Key Ingredients for Your Broccoli Pasta
One of the best aspects of this broccoli pasta is that it relies on staple ingredients, ensuring you can often make it on a whim. Here’s a closer look at what makes this dish shine:
Broccoli – The Verdant Star
Broccoli isn’t just a side dish; it’s the heart and soul of this recipe. This cruciferous vegetable is incredibly nutrient-dense, boasting high levels of Vitamin C, Vitamin K, and dietary fiber. Its slightly bitter, earthy flavor transforms beautifully when cooked down into a creamy sauce. For this recipe, we embrace all parts of the broccoli – yes, even the stem! Many people discard the stem, but it’s incredibly flavorful, crisp, and juicy when properly prepared. Don’t be shy; peel the outer layer of the stem and chop it into small pieces along with the florets. It adds fantastic texture and ensures nothing goes to waste.
Pasta – The Perfect Canvas
While traditional Italian broccoli pasta recipes often feature orecchiette (meaning “little ears”) because its concave shape perfectly cups the sauce, this recipe is incredibly versatile. I frequently use San Remo Penne Pasta, an accessible and widely available shape. Penne, with its ridges and tube-like form, does an excellent job of catching and holding onto that luscious cheesy broccoli sauce, ensuring every bite is bursting with flavor. Feel free to experiment with other short pasta shapes like rotini, fusilli, or even farfalle (bow-tie pasta). The key is to choose a shape that can effectively cradle the rich sauce.
Garlic & Olive Oil – The Aromatic Foundation
No savory dish from Daen’s Kitchen would be complete without the dynamic duo of garlic and olive oil. These two ingredients lay down the foundational aromatics for our pasta sauce. Always opt for fresh garlic cloves, finely sliced or minced, rather than pre-packaged garlic. The difference in flavor is remarkable. When it comes to olive oil, using a high-quality extra virgin olive oil not only enhances the flavor of the dish but also contributes healthy fats. Gently sautéing the garlic in olive oil until fragrant and translucent releases its sweet, pungent notes without overpowering the delicate broccoli.

Cheese – The Creamy Indulgence
This is called Cheesy Broccoli Pasta for a reason – and we’re not holding back! While I typically favor the sharp, salty notes of Pecorino Romano, known for its incredible melting qualities and robust flavor, the beauty of this recipe lies in its flexibility. Feel free to mix things up! A blend of Pecorino Romano with grated Parmesan, sharp cheddar, or even a nutty Gruyère can add layers of complexity and depth. You could even use a combination of several cheeses for a truly indulgent experience. The cheese melts into the sauce, creating an irresistible, velvety texture that coats every strand of pasta.
Pasta Water – Liquid Gold
Never, ever discard your pasta water completely! This starchy, cloudy liquid is what I affectionately call “liquid gold” and it is absolutely essential for bringing this entire dish together. As pasta cooks, it releases starch into the boiling water. This starchy water, when added to your sauce, acts as an emulsifier, helping the cheese and olive oil to combine into a smooth, glossy, and incredibly silky sauce. It also helps the sauce to adhere better to the pasta. Without it, your sauce might be too thick or separate. It’s the secret ingredient that transforms a good pasta dish into a great one.
Chilli Flakes – The Optional Kick
For those who appreciate a touch of warmth and subtle heat, chilli flakes are a fantastic addition. They elevate the flavor profile of the pasta from merely delicious to truly amazing, providing a gentle counterpoint to the richness of the cheese. I often omit them when making this for my daughter, who still adores the dish, proving that they are indeed optional but highly recommended for an adult palate. Adjust the quantity to your preferred spice level.
Lemon – The Bright Finish
A final squeeze of fresh lemon juice right at the end is a game-changer. The acidity of the lemon cuts through the richness of the cheese and olive oil, adding a bright, zesty finish that lightens the entire dish. It provides a burst of freshness that awakens the palate and balances all the flavors beautifully. Don’t skip this step; it truly makes a difference!

