Essential Ingredients for Your Perfect Focaccia
Creating this cheesy sesame seed focaccia masterpiece relies on a select group of simple yet powerful ingredients. Each component plays a vital role in building the unique flavors and textures that make this bread so remarkable.

Key Focaccia Dough Ingredients:
- Bread Flour: The foundation of our focaccia. Bread flour has a higher protein content than all-purpose flour, which is crucial for developing strong gluten networks. This strength allows the dough to capture more air during fermentation and baking, resulting in that signature chewy, open crumb texture that is characteristic of authentic focaccia.
- Lukewarm Water: The medium for activating the yeast. Water temperature is critical – too hot and it can kill the yeast, too cold and the yeast won’t activate. Around 100°F (34°C) is ideal for gently waking up the yeast and encouraging activity.
- Dry Yeast: The magic behind the rise. Yeast consumes sugars and produces carbon dioxide, creating the airy pockets and fluffy texture within the focaccia. Using active dry yeast requires a short proofing period in water to ensure it’s alive and ready to work its wonders.
- Fine Sea Salt: Essential for flavor and structure. Salt doesn’t just add taste; it also helps to control yeast activity and strengthens the gluten structure, contributing to a better crumb and crust. Always use fine sea salt for even distribution.
- Honey: A touch of sweetness and yeast food. Honey provides a natural sugar source for the yeast, helping to kickstart its activity and contributing a subtle sweetness and a beautiful golden hue to the crust.
- Extra Virgin Olive Oil: The heart of Mediterranean flavor. Used generously in the dough and for coating, olive oil imparts a rich, fruity flavor, contributes to a tender crumb, and ensures a wonderfully crisp, golden bottom crust.
Star Topping Ingredients:
- Baby Bocconcini: These small, fresh mozzarella balls are the secret to the focaccia’s incredible gooey texture. As they bake, they melt beautifully into the dough, creating luscious, cheesy pockets throughout the bread. For alternatives, you could use regular bocconcini (drained and torn) or any other good-quality, melty mozzarella. The key is a cheese that becomes wonderfully soft and yielding when heated.
- Parmesan Cheese: Adds a sophisticated layer of sharp, salty, and umami flavor that perfectly balances the creamy richness of the bocconcini. Grated parmesan crisps slightly in the oven, adding another textural dimension. If you prefer a slightly milder, nuttier profile, Pecorino Romano makes an excellent substitute.
- Sesame Seeds: These tiny powerhouses bring an incredible toasty crunch and a distinctive nutty aroma to every slice. We recommend a mix of both white and black sesame seeds not only for their flavor contribution but also for their striking aesthetic appeal, creating a visually stunning topping.

Crafting Your Cheesy Sesame Seed Focaccia: A Step-by-Step Guide
Transforming our simple no-knead focaccia dough into this cheesy, sesame-topped masterpiece is a rewarding process. Follow these detailed steps to achieve perfectly airy, cheesy, and flavorful focaccia every time.

- Step 1: Activate the Yeast. In a medium-sized bowl, gently combine the lukewarm water, active dry yeast, and a spoonful of honey using a whisk. It’s crucial that the water is lukewarm (around 100°F / 34°C) to awaken the yeast without killing it. Allow this mixture to rest undisturbed for approximately 5-10 minutes. You’ll know your yeast is alive and ready when a frothy, foamy layer appears on the surface, indicating active fermentation (image 1).
- Step 2: Combine Wet and Dry Ingredients. In a separate, larger mixing bowl, whisk together the bread flour and fine sea salt until well combined. This ensures even distribution of the salt. Next, pour the activated yeast mixture directly into the flour mixture (image 2).
- Step 3: Form the Dough. Using a sturdy spoon or, ideally, your hands, begin to mix the wet and dry ingredients together. Continue mixing until all the flour is hydrated and you achieve a wet, shaggy, and sticky dough. It’s important to ensure there are no dry spots of flour remaining. Once mixed, cover the bowl tightly with plastic wrap or a damp kitchen towel and let the dough rest for a crucial 10 minutes. This initial rest period, known as autolyse, is vital for this high-hydration dough, allowing the flour to fully absorb the water and start developing gluten naturally before the first stretch and fold (image 3 & 4).

