Single Skillet Creamy Chicken Alfredo

Welcome to an extraordinary rendition of a beloved classic: Chicken Alfredo. While my previous recipe for a meat-free alfredo adhered to the classic Italian methodology, this new version elevates the experience with the sumptuous addition of rich cream and perfectly cooked chicken. This is more than just a meal; it’s a culinary journey designed to deliver unparalleled flavor and comfort with remarkable ease, destined to become a cherished recipe in your home.

The true magic behind an intensely creamy, exquisitely rich, and utterly delicious Chicken Alfredo lies in the quality of its foundational ingredients. For this particular recipe, one ingredient stands out as absolutely essential: premium butter. I simply cannot envision crafting this dish without the luxurious touch of Westgold Butter. Its superior fat content, golden hue, and distinct flavor profile are not merely an optional addition; they are an integral component that ensures the luscious, silken sauce adheres perfectly to every piece of tender chicken and every strand of pasta, transforming a simple weeknight dinner into a gourmet delight. This commitment to quality ingredients makes all the difference, creating a depth of flavor that is truly unforgettable.

Delicious One-Pot Creamy Chicken Alfredo with Penne Pasta

Why This One-Pot Chicken Alfredo Will Become Your New Favorite

This Chicken Alfredo isn’t just another pasta dish; it’s a culinary revelation that simplifies your cooking without compromising an ounce of flavor. I believe a few distinctive elements truly elevate this recipe, making it an absolute game-changer in your kitchen:

  1. The Revolutionary One-Pot Approach: Imagine preparing a gourmet meal with minimal cleanup. That’s the promise of this one-pot wonder! The entire cooking process – from searing the seasoned chicken to simmering the rich, creamy sauce and finally cooking the pasta to al dente perfection – all takes place in a single pan. This ingenious method isn’t just about reducing your post-dinner chores; it’s a strategic way to build layers of flavor. As the chicken cooks, its savory juices release into the pan, forming a flavorful base that then gets incorporated into the sauce and absorbed by the pasta. The result is a deeply cohesive dish where every component is infused with a harmonious blend of tastes.
  2. The Art of Deglazing with Premium Butter: The secret to an exceptionally flavorful sauce often lies in what happens after the protein is cooked. In this recipe, we employ the crucial technique of deglazing the pan with a generous amount of Westgold Butter. After searing the chicken to a golden crisp, the pan is left with a treasure trove of browned, caramelized bits – known as ‘fond.’ These bits are concentrated pockets of umami and savory goodness. By melting butter into the hot pan and using a wooden spoon to vigorously scrape up all that delicious fond, you infuse your entire sauce with an incredible depth, richness, and a nuanced texture that simply cannot be replicated by adding ingredients to a clean pan. This step is a non-negotiable for unlocking the full flavor potential of your Alfredo.
  3. The Unmissable Fresh Herb Factor: I cannot emphasize enough the transformative power of fresh herbs in almost any dish, and especially in a rich, comforting pasta like Chicken Alfredo. All too often, home cooks overlook or skip this simple step, and I always wonder, “WHY?!” Fresh herbs introduce a vibrant zest, a crucial brightness, and an aromatic lift that elegantly cuts through the richness and creaminess of the sauce, balancing the flavors beautifully. For this particular rendition, I’ve chosen fresh parsley for its clean, slightly peppery notes, which provide a wonderful contrast. However, don’t hesitate to experiment with other fresh herbs that tickle your fancy – dill offers a delicate, citrusy hint; tarragon brings a sophisticated, subtle licorice-like essence; or even fresh chives or basil could be delightful additions. These aren’t just garnishes; they are essential flavor enhancers that add a dimension you simply can’t achieve with dried alternatives, brightening the entire dish and making it sing.

Mastering the Creamy Alfredo Sauce: Patience and Precision

At the heart of any truly exceptional Alfredo lies its sauce, and this recipe is no exception. I want to offer a significant piece of advice: crafting a magnificently creamy sauce like this is indeed a labor of love, demanding a good measure of patience and, most importantly, unwavering trust in the process. When you initially combine the liquids, the sauce might appear quite thin and watery, prompting you to question if it will ever achieve that coveted silky-smooth consistency you crave. Rest assured, with a little time and heat, it absolutely will!

The magic of this one-pot method truly shines as the pasta cooks directly in the sauce. As the pasta absorbs the simmering liquid, it simultaneously releases its starches. These starches act as natural thickeners, gently transforming the watery base into a lush, creamy concoction. This continuous process, coupled with the gradual reduction of the liquids over consistent heat, allows the sauce to slowly build body and richness. The final, critical step involves stirring in freshly grated Parmesan cheese. Parmesan doesn’t just contribute a salty, umami depth; its natural emulsifying properties help to bind all the elements, creating a beautifully homogenous, glossy, and impossibly smooth sauce that clings perfectly to every single piece of chicken and pasta.

