings: 4

Ingredients

Garlic Confit

  • 4 garlic bulbs
  • 1 cup olive oil

Jacket potatoes

  • 4 large potatoes, 300g / 10oz each, (Sebago, Russet, or King Edward varieties recommended)
  • 2 tbsp olive oil
  • 100 g Westgold Salted Butter, (7 tbsp)
  • 30 garlic confit cloves
  • 1/2 cup heavy cream
  • 1 cup mozzarella, grated
  • 1/4 cup parmesan, grated
  • Flakey sea salt, to taste
  • Chives, finely sliced (for serving)
  • Sour cream, (for serving)

Instructions

Garlic Confit

  1. Preheat your oven to 120°C (250°F).
  2. Carefully break apart the garlic bulbs into individual cloves and peel them. A quick tip for easy peeling: place the cloves into a heatproof bowl, submerge them in boiling hot water for 5 minutes, then drain. The skins will loosen and become much easier to remove.
  3. Arrange the peeled garlic cloves in an ovenproof dish. Pour enough olive oil over the cloves to completely submerge them. It’s crucial that the garlic is fully covered by the oil to prevent burning and ensure even confit. Bake for 1 to 2 hours, or until the garlic cloves turn a beautiful golden brown and are incredibly soft. Once cooked, separate the garlic oil from the cloves. The aromatic oil can be stored in a sterilized jar at room temperature for future use, and the confit cloves are ready for your jacket potatoes or other dishes.

Jacket Potatoes

  1. Preheat your oven to a hot 220°C (430°F).
  2. Thoroughly scrub your potatoes clean under cold running water, removing any dirt from the skins. Pat them completely dry.
  3. Using a fork, pierce the outside of each potato roughly 6-8 times. This allows steam to escape during baking, preventing the potatoes from exploding and contributing to a fluffy interior.
  4. Generously rub about ½ tablespoon of olive oil onto the skin of each potato, ensuring full coverage. Then, sprinkle a liberal amount of flakey sea salt over the skin, rubbing it in. This combination of oil and salt is vital for achieving that coveted crispy, savory skin. Place the prepared potatoes directly onto a baking tray. Bake for 65-70 minutes, or until the outside is deeply crispy and golden brown, and you can easily pierce the potato with a skewer or knife with minimal resistance.
  5. Once baked, remove the potatoes from the oven and reduce the oven temperature to 200°C (400°F). Allow the potatoes to cool slightly so they are comfortable enough to handle.
  6. With a sharp knife, carefully slice the top lengthwise off each potato. Using a spoon, gently scoop out the fluffy flesh from both the top and bottom halves, being sure to leave a thick layer of potato flesh along the bottom skin to maintain its structural integrity. You can either discard the potato skin from the top part or finely slice it and add it to your potato mixture for extra texture.
  7. In a large mixing bowl, combine the scooped potato flesh, the softened Westgold Butter, the sweet garlic confit cloves, and the heavy cream. Using a potato masher, mash the ingredients until they are well combined. The mixture should have a beautifully lumpy texture; if you prefer a smoother consistency, you can melt the butter and cream together before stirring them through the potato flesh. Stir in almost all of the grated mozzarella cheese. Season generously with flakey sea salt and freshly ground black pepper to taste.
  8. Carefully spoon the rich filling back into the hollowed-out potato skins, stuffing them generously. Return the filled potatoes to the baking tray. Sprinkle the remaining mozzarella cheese and the grated parmesan over the top of each potato. Bake for an additional 25 minutes, or until the cheese on top is beautifully golden and bubbling, and the filling is heated through.
  9. Serve your garlic butter jacket potatoes immediately. Garnish generously with finely sliced chives and a big, dollop of cool sour cream for the ultimate indulgent finish. Enjoy every comforting bite!