- Step 4: Perform the First Stretch and Fold. After the 10-minute rest, lightly dampen your hands with water. Reach into the bowl, grab a section of the dough, gently stretch it upwards, and then fold it back over itself towards the center of the bowl. Rotate the bowl a quarter turn and repeat this stretching and folding action three more times. This process helps to build strength and elasticity in the dough without kneading. After completing four stretches and folds, cover the dough again and let it rest for another 10 minutes (image 5). Repeat this entire stretch and fold process (4 folds, 10 min rest) a total of 3-4 times, or until the dough starts to feel more cohesive, elastic, and forms a rough ball (image 6).
- Step 5: First Proof (Cold Fermentation). Lightly coat a clean, large bowl with about 20g of extra virgin olive oil, ensuring the sides are well-greased. Carefully transfer the strengthened dough into this oiled bowl (image 7 & 8). Cover the bowl tightly with plastic wrap, ensuring an airtight seal. Place the dough in the refrigerator for its first proof, also known as cold fermentation. This slow, cool rise is essential for developing the complex, nuanced flavors of the focaccia and improving its texture. Allow it to proof for a minimum of 12 hours and up to a maximum of 72 hours. The longer the cold proof, the more flavorful and airy your focaccia will be.
- Step 6: Divide and Prepare for Second Proof. After the first proof, remove the dough from the refrigerator. At this stage, you will only need half of the dough for this specific Cheesy Sesame Seed Focaccia recipe. Carefully divide the dough in half using a sharp, oiled knife or a dough scraper. You can save the other half for a different focaccia creation or another recipe, wrapped tightly and stored in the fridge for a few more days, or frozen.

- Step 7: Second Proof (Room Temperature Rise). Generously oil your chosen baking tin (approximately 9×13 inches or a similar size) with another 20g of extra virgin olive oil, ensuring the entire bottom and sides are coated. Carefully transfer one half of the dough into the prepared tin (image 9). Gently begin to stretch the dough with your fingertips to form a rough rectangle, but do not force it to reach the edges of the tin just yet. The dough will naturally relax and spread as it rises. Cover the tin loosely with a damp kitchen towel or plastic wrap and place it in a warm spot in your kitchen. Allow the dough to rise for approximately 2 hours, or until it has visibly doubled in size and appears light and airy (image 10).
- Step 8: Prepare for Baking. Preheat your oven to 400°F (200°C) during the last 30 minutes of the second proof. Once the dough has completed its final rise, gently dimple the surface with your fingertips, creating characteristic indentations. These dimples will hold the olive oil and cheese, preventing large air pockets from forming.
- Step 9: Add Toppings and Bake. Evenly scatter the baby bocconcini pieces and grated parmesan cheese across the dimpled dough. Follow with a generous sprinkle of both white and black sesame seeds and a pinch of flakey sea salt. Finish with a final drizzle of extra virgin olive oil over the entire surface. Transfer the focaccia to your preheated oven and bake for 30 minutes, or until the crust is beautifully golden brown, crispy, and the cheese is gloriously melted and bubbly.
- Step 10: Cool and Serve. Once baked, remove the focaccia from the oven. Allow it to cool slightly in the tin for 5-10 minutes before carefully transferring it to a wire rack to cool for an additional 15 minutes. This cooling period allows the internal structure to set. Slice into generous portions and serve immediately while it’s still warm and the cheese is at its peak gooey perfection. Enjoy!
Frequently Asked Questions About Cheesy Sesame Seed Focaccia
Absolutely! In fact, the flavor and texture of the focaccia dough actually improve significantly with an extended cold fermentation. After the initial stretch and folds, you can let the dough rise slowly in the refrigerator for up to 48 hours (and even up to 72 hours for maximum flavor development). This long, slow proof contributes to a much lighter, airier crumb and a more complex, nuanced flavor profile, making it perfect for meal prepping or entertaining.
This recipe masterfully combines baby bocconcini for its creamy, melty pockets and parmesan for its sharp, salty kick, creating a perfectly balanced flavor profile. However, feel free to experiment with other cheeses! Excellent alternatives include shredded mozzarella (which offers a classic stretch and mild flavor), provolone (for a slightly sharper, more robust taste), or even a blend of Italian cheeses. If you want to replicate the parmesan, grated Pecorino Romano provides a similar sharp, salty profile with a distinct sheep’s milk tang.
The key to preventing sticking and achieving that coveted crispy bottom crust is a generous amount of olive oil. Before transferring your dough, make sure to thoroughly coat your baking pan with a good layer of extra virgin olive oil—don’t be shy! The oil acts as a non-stick barrier and also fries the bottom of the focaccia as it bakes, creating a beautifully golden and crunchy base.
Yes, focaccia freezes exceptionally well! To store, first allow the focaccia to cool completely. Then, slice it into individual portions or preferred sizes. Wrap each slice or section tightly in plastic wrap, followed by a layer of aluminum foil, or place them in an airtight freezer-safe bag. It can be frozen for up to 2 months. To reheat, simply place the frozen slices directly into a preheated oven at 350°F (175°C) for 10-15 minutes, or until warmed through and the crust is crisp again.
Absolutely! While this recipe specifies active dry yeast which requires activation, you can easily substitute instant yeast. The main difference is that instant yeast does not need to be proofed in water first. Simply add the instant yeast directly to your dry ingredients (flour and salt) and then proceed with adding the lukewarm water and honey. The dough will still rise beautifully.