Consider the journey much like preparing a classic béchamel sauce for a perfect lasagna. There’s often that moment where you doubt if it will truly come together and achieve the desired thickness. But then, with a little more gentle heat and consistent stirring, suddenly, voilà! The sauce thickens beautifully, evolving into a perfect consistency – smooth, glossy, and silken – ready to generously coat all the noodles and ensure that every bite of your Chicken Alfredo is bursting with exquisite flavor. Don’t rush this transformation; allow the ingredients to work their wonders, and you’ll be rewarded with a sauce that’s truly restaurant-quality.

Pasta Perfection: Tailoring Your Dish to Your Taste

If there’s one profound truth I’ve learned about pasta, it’s that the choice of shape is an incredibly personal decision. Whether you gravitate towards short, long, tubular, or flat noodles, the best pasta for any dish is ultimately the one you enjoy most. While many readily associate Alfredo with classic fettuccine, this particular recipe offers wonderful flexibility, allowing you to match your individual taste preferences and even conveniently use what you might already have tucked away in your pantry.

For this rendition of Chicken Alfredo, I’ve opted for penne. Its distinctive tubular shape and ridged exterior are absolutely fantastic for capturing and holding onto the rich, creamy sauce, ensuring that every single mouthful is a delightful explosion of flavor and texture. Short noodles like penne also pair exceptionally well with the bite-sized pieces of chicken, making it effortless to get a harmonious combination of both protein and pasta in a single, satisfying forkful. However, remember, your kitchen, your rules! Feel free to explore other short shapes such as rigatoni, fusilli, or even farfalle (bow-tie pasta), all of which have nooks and crannies perfect for clinging to thick sauces. If your preference leans towards long pasta, a thicker cut like bucatini, with its hollow center, or even a classic spaghetti would also work beautifully, provided you ensure the sauce is generously ample enough to coat each strand fully.

Beyond personal preference, I am a fervent advocate for conscious cooking and minimizing food waste. Therefore, before you make a special trip to the grocery store for a specific pasta shape, I encourage you to first take a quick inventory of your cupboard. Utilize what you already have on hand! This approach not only helps you save money but also fosters creativity and resourcefulness in the kitchen, pushing you to discover new flavor combinations and textures. No matter the shape you choose, the robust and delicious flavor of this Chicken Alfredo will undoubtedly shine through, making for a truly satisfying meal.

Essential Tips for a Flawless Chicken Alfredo Every Time

To ensure your homemade One-Pot Chicken Alfredo turns out perfectly, delivering a restaurant-quality experience in your own kitchen, keep these crucial tips in mind:

  • Generously Use Quality Butter: High-quality butter is the cornerstone of a truly rich, creamy, and undeniably delicious Alfredo. Do not skimp on this ingredient. It’s imperative for building the luxurious texture and profound depth of flavor that defines a perfect Alfredo sauce. For best results, use a premium, full-fat butter like Westgold.
  • Embrace Patience with the Sauce: When you first combine the liquids, the sauce will appear quite thin. This is completely normal! Patience is your most valuable ally here. Allow it the necessary time to gradually thicken as the pasta slowly cooks and releases its starches, and as the Parmesan cheese melts in and emulsifies. Trust the process, and you will be rewarded with that coveted smooth, glossy, and silky consistency.
  • Season Your Chicken Boldly and Thoroughly: Bland chicken will result in a bland dish. Don’t be afraid to season your chicken generously with the suggested spices. A well-seasoned chicken breast contributes immensely to the overall flavor profile of the entire dish, creating a delicious, flavorful crust and infusing the meat with savory notes that carry beautifully into the sauce.
  • Never Clean the Pan After Searing Chicken: This is arguably one of the most critical steps for maximizing flavor. After searing your chicken, resist the urge to wash or clean the pan. Those browned bits and caramelized drippings stuck to the bottom, known as ‘fond,’ are a concentrated source of incredible savory flavor. You absolutely must deglaze the pan with butter and onions to scrape up all that goodness, incorporating it directly into your sauce. This single step will elevate your Alfredo to an unparalleled depth of taste.

Chicken Alfredo

By Daen Lia
This One-Pot Chicken Alfredo combines classic flavors with modern convenience, featuring tender, seasoned chicken, a rich, incredibly creamy sauce, and your favorite pasta. It’s an easy yet impressive dish perfect for any weeknight meal or special occasion.
Prep Time: 10 minutes
Cook Time: 1 hour 20 minutes
Servings: 4

Ingredients

  • 1 garlic bulb
  • 3 tbsp olive oil
  • 400 g chicken breast, 14oz
  • 1 tbsp sweet paprika
  • 1 tbsp dried oregano
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 50 g Westgold salted butter, 1.7oz
  • 1 onion, finely diced
  • 2 cups full cream milk, 500mL/16oz
  • 1 cup heavy cream, 250mL/8oz
  • 1 cup chicken stock, 250mL/8oz
  • 250 g penne pasta, 8oz
  • 50 g parmesan, 1.7oz grated
  • fresh parsley, finely chopped
  • salt + pepper