Cheesy Broccoli Pasta
Daen Lia
5 mins
20 mins
2
Ingredients
- 2 cups San Remo Penne pasta
- 1 head broccoli
- 3 tbsp olive oil
- 3 garlic cloves, finely sliced
- 1 tsp white pepper
- 1/2 tsp flakey sea salt
- 1/2 cup pecorino romano, grated
- 1/2 lemon
- 1 cup pasta water
Instructions
-
Bring a large pot of heavily salted water to a rolling boil. Carefully cut the entire head of broccoli into small, bite-sized pieces, ensuring you utilize both the florets and the peeled stem. Add the chopped broccoli to the boiling water and cook for approximately 5 minutes, until it’s tender-crisp and bright green.
-
While the broccoli is cooking, heat the olive oil in a large, deep fry pan over low heat. Add the finely sliced garlic to the pan and gently cook for about 3 minutes, or until it becomes fragrant and translucent. Be careful not to let the garlic brown or burn. Using a slotted spoon, transfer the cooked broccoli directly into the pan with the garlic. Add 1 cup of the reserved broccoli water to the pan. Increase the heat to low-medium and simmer for 10 minutes, allowing the broccoli to soften further and absorb the garlic-infused oil. Keep the remaining broccoli water in the pot as you will use it for the pasta.
-
As the broccoli continues to simmer, it’s time to cook your pasta. Add your San Remo Penne pasta to the same pot of broccoli water that you reserved. Cook the pasta according to package directions, but drain it about 2 minutes before the suggested cooking time (typically around 10 minutes total). This “al dente” stage is crucial because the pasta will continue to cook and absorb flavor when stirred into the sauce. Remember to reserve 1/2 to 1 cup of this starchy pasta water before draining the rest.
-
Once the broccoli is very soft, use a potato masher to mash it directly in the pan to your desired consistency. You can leave it slightly chunky for texture or mash it until it’s almost smooth for a creamy sauce. Add the drained, slightly undercooked pasta, grated Pecorino Romano cheese, salt, and white pepper to the pan with the mashed broccoli. Slowly incorporate the reserved pasta water, stirring continuously on low heat until the sauce comes together, becoming beautifully smooth and silky. Remove the pan from the heat. Finish the dish with a generous squeeze of fresh lemon juice and a sprinkling of chilli flakes, if using. Toss everything together and serve immediately.

Tips for the Perfect Cheesy Broccoli Pasta
- Don’t Overcook the Broccoli: For the initial boil, ensure the broccoli is tender but still vibrant. It will continue to cook in the pan.
- Salt Your Pasta Water Generously: This is your only chance to season the pasta itself, adding flavor from the inside out. It should taste like the sea.
- Reserve Enough Pasta Water: It’s always better to have too much than too little. You can always add less, but you can’t magically create more once it’s drained.
- Taste and Adjust: Before serving, always taste your pasta sauce. You might need a little more salt, pepper, or another squeeze of lemon.
- Serve Immediately: Pasta is best enjoyed fresh off the stove when the sauce is at its creamiest.
Variations and Additions to Your Broccoli Pasta
This Cheesy Broccoli Pasta recipe is wonderfully versatile, allowing for easy customization to suit your palate or utilize ingredients you have on hand:
- Add Protein: For a more substantial meal, consider adding grilled chicken, pan-seared shrimp, or crispy crumbled bacon. For a vegetarian protein boost, stir in some cooked chickpeas or white beans.
- Spice It Up: If you love heat, a pinch more red pepper flakes or even a dash of hot sauce can take this dish to the next level.
- Extra Veggies: Feel free to toss in other quick-cooking vegetables like spinach, peas, or thinly sliced bell peppers during the last few minutes of cooking the broccoli.
- Nutty Crunch: Toasted pine nuts or walnuts added at the end provide a lovely textural contrast and nutty flavor.
- Herbaceous Freshness: While the recipe keeps it simple, fresh basil or parsley can be chopped and stirred in right before serving for an extra layer of aroma.
Storage and Reheating Your Broccoli Pasta
Leftovers of this Cheesy Broccoli Pasta are just as delicious, though the sauce might thicken slightly. Store any remaining pasta in an airtight container in the refrigerator for up to 3-4 days. To reheat, gently warm in a saucepan over low heat, adding a splash of water, vegetable broth, or milk to loosen the sauce and restore its creamy texture. You can also microwave it, stirring halfway through.
This Cheesy Broccoli Pasta is more than just a meal; it’s a celebration of simple, wholesome ingredients transformed into something truly comforting and satisfying. It’s perfect for busy weeknights, special enough for a casual gathering, and always a delightful way to get more greens into your diet. Enjoy!