Storing and Reheating Your Focaccia for Lasting Freshness
To ensure your delicious focaccia remains fresh and flavorful, proper storage is key. Here are the best methods to keep your bread at its prime:
- Room Temperature Storage: Once the focaccia has completely cooled, wrap it tightly in aluminum foil or place it in an airtight container. Stored this way, it will maintain its quality at room temperature for up to 2 days, remaining soft and enjoyable.
- Refrigerated Storage: For longer storage, transfer the tightly wrapped focaccia to the refrigerator. It will keep well for up to 5 days, though the texture might become slightly firmer.
- Reheating in an Air Fryer: For a quick and easy reheat that restores crispiness, place slices of focaccia in an air fryer set to 160°C (325°F) for approximately 3-5 minutes, or until warmed through and the crust is delightfully crisp again.
- Reheating in the Oven: To reheat in a conventional oven, place the focaccia on a baking tray and warm it at 180°C (350°F) for 8-10 minutes. This method ensures even heating and helps to revive that lovely crunch.
- Toaster Method (for Slices): For individual slices, you can even use a toaster. However, exercise caution: ensure the cheese topping is well set and won’t melt into the toaster slots, potentially causing a mess or fire hazard. This method is best for slices without excessive molten cheese.

1 day 30 mins
30 mins
Ingredients
Focaccia Dough
- 700 g bread flour
- 680 g lukewarm water, (100°F / 34°C) – 95% hydration
- 7 g dry yeast
- 12 g fine sea salt
- 1 tsp honey
- 60 g olive oil, extra virgin
Topping
- 4 oz baby bocconcini
- 1/2 cup parmesan cheese, grated
- 1 tbsp white sesame seeds
- 1 tbsp olive oil, extra virgin
- 1 tbsp black sesame seeds
- 1/2 tsp flakey sea salt
Instructions
Focaccia Dough Preparation
-
Activate yeast: Stir water, yeast, and honey in a medium bowl with a whisk. Wait for about 5 minutes until the mixture becomes frothy, signalling that the yeast is ready.
-
Dry ingredients: In a different large bowl, whisk flour and salt. Then, pour in the yeast mixture, stirring with a spoon or your hands to form a wet, sticky dough without dry spots. Cover the bowl with plastic or a damp cloth for 10 minutes.
-
Stretch and fold: Afterward, with damp hands, stretch a piece of the dough and fold it across itself. Turn the bowl and repeat this action three more times, covering the dough again for another 10 minutes. This is the stretch and fold method and it will strengthen your dough. On the final stretch and fold, continue until the dough shapes into a ball.
-
1st proof: Coat a new bowl with 20g of olive oil, place the dough inside, and cover it tightly with plastic. Let it rest in the fridge between 12 to 72 hours; this is the first proof. We only need half of the dough for this recipe so slice the dough in half and use the second half for a different recipe.
-
2nd proof: Oil a baking tin with another 20g of olive oil. Move the dough there, gently stretching it to a rough rectangle, but not to the tin’s edges—it will spread as it rises. Protect it with a damp cloth and let it rise for 2 hours in a warm spot.
Cheesy Sesame Seed Focaccia Assembly and Baking
-
Preheat oven: Preheat your oven to 200°C (390°F).
-
Toppings: After the rise, dimple the dough with your fingers. Scatter the baby bocconcini, parmesan, sesame seeds and salt all over. Drizzle over the olive oil.
-
Bake & rest: Bake for 30 minutes until golden on top. Allow the focaccia to cool slightly before transferring it to a wire rack to rest for 15 minutes. Slice into it and serve immediately.
Notes
- Dough: Remember, you only need half of the prepared dough for this specific recipe. Slice the dough in half after the first proof and store the remaining half for another delicious focaccia creation with different toppings!
- Yeast: While this recipe outlines activating dry yeast, you can use instant yeast if preferred. Simply add instant yeast directly to your dry ingredients (flour and salt) along with the water and honey, as it doesn’t require prior activation.
- Flour: For the best chewy texture, bread flour is recommended. However, if bread flour is unavailable, all-purpose flour can be used as a suitable substitute.
- Cheese: This recipe uses baby bocconcini for gooeyness and parmesan for sharpness. Feel free to experiment with other melty cheeses like mozzarella or provolone, or replace parmesan with pecorino romano for a different flavor profile.