Instructions

  1. Preheat your oven to 200 C / 390 F.
  2. To prepare the roasted garlic, carefully cut off approximately 2cm (about ¾ inch) from the top of the garlic bulb, ensuring that the individual cloves are exposed. This allows the heat to penetrate and caramelize them beautifully. If you prefer, you can substitute the roasted garlic with 4 cloves of finely diced fresh garlic.
  3. Place the prepared garlic bulb into the center of a small oven-proof dish or wrap it snugly in a piece of aluminum foil to create a packet. Drizzle the exposed cloves with ½ tablespoon of olive oil and season generously with salt and pepper. Cover the dish with a lid or foil (or fully seal the foil packet) and bake in the preheated oven for 1 hour. The garlic should be incredibly tender and fragrant. Once roasted, allow the garlic to cool slightly until it’s comfortable enough to handle. Using your fingers, gently squeeze the soft, caramelized cloves out of their skins. Set the roasted garlic aside.
  4. Using a very sharp knife, carefully slice each chicken breast horizontally through the middle. This action halves their thickness, effectively creating two thinner cutlets from each breast. Allow the knife to glide through the meat, applying minimal pressure while stabilizing the chicken breast with your free hand placed firmly on top. Don’t worry if the cuts aren’t perfectly uniform; slight variations will not impact the final dish significantly. Repeat this slicing step for all the chicken breasts.
  5. For an exceptionally tender and evenly cooked result, place each chicken cutlet individually between two pieces of plastic wrap. Using the smooth side of a meat mallet (or a heavy rolling pin), gently pound the chicken from the center outwards until each breast is approximately 2cm (about ¾ inch) thick and has a consistent thickness throughout. While this step is optional, it greatly assists in ensuring the chicken cooks uniformly and retains its juiciness, preventing thinner parts from drying out.
  6. Transfer the flattened chicken cutlets into a large bowl. Sprinkle generously over them the sweet paprika, dried oregano, garlic powder, onion powder, and a liberal amount of salt and freshly ground black pepper. Drizzle with the remaining ½ tablespoon of olive oil. Using your hands, thoroughly massage the spices into the chicken, ensuring each piece is well coated from all angles for maximum flavor absorption and a delicious crust.
  7. Heat a large skillet pan over medium-high heat. Once the pan is hot, carefully place the seasoned chicken breasts into it. Cook for 2 – 3 minutes on each side, allowing them to develop a beautiful golden-brown sear and cook through. Depending on the size of your skillet, you may need to cook the chicken in batches to avoid overcrowding the pan, which can lower the temperature and lead to steamed rather than properly seared chicken. Remove the cooked chicken from the pan, place it on a cutting board, and let it rest for 5 minutes (this is crucial for retaining juices) before slicing it into bite-sized pieces or strips. Set the sliced chicken aside.
  8. Return the same skillet (do not clean it!) to medium heat. Add the Westgold butter and cook until it’s sizzling and bubbling. As the butter melts, immediately use a wooden spoon to vigorously scrape all the flavorful, browned chicken bits – the ‘fond’ – off the bottom of the pan. These caramelized fragments are where the rich, concentrated flavor resides, and they are absolutely essential for building the foundational depth of your Alfredo sauce.
  9. Add the finely diced onion and the squeezed roasted garlic cloves to the pan with the bubbling butter. Sauté for approximately 2 minutes, stirring occasionally, until the onion becomes fragrant, soft, and translucent, absorbing all the wonderful flavors from the pan.
  10. Pour in the full cream milk, heavy cream, and chicken stock into the pan with the sautéed aromatics. Bring the mixture to a gentle boil, stirring occasionally to combine. Once boiling, reduce the heat to medium and add the penne pasta directly into the pan. Stir well to ensure the pasta is fully submerged in the liquid. Continue to cook for approximately 10 minutes, or until the pasta is cooked al dente (tender yet firm to the bite) and has absorbed about 75% of the liquid, leaving you with a creamy, slightly loose sauce.
  11. Turn the heat down to low. Add the freshly grated Parmesan cheese and stir continuously until it is completely melted and smoothly incorporated into the sauce. At this point, you will visibly notice the sauce beginning to thicken and achieve that desired glossy, luxurious consistency.
  12. To finish, stir in a generous handful of freshly chopped parsley, which will add a burst of vibrant freshness and beautiful color to the dish. Arrange the previously sliced chicken breast pieces on top of the pasta, or gently fold them in. For an extra touch of indulgence and visual appeal, garnish with an additional sprinkling of Parmesan cheese. Serve your luxurious One-Pot Chicken Alfredo immediately and savor every creamy, flavorful bite!
