The Irresistible Charm of a Strawberry, Lemon & Port Galette
This isn’t just any fruit tart; it’s a celebration of seasonal flavors and masterful pastry. The marriage of plump, juicy strawberries with bright lemon and a subtle infusion of port creates a complex and utterly addictive filling. The port wine elevates the natural sweetness of the strawberries, adding a depth that transforms a simple berry dessert into something truly special. Encased in a homemade cream cheese puff pastry, this galette offers a melt-in-your-mouth experience with every bite. The pastry itself is a revelation: rich, buttery, and exceptionally flaky, providing the perfect counterpoint to the vibrant fruit filling.
Whether served warm with a dollop of freshly whipped cream or a scoop of vanilla bean ice cream, this galette is guaranteed to be a showstopper. It’s perfect for summer gatherings, holiday celebrations, or simply as a comforting treat on a cozy evening.

What Exactly is a Galette?
Often referred to as a “rustic pie,” a galette is essentially a free-form tart baked without a pie dish. It embraces imperfection, making it one of the most forgiving and satisfying desserts to bake. Unlike a traditional pie that requires precise crimping and often a top crust, a galette is made by simply folding the edges of the pastry over a fruit filling. The result is a beautifully exposed center and wonderfully flaky, buttery crust edges. Its charmingly “undone” appearance is part of its appeal, often looking more impressive precisely because it’s not perfectly uniform.
The beauty of a galette lies in its versatility and ease. It delivers all the delightful flavors and textures of a pie with half the effort. While it might look sophisticated, the process is surprisingly straightforward, making it an excellent choice for both novice and experienced bakers. You can fill galettes with almost any fruit imaginable – from classic apples and blueberries to peaches and cherries. They can even be savory, offering endless possibilities for culinary creativity. Mastering the Art of Cream Cheese Puff Pastry
The thought of making homemade puff pastry can be daunting, but with a few simple tricks and a bit of patience, you can achieve a truly exceptional pastry that elevates this galette to new heights. Our cream cheese puff pastry recipe simplifies the process, making those incredible flaky layers more accessible than you might imagine.
Essential Tips for Flawless Puff Pastry:
- Keep Everything Chilled: The golden rule of puff pastry is cold, cold, cold! For optimal flakiness, freeze your butter, cream cheese, mixing bowl, grater, and even your fork for at least 20 minutes before you begin. Cold ingredients prevent the butter from melting into the flour too quickly, creating distinct layers of fat and flour that expand into glorious puffs during baking.
- Grate Your Butter for Even Distribution: Here’s a brilliant hack: instead of cutting cold butter into cubes, grate it! This technique ensures the butter is evenly distributed throughout the flour mixture, making it much easier to achieve that desirable pebble-like, crumbly texture with your fingertips without overworking the dough. Evenly distributed butter pockets are key to uniform flakiness.
- The Art of Layering (Turns): Achieving those signature flaky layers requires careful layering. After combining your ingredients, roll the dough out into a rough rectangle. Fold it into thirds (like a letter) and then roll it flat again. Repeat this process at least three times. Each fold and roll creates multiple thin layers of butter between the dough, which separate and puff up in the oven. This method is called “turns” and is fundamental to puff pastry development.
- Work Quickly and Efficiently: Time is of the essence when making puff pastry. Even with pre-chilled ingredients, the butter will inevitably warm up as you work it. Minimize handling and move swiftly through the steps to maintain the coldest possible temperature. If the dough starts to feel warm or sticky, don’t hesitate to pop it back into the refrigerator for 15-20 minutes before continuing.
- Resting is Crucial: After making your pastry, it’s vital to let it rest. Wrap the dough tightly in plastic wrap and chill it for at least 1 hour, or ideally overnight. This allows the gluten to relax, making the dough easier to roll without snapping back, and gives the butter a chance to firm up, preventing it from oozing out during baking.

Ingredients
Cream Cheese Puff Pastry
- 2 cups all-purpose white flour
- 200 g unsalted butter, very cold
- 250 g cream cheese, very cold
- 1/2 cup caster sugar (superfine sugar)
- Pinch of salt
Strawberry, Lemon and Port Galette Filling
- 1 sheet cream cheese puff pastry (half of the above recipe)
- 400 g fresh strawberries, hulled and sliced
- 2 tbsp caster sugar
- 1/2 tbsp corn flour (cornstarch)
- 1 tbsp port wine (ruby or tawny)
- 1 tbsp fresh lemon juice
- Zest from 1 large lemon
- 1 egg yolk (for egg wash)
- Vanilla ice cream, for serving (optional)
Instructions
For the Cream Cheese Puff Pastry
- Begin by chilling your large mixing bowl, a cheese grater, and the butter and cream cheese in the freezer for at least 20 minutes. This step is crucial for achieving a flaky pastry.
- In the chilled bowl, combine the flour, sugar, and a pinch of salt. Mix thoroughly with a fork.
- Using the chilled grater, grate the very cold butter directly into the flour mixture. Use your fingertips to quickly break the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces. Work quickly to keep the butter as cold as possible.
- Make a well in the center of the flour mixture. Add the very cold cream cheese. Using a fork, gently combine the cream cheese with the flour until most of the flour is moistened and the mixture just starts to come together. Avoid overmixing.
- Lightly dust a clean kitchen counter or work surface with flour. Turn out the dough onto the surface and gently mold it into a rough disc shape. The dough should be firm and moist but not sticky. If it feels too dry, very slightly dampen your hands; if too sticky, lightly dust with a little more flour.
- Using a rolling pin, roll the dough into a thick rectangle. Cut the rectangle into thirds, then stack each piece on top of the other. Gently roll them together with the rolling pin to flatten. Repeat this folding and rolling step two more times (a total of 3 turns) until the dough becomes smoother and more cohesive.
- Divide the dough into two equal pieces. Wrap each piece tightly in plastic wrap. You will only need one piece for this galette recipe. Refrigerate the dough for a minimum of 1 hour, or ideally overnight, to allow the gluten to relax and the butter to firm up. The dough can be stored in the fridge for up to 2 days or frozen for up to 3 months.
For the Strawberry, Lemon and Port Galette
- Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
- In a large bowl, combine the sliced strawberries, caster sugar, corn flour, port wine, lemon juice, and lemon zest. Mix gently until all ingredients are well combined. Let the mixture sit for about 5 minutes, allowing the strawberries to release some of their juices and create a thick, jam-like consistency.
- Retrieve one disc of the prepared cream cheese puff pastry from the fridge. Lightly flour your work surface and roll the dough out into a large circle, approximately 4mm (about 1/8 inch) thick.
- Carefully transfer the rolled dough onto your prepared baking tray. Spoon the strawberry mixture into the center of the pastry, making sure to leave a 4cm (about 1.5-2 inch) border around the edge.
- Gently fold the overhanging pastry border up and over the fruit filling, pinching the dough together in places to create a rustic, free-form circular shape. Don’t worry about perfection; the charm of a galette is its rustic appearance.
- In a small bowl, whisk the egg yolk to create an egg wash. Lightly brush the folded edges of the pastry with the egg wash. This will give the crust a beautiful golden color and a lovely sheen as it bakes.
- Bake the galette in the preheated oven for 30 minutes, or until the pastry is golden brown and the fruit filling is bubbly and tender.
- Once baked, remove the galette from the oven and let it rest on the baking tray for at least 15 minutes before serving. This resting time allows the fruit juices to solidify slightly, preventing the filling from being too runny when sliced.
- Serve the Strawberry, Lemon & Port Galette warm, ideally with a scoop of creamy vanilla ice cream or a dollop of fresh whipped cream for an indulgent finish.
